Turkey and stuffing like Grandma used to make. Sage adds a special pungent flavor to this simple recipe. Adjust the ingredients and cooking time as appropriate for different sized turkeys.

1 (12 ounce) package dry bread stuffing mix
5 cups water
1 large onion, chopped
4 celery, chopped
4 tablespoons dried sage
12 pounds whole turkey, neck and giblets removed

Steps:

  • Prepare stuffing according to package directions, and set aside in a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring water to boil in a medium saucepan over medium heat, and stir in the onion, celery and sage. Boil 10 minutes, or until the onion is soft. Stir into the prepared stuffing.
  • Rinse turkey, and pat dry. Loosely fill the body and neck cavities with the stuffing mixture.
  • Place turkey in a large roasting pan and cook 3 to 3 1/2 hours in the preheated oven, or until the internal temperature of the thigh meat is 180 degrees F (80 degrees C) and the stuffing is at least 165 degrees F (75 degrees C).

This recipe came from my mother. She is no longer with us. However, recipes I have will stay with me forever. Don't mind sharing some of them.

Number Of Ingredients 7

2-3 stalks of celery, diced small
1 medium onion, diced
1 1/2 Tbsp rubbed sage
1 Tbsp poultry seasoning
4-6 bags of pepperidge farm herb stuffing mix or 2 large bags.
2 can(s) chicken broth, if necessary to use
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees. Remove giblets from turkey. Cook in large covered pot with water. Add diced celery, diced onion, rubbed sage, poultry seasoning, salt and pepper. Cook on low-medium heat until tender. Remove giblets from pot and set aside to cool.
  • 2. Save all giblet broth to add to turkey broth. After the turkey has finished baking, carefully drain turkey broth into a large bowl. Add the giblet broth to turkey broth. Add stuffing mix to broth. Using a wooden spoon, mix together until moist until a ball can be formed in your hand and stay together (not stiff with bread).
  • 3. Taste and add more salt if necessary. Add cans of chicken broth, if necessary. Spread into 9 x 13 pans or spoon into muffin tins. Bake until brown and crispy on top.

1 medium onion, chopped (1/2 cup)
2 medium stalks celery, chopped (1 cup)
2 medium carrots, chopped (1 cup)
8 cups dry bread cubes (about 11 slices bread)
2 tablespoons finely chopped fresh parsley, if desired
2 tablespoons poultry seasoning or dried sage leaves
1 teaspoon salt
1/4 teaspoon pepper
About 1/2 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Add onion, celery and carrots; cook, stirring occasionally, until tender.
  • In large bowl, mix bread cubes, parsley, poultry seasoning, salt and pepper. Add broth and butter-onion mixture, stirring until desired moistness (stuffing will become a little more moist during roasting because it will absorb juices from turkey).
  • Use to stuff 1 (14- to 18-lb) turkey. After stuffing turkey, place any remaining stuffing in 1- or 2-quart casserole that has been sprayed with cooking spray; cover and refrigerate. Bake stuffing in casserole with turkey for last 35 to 40 minutes of roasting time or until thoroughly heated.

A classic stuffing recipe to serve with any turkey dinner. If you have turkey broth on hand, it can be substituted for chicken broth.

1 egg, beaten
1 cup chicken stock

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter one 2 quart casserole dish.
  • In a saute pan, cook onion and celery in butter until soft.
  • In a mixing bowl, combine onion and celery, bread cubes, poultry seasonings, mushrooms, egg and stock. Mix well and add to casserole dish. Bake for 1 hour.

I got this from my sister-in-law and it is simple but nicely seasoned. Makes 3 quarts (enough for a 12lb turkey).

1 cup butter
1 cup onion, minced
12 cups dried bread, cubed
1 1/2 cups celery, leaves and stalks chopped
1 tablespoon salt
1 teaspoon pepper
1 tablespoon poultry seasoning (or a mix of sage, thyme and marjoram)

Steps:

  • Melt the butter in a large, heavy skillet. Add the onion and cook until yellow. Stir in as many breadcrumbs as fit and heat.
  • Transfer to a large, deep bowl and add celery, seasoning and the rest of the bread. Mix well. If too dry, add enough broth or water to moisten (don't make it soggy!).

1 lb bulk sausage
2 large onions, chopped
1 cup celery, chopped
1/2 cup dried apricot, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons sage (or poultry seasoning)
2 teaspoons savory
1 -1 1/2 loaf bread
2 cups chicken broth or 2 cups turkey drippings (to use if cooking the stuffing outside of the bird)

Steps:

  • The night before, lay out the bread slices to dry.
  • Cut dried bread into cubes.
  • In a large frying pan, brown loose sausage with onions and celery.
  • Add apricots and seasonings.
  • Pour sausage mixture into large bowl with bread and combine.
  • Stuff turkey or place in casserole and moisten with chicken broth.
  • If using casserole, place in oven with turkey for about the last hour.
  • Moisten further with turkey drippings as necessary.
