TERIYAKI SALMON SKEWERS



Teriyaki Salmon Skewers image

The sweet dark flavour of teriyaki is an ideal match for salmon. This is an easy appetizer, perfect to pick up and enjoy with a glass of sparkling wine. By using a centre cut of salmon your skewers will be equal in size and cook evenly. Let your wooden skewers soak in water for about 20 minutes to prevent flare-ups in the oven. 3 tablespoons soy sauce
2 tablespoons hoisin sauce
2 teaspoons rice vinegar
1 garlic clove, minced
1 salmon fillet, skinless, about 1 lb
1 green onion, finely chopped
toasted sesame seeds (optional)

Steps:

  • Whisk together soy and hoisin sauces, vinegar and garlic in a bowl.
  • Slice salmon fillet across the grain into thin strips. Add to soy mixture and let stand for 15 minutes, turning occasionally.
  • Thread each salmon strip onto small metal or soaked wooden skewers. Place skewers on baking sheet and broil, turning and basting with marinade once, for about 4 minutes or until golden and fish flakes easily when tested. Alternatively, cook skewers on oiled grill pan on grill.
  • Before serving, sprinkle with green onion and sesame seeds, if using.

2 tablespoons soy sauce
2 tablespoons honey
1/4 cup mirin rice wine
1 teaspoon fresh ginger, grated
1/2 teaspoon minced garlic
1 teaspoon fresh lime juice
1 teaspoon wasabi

Steps:

  • Cut salmon crosswise into 2.
  • Combine the remaining ingredients in a bowl and pour over fillets. Marinade for 2-4 hours in in the fridge.
  • Heat grill or broiler.
  • Arrange the salmon skin side down on hot grill.
  • Repeat brushing with left over sauce every 2 minutes.
  • Should be cooked through in no more then 8-10 minutes.

This recipe is heaven-sent for working folk--not only is is quick and tasty, but kids love it and the texture is so velvety smooth that you'll never cook salmon anywhere but in the microwave again! It is low in calories, fat and carbs to boot. Serve on a bed of spinach sauteed in a bit of olive oil with fresh minced garlic, salt & pepper (like #28274 or #31108 from this website) and you have a company-worthy, healthful meal. Seven minutes refers to cooking time; marinating time is an additional 30 minutes.

4 salmon steaks (approx. 1 3/4 lb.) or 4 salmon fillets, 1/2 inch thick (approx. 1 3/4 lb.)
4 tablespoons soy sauce (can be reduced-sodium)
2 tablespoons marsala or 2 tablespoons sherry wine
2 teaspoons lemon juice
1 tablespoon sugar
2 cloves crushed garlic
2 -3 scallions, sliced thinly, to garnish (white and light green parts)

Steps:

  • Place salmon skin side down (if using fillets) in shallow microwave-safe dish, glass or plastic.
  • Combine the rest of the ingredients, except scallions, and pour over fish.
  • Cover with plastic wrap and marinate at room temperature for 30 to 60 minutes.
  • The longer it marinates, the more pronounced the flavor.
  • Turn fish once or twice while marinating, leaving it skin side up on the last turn (if using fillets).
  • Making sure the plastic wrap seal is tight, microwave on high for 7 minutes.
  • Let it stand in the microwave for an additional 3 minutes, covered, while you plate the spinach or other veggies.
  • Check one fillet to ensure it is cooked to your liking (All microwaves cook a little differently; I rather like medium rare salmon if it turns out that way, but others may not-- if too rare, just pop it back in the microwave, sealed, and zap it for a minute or so).
  • Plate the salmon and sprinkle with the scallions.

4 fresh salmon steaks or 4 tuna steaks
1/2 cup teriyaki sauce
1/3 cup honey
1/4 cup rice vinegar
1 tablespoon grated fresh ginger
1 tablespoon dark sesame oil
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • PREHEAT grill to medium-high. Make drainage holes in a sheet of Reynolds Wrap Release Non-Stick Foil with a large grilling fork; set aside.
  • PLACE salmon steaks in a shallow dish. Combine teriyaki sauce, honey, vinegar, ginger, sesame oil and red pepper flakes; reserve ½ cup for basting. Pour remaining marinade over fish, turn to coat both sides. Cover and refrigerate 30 minutes.
  • REMOVE fish from marinade. Discard marinade.
  • PLACE foil sheet with holes on grill rack with non-stick (dull) side towards food; immediately place salmon on foil.
  • GRILL 3 to 5 minutes on each side in covered grill or until fish flakes when tested with a fork, brushing with marinade after turning.

Salmon is a favorite of my husband. This recipe never fails to be a hit, whether we broil the salmon in the oven or grill it outdoors. Pair it with some homemade teriyaki fried rice to complete your meal.

¼ cup sesame oil
¼ cup lemon juice
¼ cup soy sauce
2 tablespoons brown sugar, or more to taste
1 tablespoon sesame seeds
1 teaspoon ground mustard
1 teaspoon ground ginger
¼ teaspoon garlic powder
4 (6 ounce) salmon steaks

Steps:

  • Mix sesame oil, lemon juice, soy sauce, brown sugar, sesame seeds, ground mustard, ginger, and garlic powder in a small saucepan over low heat. Bring to a simmer, stirring until sugar has dissolved. Set aside 1/2 cup of marinade for basting.
  • Pour remaining marinade into a resealable plastic bag and place salmon into the marinade. Squeeze air out of the bag, seal, and marinate the salmon steaks for at least 1 hour (2 hours for better flavor). Drain and discard used marinade.
  • Set oven rack about 4 inches from the heat source and preheat the oven's broiler. Place salmon steaks into a broiler pan and broil for 5 minutes. Brush steaks with reserved marinade, turn, and broil until fish is opaque and flakes easily, about 5 more minutes. Brush again with marinade.

Teriyaki salmon is a traditional Japanese dish - this recipe adds some citrus tang to it. I've also made this recipe substituting pink grapefruit juice cocktail for some of the orange juice (about 2/3 cup orange, 1/3 cup grapefruit). Last time I made this, I served it with Julesong's Brown Rice with Onions and Pecans and edamame (soybeans boiled in the shell). Prep time includes marinating time

1 cup orange juice
1/4 cup ginger, minced
1/4 cup green onion, chopped fine
1/2 cup teriyaki sauce
3 tablespoons lime juice
2 cloves garlic
4 salmon steaks or 4 fillets

Steps:

  • Combine orange juice, ginger, onion, teriyaki, lime juice, and garlic, and mix well.
  • Marinate salmon in mixture for at least 3 hours.
  • Grill or broil salmon.
  • While salmon is cooking, strain solids from the remaining marinade, and heat in a small saucepan.
  • Bring the marinade to a boil and cook 5-10 minutes.

2 lbs fresh salmon
1/4 cup butter (or to taste less is fine too)
1 (12 ounce) bottle kikkoman teriyaki baste and glaze
2 cups pecans
1 cup brown sugar
1/2 cup melted butter
3 cups jasmine rice

Steps:

  • Preheat oven to 350°F.
  • Place the salmon on a foil covered baking dish.
  • Cut a slit down the middle of each filet.
  • Place slices of butter inside the slit and dot the top of the salmon.
  • In a zip lock bag, combine pecans, brown sugar and melted butter. Shake the bag and mix well crushing larger nuts. Spread nuts over the top of the salmon. Note: you can also use the pre-made pecans that they sell in the store for making pecan pie.
  • Pour the entire bottle of Kikkoman Teriyaki Baste & Glaze over the top of the salmon and nuts and cover with foil.
  • Bake @ 350 F for 30 to 35 minutes, uncover and bake an additional 5 minutes.
  • Steam Jasmine rice while the salmon cooks, fluffing and stiring when cooked.
  • Serve over hot, steamed jasmine rice. Feeds a family of 4.
