A taste of the tropics in this lightly sweet, no bake delight. A delightful dessert to serve on a warm summer eve.

3/4 cup crushed corn flakes
1/4 cup macadamia nuts, finely chopped
2 tablespoons ground flax seeds
2 tablespoons sugar
1/4 cup butter, melted
1 (16 ounce) can crushed pineapple, drained, juice reserved
1/2 cup sweetened flaked coconut, lightly toasted
1 (8 ounce) package cream cheese, at room temperature
1 cup part-skim ricotta cheese
3 tablespoons powdered sugar (to taste)
1 cup rhubarb, cut into chunks
1/4 cup pineapple juice
2 cups strawberries, sliced (divided)
2 -3 tablespoons sugar (to taste)

Steps:

  • For the crust combine the cornflake crumbs, chopped nuts, ground flax seed and sugar. Place in a food processor and drizzle in butter while pulsing a couple of times until combine. Press into 8 inch square pan and bake at 375*F for 5 to 7 minutes. Remove from oven and allow to cool completely.
  • Put the pineapple in fine mesh strainer and drain, gently pressing on fruit to extract the juice. Reserve the juice and set aside.
  • Place the cream cheese and ricotta cheese in a large mixing bowl. Blend on medium low speed of mixer until combined. Gradually add in sugar until incorporated. Fold in the well drained pineapple and toasted coconut. Spoon the cheese mixture into cooled prepared crust. Chill in refrigerator until set, at least 2 hours before serving.
  • In a non-reactive saucepan, combine the rhubarb, reserved pineapple juice, sugar and about 1/2 cup of the strawberries. Cook over medium heat for 5 to 10 minutes or until the rhubarb is tender. Turn off heat and allow to cool slightly. Stir in remaining strawberries and place in refrigerator to thoroughly chill.
  • When ready to serve, cut the cheesecake into 9 squares, place each on a serving plate and spoon the chilled sauce over. Enjoy!

Cake mix creates a tender crust for creamy cheesecake topped with a lovely blend of juicy fruit.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup butter or margarine, softened
2 teaspoons grated lime peel
1/4 cup reserved cake mix
3 packages (8 oz each) cream cheese, softened
3/4 cup sugar
1/2 cup canned cream of coconut (not coconut milk)
1/2 teaspoon rum extract, if desired
3 eggs
1 large mango, seed removed, peeled and chopped (about 1 1/2 cups)
3 kiwifruit, peeled, chopped (about 1 1/2 cups)
1/4 cup shredded coconut, toasted*

Steps:

  • Heat oven to 325°F. Spray bottom and side of 9-inch springform pan with baking spray with flour. Wrap foil around outside of pan to catch drips. Reserve 1/4 cup of the cake mix. In large bowl, beat remaining cake mix, the oil, 1 egg and lime peel with electric mixer on low speed until crumbly. Press in bottom and 2 inches up side of pan.
  • In same large bowl, beat reserved 1/4 cup cake mix, the cream cheese, sugar, cream of coconut and rum extract on medium speed until smooth and creamy. Beat in eggs, one at a time, until mixed. Pour into crust.
  • Bake 1 hour to 1 hour 15 minutes or until cheesecake is set at least 2 inches from edge of pan but center of cheesecake still jiggles slightly when moved. Turn oven off; remove cheesecake from oven and run metal spatula around edge to loosen. Return cheesecake to oven; open oven door at least 4 inches. Leave cheesecake in oven 30 minutes (top may crack as it cools).
  • Remove cheesecake from oven; place on cooling rack. Without releasing side of pan, run metal spatula around edge of pan again to loosen cheesecake. Cool in pan on cooling rack 2 hours. Refrigerate 4 hours or overnight.
  • To serve, run metal spatula around edge of pan again and remove side of pan. Arrange mango and kiwifruit on top of cheesecake. Sprinkle with coconut. Store covered in refrigerator.

I read some of the main ingredients in the recipe, & since the fruits seem Tropical, that is why I chose the name. To cut down on some of the calories & sugar, I used a SUGAR FREE Strawberry Glaze, UNSWEETENED COCONUT, & NO SUGAR ADDED...

1 extra serving graham cracker crust
8 oz cream cheese, softened
1/3 c lemon juice concentrate or use fresh
1 can(s) 14 oz.sweetened condensed milk, not evaporated milk
1 c no sugar added pineapple tidbits, divided
1 c fresh strawberries, sliced as desired
1 c chopped pecans or macadamia nuts
1 1/4 c unsweetened coconut, divided
1 can(s) solo pineapple cake/pastry filling
1/2 c unsweetened strawberry glaze, or more as desired
8-10 strawberry halves for garnish
1/4 c pecan halves,(for garnish optional
8 oz cool whip, thawed as topping for each serving

Steps:

  • 1. These are some of the main ingredients for this recipe.
  • 2. Wash hull and slice strawberries as desired. Set aside till needed.
  • 3. I used NO SUGAR ADDED PINEAPPLES, DRAINED, BUT USE WHAT YOU PREFER.
  • 4. Add the softened cream cheese & condensed milk to a medium size bowl, and beat until creamy and smooth.
  • 5. Add in the lemon juice and beat again until blended together. Then remove beaters and replace with a spatula or spoon to fold in the remaining ingredients.
  • 6. Add in the 3/4 cup pineapple tidbits, chopped or sliced strawberries, unsweetened coconut, & chopped pecans or nuts of your choice. Fold into batter until blended.
  • 7. Pour mixture into Graham Cracker Crust and smooth over the top with back of spatula.
  • 8. Spread on the Solo Pineapple Fruit filling.
  • 9. Then top with strawberry & pecan halves in desired arrangement. Then add in the reserved 1/4 cup pineapple tidbits as desired. NOTE: YOU COULD CHILL AT THIS POINT, AND NOT USE THE GLAZE OR COCONUT, BUT IT SURE DOES ADD EXTRA FLAVORS.
  • 10. Now top each strawberry half with a dollop of strawberry glaze, OR EVEN MORE IF DESIRED, then lightly sprinkle with unsweetened coconut over top. Top with cool whip as desired when ready to serve. REFRIGERATE FOR AT LEAST 4 HOURS OR PREFERABLY OVER NIGHT, unless you can't resist the temptation as my husband did & cut it sooner. smile
  • 11. Once the dessert has had time to set completely, this is what it looks like when sliced.

Fresh mango, a crunchy biscuit base and smooth cream cheese filling make a light summer dessert everyone will love. Top with passion fruit, pineapple and creamy lemon curd

200g ginger biscuits
200g digestive biscuits
200g butter , melted
3 x 280g cream cheese
200g caster sugar
50g plain flour
zest 1 lemon
3 large eggs , beaten
200ml double cream
100g fresh mango , chopped into small cubes
4 passion fruits
3 tbsp lemon curd
50g mango and pineapple slices
mint leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a 20 x 30cm rectangular tin with baking parchment. Put the biscuits into a large food bag and bash with something heavy like a rolling pin, alternatively blitz in a food processor. Put the biscuit crumbs into a large bowl and pour over the melted butter, stir well to combine then tip into your prepared tin. Press the mixture down well with the back of a spoon to form a compressed layer. Bake in the preheated oven for 10 mins. Take it out of the oven to cool and turn the oven down to 120C/100C fan/gas ½.
  • In another large bowl whisk together the remaining cheesecake ingredients until smooth, you can do this with electric beaters or with a balloon whisk. Pour onto the biscuit base then scatter over the mango pieces here and there, pushing some of them into the cheesecake and letting others sit proud on the surface. Bake for 1hr then prop the oven door open and leave to cool for a further 30 mins. Once cold, chill the whole cheesecake in the fridge overnight.
  • When you're ready to serve, push the passion fruit flesh through a sieve to get rid of the seeds then mix the resulting pulp with the lemon curd. Drizzle the mixture over the cheesecake and decorate with fresh mango, pineapple and mint leaves.

This no-bake cheesecake is sure to please with its creamy center.

2 packages (20 sheets) graham crackers
11 tablespoons (1 3/8 sticks) unsalted butter, melted
2 tablespoons sugar
2 8-ounce packages cream cheese, room temperature
1 14-ounce can (1 1/4 cups) sweetened condensed milk
1/4 cup fresh lemon juice
1 teaspoon vanilla extract

Steps:

  • Put graham crackers in a large resealable plastic bag, and crush them with a rolling pin until very fine crumbs form.
  • Pour crumbs into a medium bowl; stir in sugar. Add butter, and stir until well combined.
  • Press the crumb mixture into a 9-inch springform pan, spreading it 1 1/2 to 2 inches up the side; press flat. Chill crust in freezer at least 10 minutes.
  • Meanwhile, make the filling: Using an electric mixer set at medium-high speed, beat the cream cheese in a large bowl until smooth. Beat in the condensed milk a little at a time, scraping the sides of the bowl, as necessary. Beat in the lemon juice and vanilla.
  • Pour the filling into the crust; smooth the top with a rubber spatula. Cover with plastic wrap, and refrigerate until firm, 2 1/2 to 3 hours.
  • Unclasp sides of pan, and remove cheesecake.

1/4 cup chopped almonds
2 tablespoons butter, melted
FILLING:
2 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 tablespoons cornstarch
3 large eggs
1 cup sour cream
3 tablespoons lemon juice
2 teaspoons vanilla extract
1/4 teaspoon almond extract
TOPPING:
1/3 cup apricot preserves
1/2 cup pineapple tidbits
2 to 4 kiwifruit, peeled, sliced and halved
1/4 to 3/4 cup sweetened shredded coconut, toasted

Steps:

  • In a small bowl, combine coconut and almonds; stir in butter. Press onto the bottom of a greased 9-in. springform pan. Bake at 350° for 10 minutes. Cool on a wire rack. , In a bowl, beat cream cheese and sugar until smooth. Add cornstarch and beat well. Add eggs; beat on low just until combined. Add sour cream, lemon juice and extract; beat just until blended. Pour over crust. , Bake at 350° for 45-50 minutes or until center is almost set. Cool on a wire rack for 1 hour. Refrigerate overnight. Remove sides of pan. , In a small saucepan, melt preserves, stirring to break up any apricot pieces. Arrange pineapple and kiwi on top of cheesecake. Brush preserves over fruit and on sides of cheese cake. Press coconut onto the sides of the cheesecake. Chill until serving.
