NO EGG EASY CHOCOLATE MUFFINS

This is easy to make with any flavor cake,you decide. My guys LOVE them!

Number Of Ingredients 6

1 package(s) cake mix, chocolate fudge
3/4 cup(s) canola oil
1 teaspoon(s) baking soda
1 cup(s) milk, 2%
1 tablespoon(s) vinegar
1/2 cup(s) chocolate chips, mini (optional)

Steps:

  • preheat oven to 350 F. Add vinegar to milk let milk stand.
  • Pour cake-mix into a large mixing bowl add baking soda, in the middle pour oil, blend mixture until it becomes crumbly flour mix.
  • Grease or add paper baking cups to cupcake pan. Add milk to flour mixture mix well, add chocolate chips or syrup.
  • Pour mixture into cups about 3/4 full. Bake @ 350 F. for 28 to 30 minutes. Remove from oven let cool & ENJOY!

All Purpose Flour / Maida - 3/4 cup / 90 grams
Sugar - 1/2 cup powdered / 100 grams
Baking Soda / Cooking Soda - 1/2 tsp
Salt - 1/4 tsp
Cocoa Powder - 3 tblspn
Ice Cold Water - 1/2 cup / 120 ml
Oil - 1/4 cup / 60 ml
Vanilla Essence - 1 tsp
Vinegar or Lemon Juice - 1 tsp

Steps:

  • Preheat oven to 190 degree C. Line a 6 cup muffin mould with cupcake cases and set aside.
  • Take sugar, water, vanilla, oil and vinegar in a bowl and mix well till sugar is melted.
  • Take flour, cocoa, baking soda, salt in a bowl and mix well.
  • Pour the wet in the dry and mix gently.
  • Now use an ice cream scoop to fill the muffin moulds.
  • Bake this in preheated oven for 20 mins.
  • Remove it and let it cool down.
  • Now remove it and serve warm

Egg Free Chocolate Muffins image

These egg free chocolate muffins are perfect for a snack at any time of year and especially to share with your Valentine!

200 g self-raising flour
70 g cocoa powder
1 tsp baking powder
50 g soft dark brown sugar
50 g caster sugar
1 tsp vanilla extract
450 ml milk (I used semi-skimmed)
30 g vegetable oil
120 g chocolate chips (I used milk chocolate)

Steps:

  • Pre-heat the oven to 150C
  • Put the flour, baking powder and cocoa powder into a bowl and then sift into a large mixing bowl. Stir in the sugar.
  • Put the milk, oil and vanilla extract into a measuring just. Whisk together then pour onto the dry ingredients. Fold together until just combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Stir in about two thirds of the chocolate chips.
  • Spoon the mixture into the muffin cases. Sprinkle the extra chocolate chips on top of the muffins.
  • Bake in the pre-heated oven for about 20 minutes. Check with a skewer or cocktail stick and if it comes out clean they are ready.
  • Let the muffins cool for a few minutes in the tin and then transfer them to a wire rack to finish cooling.

I found this recipe on vegcooking.com and modified it. They are so moist and delish! I add 1 cup of raisins, can also use nuts or chocolate chips.

Number Of Ingredients 7

1/2 cup margarine, softened
1 cup sugar
3 ripe bananas, mashed
2 cups flour (use less for whole wheat flour)
1 teaspoon baking soda
1 teaspoon salt (optional)
1 tablespoon cocoa

Steps:

  • Mix melted margarine, sugar and bananas together.
  • Sift flour, baking soda and salt (if using) together.
  • Add to banana mixture.
  • Mix until well blended.
  • Add cocoa, continue to mix.
  • If mixture seems dry (due to whole wheat flour), add some of the water.
  • Mix in additives. My favorite is raisins!
  • Bake at 350°F for 25 minutes or until toothpick comes out clean.
  • OAMC: let cool and freeze.
