NANA'S BEST TURKEY DRESSING

Nana's Best Turkey Dressing image

This recipe came from my mother. She is no longer with us. However, recipes I have will stay with me forever. Don't mind sharing some of them.

Provided by Sheri Wasky

Categories     Dressings

Time 25m

Number Of Ingredients 7

2-3 stalks of celery, diced small
1 medium onion, diced
1 1/2 Tbsp rubbed sage
1 Tbsp poultry seasoning
4-6 bags of pepperidge farm herb stuffing mix or 2 large bags.
2 can(s) chicken broth, if necessary to use
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees. Remove giblets from turkey. Cook in large covered pot with water. Add diced celery, diced onion, rubbed sage, poultry seasoning, salt and pepper. Cook on low-medium heat until tender. Remove giblets from pot and set aside to cool.
  • 2. Save all giblet broth to add to turkey broth. After the turkey has finished baking, carefully drain turkey broth into a large bowl. Add the giblet broth to turkey broth. Add stuffing mix to broth. Using a wooden spoon, mix together until moist until a ball can be formed in your hand and stay together (not stiff with bread).
  • 3. Taste and add more salt if necessary. Add cans of chicken broth, if necessary. Spread into 9 x 13 pans or spoon into muffin tins. Bake until brown and crispy on top.

MY FAMILY'S MEAT STUFFING FOR A TURKEY

My Family's Meat Stuffing for a Turkey image

This is a meat stuffing my family has used all my life and before. This was given to my mother by her mother, and I imagine, her mother. Our whole family used this recipe. My daughter makes this stuffing as well, and now my granddaughters have the recipe so they will eventually use it. It is a very tasty stuffing so we make "tons" of it to freeze or use over the holidays. It's good on toast with gravy as a hot open sandwich. Or with turkey slices and gravy as a leftovers meal. You can make it a day or so ahead, but you must bring it to room temp if you are going to stuff your bird with it. ETA: I have always made the stuffing and put it into the turkey HOT. That way there is no problems with the turkey being overdone to make sure the stuffing is heated through. IN RESPONSE THE THE REVIEW DATED NOV 20 2007 ---- I appreciate your FYI, however, I have been making my turkey just this way for over 40 years, and have yet to lose a family member or friend. I have eaten it this way from "birth" since this recipe and method has been used by my mother and my grandmother before her.

Time P1m29D

Yield 10-12 serving(s)

Number Of Ingredients 9

2 1/2 lbs ground beef, your choice of cut
1 lb ground pork, I use Jones Sausage Roll*
1 cup large dice celery
1 cup large dice onion
6 -12 ounces pepperidge farm onion and garlic croutons
1 lb butter, you may not need it all
poultry seasoning
salt
pepper

Steps:

  • First, have a very large bowl or pot close to stove top so you can put ingredients in as they are cooked.
  • Second, you need a good sized fry pan, preferabley with deep, straight sides.
  • Third, a good pair of tongs and spoonula.
  • Fourth, are the ingredients. These are estimations, I don't really measure.
  • Fifth, you might want to do the prep ahead so as to be able to cook and stuff all at once. Or not!
  • *you could use just ground pork but the sausage gives a better taste.
  • Heat fry pan and oil lightly with a pat of butter.
  • Fry 1/2 the beef and 1/2 the sausage together. Make sure to break it all up and mix it well until all is cooked. Dump it all into the pot/bowl you have waiting. Juices and all.
  • Do the same to the rest of the beef and sausage. Mix thoroughly.
  • Melt 1/4 cup (4 Tbs) butter in fry pan and saute the celery until almost cooked. Dump it all into the pot/bowl and mix thoroughly.
  • Melt 1/4 cup (4 Tbs) butter in fry pan and saute the onion until wilted, but not brown. Dump all into the pot/bowl and mix thoroughly.
  • Add seasonings at this point. Use the amount that is to your liking. Mix very well.
  • If it seems too dry at this point, melt more butter in the fry pan and add to the mix.
  • Finally, add the 1 box of croutons and mix several times over the next 15-20 minutes.
  • There should be little or no liquid in the bottom of the pot/bowl after this time. The croutons should have absorbed it. If not, add more croutons and repeat.
  • Now you can either put the stuffing in a casserole dish, roaster or other baking pan , and cook separately from the turkey.
  • I stuff my turkey, both neck and cavity immediately, while the stuffing is hot, and put it into the oven to roast. The extra stuffing goes in a separate pan to cook along side the turkey.
  • If you use a spearate casserole to do cook the stuffing, you may want to use some pan drippings to mix into the casserole and give it more flavor.
  • With this we serve mashed potatoes, peas, my special turnip/carrot mash, cranberry sauce, and Polish rye or sisal bread. Of course, the gravy, too!

NANA'S THANKSGIVING DRESSING

Nana's Thanksgiving Dressing image

This is a recipe handed down for generations! It is time consuming but is requested year and year. There's no other stuffing like it.

Provided by Vseward Chef-V

Categories     Thanksgiving

Time 1h20m

Yield 24 serving(s)

Number Of Ingredients 10

6 large carrots, chopped or 30 ounces baby carrots
1 bunch celery, chopped
3 roma tomatoes, diced
3 bunches green onions, chopped
3 (15 ounce) cans black olives, chopped
1 lb pork sausage
2 lbs ground beef
3 (24 ounce) bags unseasoned croutons
1 tablespoon garlic salt
1 tablespoon onion salt

Steps:

  • Cook turkey giblets while preparing vegetables - Save broth - strip meat off turkey neck and save for dressing.
  • In deep pan fry sausage and ground beef, use 12 cube butter with meat. Fry until no longer pink.
  • Add a few of the diced vegetables, about a cup at a time. Stir and cook, add more butter and vegetables gradually. Also, add spices as you add vegetables. Don't use table salt as the pork has salt in it.
  • As vegetables cook down (test carrots for doneness) pour broth and croutons alternately into mixture, keep stirring all the while. The croutons will make the mixture thick, be sure and don't get it soupy. (if you do, add more croutons) add meat from stripped turkey neck.
  • May be served like this or put in baking dish and bake about 1 hour at 350*.

NANA'S THANKSGIVING AND CHRISTMAS PAN DRESSING

Nana's Thanksgiving and Christmas Pan Dressing image

This stuff is custom for Thanksgiving and Christmas Dinner. It also makes a great main dish all by itself. I was at DH's Mother's home for Christmas and she made this pan dressing. Just suffice to say...this aint "jusstuffing and by God's grace we will never have another Christmas or Thanksgiving without a big pan of this! I am also posting the giblet gravy which we like on top of this dressing! It takes some time and effort, but completely worth it. His mother is such a wonderful cook, and with her recipes I can carry on the tradition! In addition to the following ingredients, you will need 2 disposable pans (1-13x9 and 1-11x7)(or use glass lined with foil) and nonstick spray. Since I use store bought roasted chicken and stock it shortens the prep time but Nana would just boil a whole chicken in 12 cups of water, cool and de-bone. I make the cornbread the night before...

Provided by Caryn Dalton

Categories     One Dish Meal

Time 2h45m

Yield 15 serving(s)

Number Of Ingredients 16

2 cups self-rising cornmeal, mix
1 3/4 cups buttermilk
1/4 cup vegetable oil or 1/4 cup vegetable shortening, melted
4 -8 tablespoons stock
1 tablespoon turkey drippings or 1 tablespoon other fat
2 1/2-3 cups chopped celery
2 medium yellow onions, chopped small (at least 1 cup)
1 teaspoon chicken bouillon (for the salt)
1/2 teaspoon rubbed sage (you can omit or reduce if preferred)
1 teaspoon poultry seasoning
1/2 teaspoon pepper
1/4 teaspoon white pepper
3 -5 lbs roasted chicken
12 cups chicken stock
6 eggs, beaten until frothy
5 slices of stale whole wheat bread

Steps:

  • First, prepare your cornbread which is the base of this dish:.
  • Heat oven to 450°F; grease 9-inch cast iron skillet or 9-inch square pan.
  • Put it in the oven to heat. In a large bowl, combine all ingredients and mix well. Pour the batter into greased pan, scraping sides and bottom of bowl. Bake for 20 to 25 minutes or until the top is golden brown.
  • Set prepared cornbread aside to cool. When cool, remove from pan and in a large 4 quart mixing bowl, cube into 1 inch cubes or you can just crumble it with your hand (which is what Nana would do).
  • Carefully de-bone the chicken and shred/chunk. You want to end up with at least 3 cups of chicken. More is fine too.
  • Finely chop celery and small chunk the onion. In a heavy bottom skillet, combine drippings or cooking fat and 4 TB of stock . Add onions and saute on medium heat, stirring and scraping bottom of pan often until onions are beginning to become clear but not yet limp (about 3-4 minutes). Add more broth at any time you feel you need it- to prevent burning. Add celery and cook about 3 minutes longer until celery is crisp tender and onion is clear and limp and perhaps beginning to caramelize. Remove from heat, stir in all seasonings and set mixture aside for now.
  • Grease (or spray with nonstick) your disposable pans. You can use glass and line with foil too. Set aside.
  • Combine the cubed or crumbled cornbread and cut/shredded chicken in the same big 4 qt or larger bowl. Add reserved celery and onion mixture.
  • In a small bowl, beat the 6 eggs until frothy. Then, add to cornbread, shredded chicken, and cooked celery mixture. Stir minimally. Add 6-8 cups of chicken stock 1 cup at a time until the texture is still bready yet pourable. Take your time because the cornbread will absorb liquid over the course of a few minutes. If you overdo the liquid, add some of your torn whole wheat bread. Nana says: "You want it more moist than dry, ok?" Don't mix until you've let it sit for a few minutes.
  • Preheat oven to 400°F.
  • After allowing the cornbread to set for 2 minutes, mix to combine, but don't over-handle.
  • Pour (if you can't pour you need more liquid)into your greased and disposable or foil lined glass dishes and bake for 45 minutes or until set and browned on top. If edges are done to a couple of inches in, then the center is probably done enough too.

THE BEST TURKEY DRESSING (STUFFING)

The Best Turkey Dressing (Stuffing) image

This dressing is adapted from "The Silver Palate Cookbook. It's rich and is always a big hit. No other bread is needed on the Thanksgiving table. Cook your turkey about 12-15 minutes per lb. at 325 degrees, basting frequently.

Provided by Alan in SW Florida

Categories     Thanksgiving

Time 1h30m

Yield 12-14 serving(s)

Number Of Ingredients 16

6 tablespoons butter
2 1/2 cups onions, finely chopped
6 tablespoons butter
3 tart apples, peeled, cored and chopped
1 lb pork sausage
3 cups cornbread, coarsely crumbled
3 cups whole wheat bread, coarsely crumbled
3 cups sourdough bread or 3 cups French bread, coarsely crumbled
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
salt, to taste
black pepper, freshly ground, to taste
1/2 cup fresh parsley, chopped
1 cup pecans, chopped
2 eggs, lightly beaten
chicken stock or turkey broth, to moisten

Steps:

  • Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
  • Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.
