Number Of Ingredients 7

30 green tomatoes
16 apples
1/2 cup coarse salt
6 large onions
4 cups sugar
1/4 cup pickling salt
white vinegar

Steps:

  • Clean and wash tomatoes, apples and peel onions.
  • In a Dutch oven slice and layer the 3 ingredients.
  • After each complete layer, sprinkle a little salt and let stand overnight.
  • Next Day:
  • Drain and put ingredients back into pot and add sugar, spices (tied in clean cheesecloth) and add vinegar to cover 3/4 of ingredients.
  • Cook over low to medium heat for 1 to 1 1/2 hours, stirring often with a wooden spoon.
  • Check often to make sure mixture does not burn.
  • When thickened put into sterilized jars and seal.
  • Process for 20 minutes.

16 cups finely sliced green tomatoes
8 cups sliced onions
3 cups vinegar
6 cups sugar
1/3 cup coarse pickling salt
1/2 cup pickling spices, in a cheesecloth bag

Steps:

  • In a large pot, sprinkle the tomatoes and onions well with pickling salt, and let sit overnight covered. In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Add them to a large pot, add the vinegar, the sugar, and the pickling spices in a cheesecloth bag. Put the large pot on the stove and turn to medium. Cook the tomato mixture until it is soft and somewhat thickened, about two hours. Stir often, don't let it burn to the bottom of the pan. Seal in hot sterile mason jars. Makes about 6 pints.

When you don't want to waste those last few just turning a bit red tomatoes, at the end of the season, here's a recipe!!

3 quarts firm half-ripe tomatoes (tomatoes just off the green)
1 tablespoon salt
2 quarts apples, any good cooking apple
whole cloves
1 quart onion
4 -6 cups brown sugar, depending on the sweetness of the apples
4 cups white vinegar
1 cup water

Steps:

  • If tomatoes are even partially ripe, peeling is recommended to avoid tough, stringy bits forming during cooking. Slice peeled tomatoes; sprinkle with salt and let stand for several hours or overnight. Drain well.
  • Peel, core and quarter apples and stick a clove in each quarter. Peel and slice onions, Stir in sugar, vinegar and water. Mix to combine. Bring to a boil, reduce heat and cook slowly for about 3 hours. stir often to avoid scorching.
  • Ladle into hot, steriized jars, leaving 1/2 inch headspace. Seal with 2-piece lids, allowing 10 minutes processing time.
  • Process in hot water bath 10 minutes.
