These delicious oatmeal bars with peanut butter, bananas, and chocolate chips are no bake and couldn't be easier to make! Great for kids and a healthy snack or breakfast option.

2 bananas, mashed
1/3 cup peanut butter (or any nut butter)
2 tbsp maple syrup
1 tsp. cinnamon
2 cups rolled oats (GF if needed)
1/2 cup flaxseed meal
1/4 cup unsweetened shredded coconut
2 tbsp. chia seeds
1/3 cup chocolate chips (any kind or chunks)

Steps:

  • Mix together the mashed bananas, peanut butter, maple syrup, and cinnamon until well combined.
  • Add the oats, flaxseed meal, coconut, and chia seeds. Mix until well combined. Fold in the chocolate chips.
  • Press into an 8 X 8 baking dish lined with parchment paper. Refrigerate for 3-4 hours.
  • Cut into squares. Store in the fridge.

Steps:

  • In a small saucepan, combine peanut butter and honey. Cook and stir over medium-low heat until melted and blended. Remove from heat; stir in oats. Spread into a greased 9-in. square pan; press lightly. Cool to room temperature; cover and chill for 1 hour.

1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.

1 cup graham cracker crumbs, about 8 sheets
½ cup butter, melted
1 cup powdered sugar
1 cup peanut butter, plus an additional 2 Tbsp.
1 cup semi-sweet chocolate chips

Steps:

  • In a bowl, combine the graham cracker, sugar, and butter. Stir. Add in 1 cup (240g) of peanut butter and mix until combined.
  • Line a 9x9 (22x22 cm) or 8x8 (20x20 cm) pan with foil.
  • Spread on the peanut butter mixture.
  • Melt the chocolate chips with the 2 Tbsp. of peanut butter, and spread on top of the graham cracker mixture.
  • Refrigerate for 3 hours.
  • Remove from pan, cut, and serve.
  • Enjoy!
