LOBSTER CORN CHOWDER

Provided by Ina Garten

Categories     side-dish

Time 3h45m

Yield 6 servings

Number Of Ingredients 18

3 (1 1/2-pound) cooked lobsters, cracked and split
3 ears corn
6 tablespoons (3/4 stick) unsalted butter
1 cup chopped yellow onion
1/4 cup cream sherry
1 teaspoon sweet paprika
4 cups whole milk
2 cups heavy cream
1 cup dry white wine
1 tablespoon good olive oil
1/4 pound bacon, large-diced
2 cups large-diced unpeeled Yukon gold potatoes (2 medium)
1 1/2 cups chopped yellow onions (2 onions)
2 cups diced celery (3 to 4 stalks)
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons chopped fresh chives
1/4 cup cream sherry

Steps:

  • Remove the meat from the shells of the lobsters. Cut the meat into large cubes and place them in a bowl. Cover with plastic wrap and refrigerate. Reserve the shells and all the juices that collect. Cut the corn kernels from the cobs and set aside, reserving the cobs separately.
  • For the stock, melt the butter in a stockpot or Dutch oven large enough to hold all the lobster shells and corncobs. Add the onion and cook over medium-low heat for 7 minutes, until translucent but not browned, stirring occasionally. Add the sherry and paprika and cook for 1 minute. Add the milk, cream, wine, lobster shells and their juices, and corn cobs and bring to a simmer. Partially cover the pot and simmer the stock over the lowest heat for 30 minutes. (I move the pot halfway off the heat.)
  • Meanwhile, in another stockpot or Dutch oven, heat the oil and cook the bacon for 4 to 5 minutes over medium-low heat, until browned and crisp. Remove with a slotted spoon and reserve. Add the potatoes, onions, celery, corn kernels, salt, and pepper to the same pot and saute for 5 minutes. When the stock is ready, remove the largest pieces of lobster shell and the corn cobs with tongs and discard. Place a strainer over the soup pot and carefully pour the stock into the pot with the potatoes and corn. Simmer over low heat for 15 minutes, until the potatoes are tender. Add the cooked lobster, the chives and the sherry and season to taste. Heat gently and serve hot with a garnish of crisp bacon.

NEW ENGLAND CORN CHOWDER

New England Corn Chowder image

While not as famous as New England's clam chowder, this corn chowder recipe is every bit as delicious. It's perfect after a cold day.

Provided by John Mitzewich

Categories     Soup

Time 45m

Yield 6

Number Of Ingredients 9

2 slices of bacon, cut into strips
1 tablespoon unsalted butter
1 yellow onion, diced
2 tablespoons all-purpose flour
2 cups fresh or frozen corn kernels
1 russet potato, peeled and diced
3 cups whole milk
1/2 teaspoon fresh ground black pepper
1 teaspoon salt

Steps:

  • In a heavy-bottom soup or saucepot, sauté the bacon in the butter on medium heat until the bacon is cooked, but not crisp. Add the flour and onion, and cook for 5 minutes. Add the potato, corn, milk, salt, black pepper, and stir well.
  • Bring up to a gentle simmer, reduce heat to low and cook, occasionally stirring, until the potatoes and onions are tender. Ladle half the chowder into a blender and blend into a fine puree. Add back into the pot with the other half the un-blended mixture. Adjust the seasoning and serve immediately.

Vegetable oil for greasing the molds
2 pounds boneless pike
3 egg whites
2 tablespoons Cognac
2 tablespoons chopped chives
1/4cup minced shallots
1 lemon, juiced
1/2 teaspoon freshly grated nutmeg
Salt
Freshly ground white pepper
2 to 3 cups heavy cream
2 lobster tails, about 6 to 8 ounces each
1/2 cup green peas
12 baby carrots, blanched and halved
Drizzle of truffle oil
1/4 cup fresh chervil sprigs
Parsley

Steps:

  • Preheat the oven 375 degrees F. Oil 12 (4-ounce) ring molds.
  • In a food processor, fitted with a metal blade, combine the fish, egg whites, Cognac, chives, shallots, lemon juice and nutmeg. Puree until smooth.

Number Of Ingredients 15

4 ears fresh sweet corn, brushed lightly with butter and grilled until toasted on all sides (about 2 cups cut corn)
2 tablespoons unsalted butter
1 large onion, peeled and diced (about 1 cup)
2 celery stalks, diced
1 leek, split, cleaned, and diced
1 large sweet red pepper, diced
2 to 3 jalapeno peppers seeded and diced

Add the cumin, coriander, vanilla, salt and cayenne and cook for 2 to 3 minutes to release the flavors. Add the chicken stock and bring to a boil. • Remove the meat from the lobsters, cut into chunks, then refrigerate until ready to use. Add the shells and any juices that collect to a large stock pot.
  • Remove the corn kernels from the cob, then refrigerate until ready to use. Add the cobs to the stock pot with the lobster shells, along with the quartered onion, celery stalks, cream sherry, white wine, 3 cups whole milk and 2 cups water. Bring up to a simmer, then turn down to the lowest heat setting and cook for 45 minutes. Don’t let it boil – make sure the liquid stays at a very low simmer. Turn off the heat and let the stock sit while you prepare the rest of the soup. If desired, you can strain the stock at this point and refrigerate up to one day ahead.
  • Add the bacon to another large pot or dutch oven over medium-low heat and stir until crisp, about 8 minutes. Remove with a slotted spoon to drain on paper towels, then reserve for serving.
  • Add butter to the pot along with the rendered bacon fat, then add the onion and celery. Stir until translucent, about 6 minutes. Add the potatoes, reserved corn kernels, salt and pepper, then stir for 1-2 minutes more.
