This is a wonderfully simple cookie with all the goodness of oatmeal and real butter. For the best results, mix the dough and refrigerate for at least 24 hours before baking. Press the dough down before baking if you want a traditional looking cookie--these do not spread. Also, these cookies taste amazing after they have completely cooled. I notice that immediately after baking, I can taste the baking soda in these, but after several hours that's not the case. I think it is the Splenda that is used. When I took these to work I let everyone know there was no flour and no white sugar and was told they never would have known by the taste. You could also just use one or the other type of chocolate chip, but mixing the two definitely enhances the flavor.

2 1/2 cup(s) old fashioned rolled oats put through food processor (resembles cornmeal--should take about 3 1/4 to 3 3/4 rolled oats(
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2 - large eggs
3/4 cup(s) dark brown sugar
1 cup(s) splenda
1 teaspoon(s) vanilla
1 cup(s) milk chocolate chips
1 cup(s) semi-sweet chocolate chips
3/4 cup(s) unsalted butter, room temperature

Steps:

  • With mixer, cream butter, Splenda and brown sugar until smooth and creamy. Add eggs, one at a time, and mix until thoroughly blended.
  • Add baking soda, salt, vanilla and oatmeal. Blend well.
  • Finally fold in chocolate chips
  • Bake on ungreased cookie sheet in a 350 degree preheated oven for ten minutes or until edges begin to slightly brown.

3/4 cup butter
4 cups oatmeal
1 cup sugar
1 cup packed brown sugar
1 1/2 teaspoons vanilla
2 eggs, beaten
1 tablespoon cinnamon
1/2 cup dried dried craisin
1/2 cup chocolate-covered raisins (I used chocolate covered pomegranates)

Steps:

  • Place the first 7 ingredients in a mixer, mixing till blended. Stir in the remaing ingredients.
  • Spoon on to a parchment lined cookie sheet pan.
  • Bake in a preheated 350 degree oven for 15-20 minutes.
  • Remove and let set for 5 minutes.

In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

1/2 cup butter
1 cup brown sugar
3 tablespoons granulated sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups ground oatmeal (to flour consistency)
1/4 cup unbleached all-purpose flour
1 1/4 teaspoons instant coffee, finely ground
12 ounces chocolate chips

Steps:

  • Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
  • With electric mixer, blend butter with both sugars, egg and vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
  • Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).
  • Enjoy!

These no-bake cereal bars are just as indulgent as a cookie and perfect for a snack.

4 cups Chocolate Cheerios™ cereal
1 cup old-fashioned or quick-cooking oats
1/2 cup creamy cookie butter or cookie spread
1/2 cup honey
1/4 cup packed brown sugar
1/2 cup miniature semisweet chocolate chips

Steps:

  • Line bottom and sides of 8-inch square pan with foil or parchment paper. Spray foil with cooking spray. In large bowl, mix cereal and oats; set aside.
  • In large microwavable bowl, microwave cookie butter, honey and brown sugar uncovered on High 2 to 3 minutes, stirring every 30 seconds, until mixture is boiling and slightly thickened.
  • Pour over cereal mixture in bowl; stir until evenly coated. Gently stir in chocolate chips. Using buttered back of spoon, press mixture very firmly in pan. Refrigerate about 1 hour or until firm enough to cut.
  • For bars, cut into 4 rows by 4 rows. Store covered at room temperature up to 1 week.
