Steps:
- In a large skillet, cook pork over medium heat until no longer pink; drain. Add onion; saute for 1 minute or until crisp-tender. Add the stir-fry sauce, cilantro and red pepper flakes; cook for 1 minute. Add coleslaw mix; cook 2 minutes longer or until crisp-tender. Spoon filling down the center of tortilla. Fold end and sides over filling.

THAI BURRITO RECIPE
Delicious Thai Burritos with Peanut Sauce, baked peanut Tofu, black rice, spicy sriracha black beans and shredded crunchy veggies all wrapped up in a warm, whole wheat tortilla. Makes 4 hearty burritos

- either blending in a blender or whisking in a bowl ( if whisking, add the peanut butter last, adding a little at a time to incorporate).
- Blot the tofu gently, and cut into 6 slices (see photo), then cut each slice into two, to make 12 strips. Place on a parchment-lined sheet pan. Sprinkle lightly with salt. Brush all sides liberally with the peanut sauce, spooning a little extra over the tops. Bake 25-30 minutes. Save the remaining sauce for the burritos.
- The fastest way to make rice is using the pasta method. Boil 1/2 cup rice in 4-5 cups salted water, uncovered, drain when tender, using a strainer, letting stand in the strainer 5 mins. Fluff.
- cut and place them on a tray or plate with the peanut sauce.
- , whisking in 2-4 tablespoons water with a fork to loosen them. Add a spoonful of garlic chili paste, Sambal Olek, or a squirt of sriracha to taste, to pep them up a bit. Keep them warm.
- Right before assembling the burritos, warm the tortillas to make them soft and pliable. If you have a gas stove, use tongs, place directly on the gas grate, over medium flame, turning often with tongs. Otherwise, place in a single layer in the oven on the rack until soft and pliable. Wrap in a kitchen towel to keep warm.
- Spoon some of the warm beans onto the tortilla creating a base, add rice, then tofu and veggies and herbs. Spoon some peanut sauce over top, and optional peanuts or peanut chili crunch, and wrap up tightly. ***I've found it easiest to eat with foil wrapped around the bottom half to keep these big boys all together.

THAI-STYLE PORK BURRITOS
DH and I are eating much healthier now days and this recipe totally fits the bill. I found the basic ingredients on a package of lean ground pork. (which by the way is lower in fat then ground turkey or chicken and delicious) Quick, easy, healthy and full of flavor!***I do not agree with RecipeZaar's calculation of the calories and fat in my recipe. (no offense RZ!) Per the nutrition facts on the lean pork packaging, there are 4 grams of fat and 180 calories total for the pork; plus the minimal amount the other ingredients contribute. Hence my praise for the low fat healthy recipe. :)

- Brown pork in a non-stick skillet over high heat until it is no longer pink, about 3 to 4 minutes. (no need to oil skillet, make sure it's hot) Add ginger, garlic, onion and cole slaw mix and stir fry with pork until vegetables are wilted, about 2 minutes.
- Combine all remaining ingredients except tortillas and cilantro in a small bowl and add to skillet. Cook and stir until all is coated, about a minute.
- Spoon equal portions of mixture onto warm tortillas sprinkled with about a Tbs. of cilantro, or to taste. Roll up to encase filling and serve.

- NOTE: Can use a package of Asian-style medley frozen vegetables instead of fresh if you choose. We like the Thai peanut sauce recipe #63210.
- Steam the vegetables just until done. Do not overcook.
- Divide the rice, vegetables and remaining ingredients between the tortillas.
- Roll up burrito style and serve hot. Yield is estimated!

THAI TOFU BURRITOS WITH PEANUT SAUCE
This recipe was inspired by a tofu burrito that I tried at a local restaurant. It is the perfect combination of flavors: salty, sweet, and a little bit of spice. The peanut sauce is very close to Molly Katz's recipe. They are yummy!

- Wrap tofu in a paper towel.
- Whisk peanut butter and water together in a bowl until smooth. Add 1 tablespoon soy sauce, sugar, cider vinegar, garlic powder, and cayenne pepper; whisk until well mixed.
- Combine slaw mix, cilantro, and rice vinegar in a bowl.
- Dice tofu into 1-inch cubes.
- Heat olive oil and sesame oil in a skillet over high heat. Add the tofu, remaining 1 tablespoon soy sauce, salt, and pepper. Cook, stirring occasionally, until tofu is browned on all sides, about 10 minutes.
- Lay a tortilla on a plate and add 1/6 of the tofu across the middle. Add 1/2 cup of the slaw mix and 2 tablespoons peanut sauce. Wrap tortilla around the fillings, burrito style. Repeat with remaining tortillas and filling.

FRIED BURRITOS
My MIL made these for my DH when he was younger. Now that we're married, I've taken over. I'm not sure where she got the idea of frying them. I searched for a recipe on here and didn't find one, so I hope I'm not making a double post! I'm guessing on the amount of oil for frying, and you will probably have cheese leftover.

Steps:
- Warm the tortillas for 15 seconds in the microwave. This will prevent them from cracking when you work with them.
- If they are not sufficiently heated, heat for an additional 10 seconds until fairly warm.
- Once heated, keep them warm by placing them in a tortilla warmer, or two inverted plates.
- Put the oil in a deep skillet. The oil should be about an inch deep.
- Turn the burner to medium-low. The oil is ready when a drop of water "dances" on it.
- Remove one tortilla at a time from the warmer and place on clean surface.
- Spread 1-2 tablespoon refried beans in a line down center of tortilla.
- Place half a piece of cheese, followed by an additional fourth a piece cheese on the beans.
- Fold the top and bottom of the tortilla in, then the sides.
- Place, seam side down, in the oil.
- Fry until browned on one side. This will not take long. Turn and brown on other side.
- Prepare the remaining tortillas as you did before and place them to the oil. You should have NO MORE than 3 frying at one time.
- When you remove them from the oil, place on a thick layer of paper towels to dry.
