DELICIOUS DEVILED EGGS

From holiday parties to warm weather barbeques and potluck suppers, these classic deviled eggs will spice up any occasion.

6 hard-cooked eggs, peeled
1/4 cup mayonnaise
1/2 teaspoon McCormick® Mustard, Ground
1/2 teaspoon McCormick® Parsley Flakes
1/4 teaspoon seasoned salt
McCormick® Paprika

Steps:

  • 1. Slice eggs in half lengthwise. Remove yolks; place in small bowl. Mash yolks with fork or potato masher.
  • 2. Stir in mayonnaise, mustard, parsley and seasoned salt until smooth and creamy. Spoon or pipe yolk mixture into egg white halves. Sprinkle with paprika.
  • 3. Refrigerate 1 hour or until ready to serve.
  • Gently place eggs in single layer in medium saucepan. Add enough cold water to cover eggs with 1 inch of water. Bring just to boil on medium-high heat. Remove from heat. Cover and let stand about 15 minutes for large eggs. (Adjust time up or down by 3 minutes for each size larger or smaller.) After 15 minutes, pour off the hot water and rapidly cool eggs by running them under cold water (or place in ice water) until completely cooled. Refrigerate and use within a week.

  • Make Hard-Cooked Eggs: Place 4 to 6 eggs in a large saucepan, cover with cold water by 1 inch and bring to a simmer. Cover, remove from the heat and set aside, 8 to 10 minutes. Drain, then peel in a bowl of cold water. Halve and scoop out the yolks. Mash with 3 tablespoons olive oil, a can of tuna, chopped parsley and a splash of lemon juice. Scoop into the whites; top with sliced olives and tomatoes.

Niçoise Deviled Eggs Recipe image

12 large eggs
1 cup baby fingerling potatoes
1/2 cup fresh green beans
2 1/2 ounces canned tuna packed in water, drained
3 tablespoons course grain dijon mustard
2-3 tablespoons white wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons Niçoise olives, chopped
1 1/2 tablespoons shallot, minced
2 teaspoons chopped fresh tarragon
salt and pepper to taste

Steps:

  • Place eggs in a large pot and cover with cold water by 1 inch. Place pot over medium/high heat. When the water begins to boil, cover pot and remove from heat. Allow eggs to sit in the water for 12 minutes. Remove eggs and place in an ice water bath to stop the cooking. Refrigerate until ready to use. While the eggs are cooking, fill a medium saucepan with water. Add potatoes and bring to a boil. Boil potatoes for about 5 minutes or until tender. Use a slotted spoon to remove the potatoes and set aside to cool. Add green beans to the boiling water and cook for 1-2 minutes or until beans are bright in color and just tender. Place beans in an ice water bath to stop the cooking. Chop the potatoes and green beans; set aside. Peel the eggs. Cut them in half lengthwise and separate the whites and the yolks. Place the yolks in a large bowl and add potatoes, green beans, tuna, mustard, white wine vinegar, olive oil, Niçoise olives, shallots, tarragon, and salt and pepper to taste. Use a spoon to scoop filling mixture back into the reserved egg whites. Arrange on a platter and serve! Enjoy!

Not-So-Devilish Deviled Eggs image

8 hard-cooked eggs, peeled and halved lengthwise
1/2 cup reduced-calorie mayonnaise
1/4 cup low-fat (1 percent) creamy cottage cheese, drained
1 tablespoon curry powder
1 tablespoon Dijon mustard
Dash hot pepper sauce
Paprika, for sprinkling
Parsley sprigs, for garnish

Steps:

  • Place 4 of the egg yolks in a food processor or blender (discard the other 4) with the mayonnaise, cottage cheese, curry, mustard and pepper sauce. Process until smooth.
  • Spoon the filling into a pastry bag with star tip. Pipe the filling into the egg whites, then sprinkle with the paprika. Garnish with the parsley. Refrigerate, covered, until ready to serve.

12 large eggs (see Cook's Note)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 to 2 dashes hot sauce, optional
Kosher salt and freshly ground black pepper
Finely chopped chives, for garnish
Smoked paprika, for sprinkling

Steps:

  • Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
  • Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
  • Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

1 tablespoon relish
1 teaspoon salt
1 teaspoon pepper
paprika
1 tablespoon fresh parsley leaves

Steps:

  • Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
  • Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
  • Mix the mayonnaise, mustard, relish, salt, and pepper with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)
  • Pipe the mixture into the egg whites, garnish with paprika and parsley, and serve chilled.
