1 cup unsalted butter (softened)
2 teaspoons vanilla extract
1/2 cup powdered sugar
1 cup finely chopped pecans
1 cup oatmeal
2 cups all-purpose flour (sifted)

Steps:

  • Mix all ingredients well with hands.
  • Shape into crescents.
  • Bake in 325 degree oven for 22 minutes.
  • Allow to cool completely.
  • Place in plastic bag with sugar and shake well to coat.
  • Enjoy!

1 cup margarine
1/3 cup sugar
2 teaspoons water
2 teaspoons vanilla
2 cups flour, sifted
1 cup pecans, chopped

Steps:

  • Cream oleo and sugar - add water and vanilla. Mix well. Blend in flour and nuts. Chill for 4 hours. Shape and bake on ungreased cookie sheet for 20 minutes in 325 oven.
  • Remove from pan - Cool slightly. Roll in powdered sugar.

1 cup butter, softened
1/2 cup confectioners' sugar, plus more for coating cookies
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour, plus more for dusting hands
1 cup chopped pecans (very small pieces)

Steps:

  • Preheat oven to 270 degrees F. Line cookie sheets with parchment paper.
  • Using an electric mixer at low speed, cream the butter and sugar until smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula.
  • With floured hands, take out about 1-tablespoon of dough and shape it into crescent. Place the cookies 1-inch apart on the prepared cookie sheets. Cook's Note: Continue to dust your hands with flour as you make more cookies.
  • Bake for 40 minutes. Dust with additional confectioners' sugar while still warm. Cool completely on wire racks and store in airtight containers.

I received this recipe from my ExMIL many years ago. This is a Christmas "must" around my house. The best part is that they do not require any special ingredients. Most everyone has the ingredients for these in the pantry and fridge.

Number Of Ingredients 6

1 cup butter
5 tablespoons powdered sugar
2 cups self rising flour
2 teaspoons vanilla (I sometimes substitute pure lemon extract)
1 1/2 cups chopped pecans
2 cups powdered sugar, for rolling cooked tarts

Steps:

  • Reheat oven to 350 F.
  • Cream butter and sugar.
  • Work 5 Tablespoons flour, vanilla and nuts into creamed mixture.
  • Take teaspoon size of mixture and roll into a ball.
  • Place on cookie sheet that has been sprayed lightly with oil.
  • Bake at 350 F. for 30 minutes.
  • Roll tarts in powdered sugar as soon as they are removed from oven.
  • When cooled roll tarts in sugar again and store in air tight containers.

A wonderful, old-timey cookie wonderful with icy cold milk or a cup of hot tea. From the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 cups shortening
1/4 teaspoon salt
2 1/2 cups sugar
4 cups flour, sifted
2 eggs, well beaten
1 egg white, lightly beaten
cinnamon sugar
pecan halves

Steps:

  • Cream shortening, salt and sugar together.
  • Add flour gradually, working it in well.
  • Add beaten eggs and mix thoroughly.
  • Cover and chill overnight.
  • Roll out thinly on a lightly floured board.
  • Cut into rounds; brush with egg white, sprinkle with cinnamon sugar; press a pecan half into center of each cookie.
  • Bake at 350F for ten minutes.

So I teased her and she laughed. And then, without even realizing it, she asked, "Do you want a cookie?" Aunt Ruth's cookies are legendary. I said yes. Beware - this recipe makes a lot of cookies (number depends on how big you form them). You will eat a lot of them.

Steps:

  • Cream butter and sugar.
  • Add vanilla and nuts.

  • Shape into little thin rolls - cut in to little "fingers".
  • Bake at 300 degrees for 10-12 minutes until bottoms start to barely brown.

8 1/2 ounces cake flour
8 1/2 ounces bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
1 1/4 cups unsalted butter
1 cup creamy peanut butter (specifically, Shop N Save house brand)
10 ounces light brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 1/4 lbs semi-sweet chocolate chips

Steps:

  • Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
  • Cream butter, peanut butter, and sugars together.
  • Add vanilla and eggs one at a time, mixing well after each addition.
  • At a low speed add dry ingredients and mix until just combined, about 10 seconds.
  • Add chocolate chips and mix as little as possible to evenly distribute.
  • Chill dough if desired.
  • Scoop 6, 3 1/2 ounce (the size of a racket ball) onto baking sheet lined with parchment. Lightly sprinkle top with sea salt and bake at 350 for 15 to 20 minutes. Will spread to 5-6", so leave ample room. Cookies will still be soft, but beginning to brown.
  • Transfer sheet to a wire rack for 12 minutes to cool (DO NOT REMOVE COOKIES).
  • Transfer cookies to rack to complete cooling.
