NANA'S BEEF STROGANOFF
This is a delicious Stroganoff that my Nana made all the time. My husband's favorite meal is Stroganoff, and before we met he never had homemade Stroganoff sauce. Once my mom made this for him, he has never eaten any other! Serve over rice or egg noodles.

Steps:
- Shake 1 tablespoon flour with salt in a large, resealable plastic bag until combined; add beef and shake to coat.
- Melt 2 tablespoons butter in a skillet over medium-high heat. Brown beef in the hot butter, about 3 minutes per side. Stir mushrooms, onion, and garlic into beef; cook and stir until garlic is fragrant, 3 to 4 minutes. Transfer beef and vegetables to a bowl, leaving drippings in skillet.
- Melt 2 more tablespoons butter in skillet over medium heat. Cook and stir 3 tablespoons flour in the hot butter until smooth; stir tomato paste into flour mixture. Whisk beef stock into mixture and cook, stirring constantly, until sauce is thickened and bubbling, about 5 minutes.
- Return beef and vegetables to skillet and stir to coat with sauce. Reduce heat to very low and simmer until beef is tender, 2 to 3 hours. The longer it cooks, the more tender the meat will be. Just before serving, stir sour cream and white wine into beef mixture and heat through. Do not boil.

NANA'S BEEF TIPS WITH NOODLES
I made this for supper one night and my grandson really enjoyed it. Whenever he comes over now he request me to cook this for him. He's a picky eater so I am happy to make something that he really likes.

- 1. Sprinkle stew meat with season salt; coat with flour.
- 2. Heat oil in large saucepan.
- 3. Brown stew meat on all sides in hot oil.
- 4. Add water (3-4 cups) and bring to a boil. Boil on medium/high heat for about 45 minutes. Add water as needed. Cover and let stand while preparing noodles per package directions.
- 5. Remove stew meat and broth and place in bowl. GRAVY: In the saucepan that the meat was cooked in melt butter then add flour. Stir together about 2-3 minutes until browned. Add season salt and black pepper.
- 6. Add stew meat with broth and canned beef broth to flour mixture in saucepan. Simmer until thickened, stirring occasionally. Add paprika.
- 7. Serve over cooked noodles, rice or mashed potatoes.
SIMPLE BEEF TIPS AND NOODLES
This is one of my family favorites; it's a great starter recipe for using a pressure cooker. It is wonderful any time of year, but we like it best in the cooler weather. Very quick and easy to make after a day at work. It can also be made in a slow cooker.

- Heat oil in the pressure cooker over medium-high heat and stir in beef cubes. Cook until the beef is browned on all sides; remove beef and set it aside. Drain and discard excess grease.
- Lower the heat to medium and add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Stir in garlic and mushrooms and continue to cook about 5 minutes more, until garlic is fragrant but not brown.
- Pour in beef stock, beef stew meat, and any accumulated drippings; season with salt and pepper. Return to high heat, seal the lid, and bring to full pressure.
- Reduce the heat to low, maintaining full pressure, and cook for 20 minutes.
- While the stew is cooking, bring a large pot of lightly salted water to a boil. Stir in noodles and cook until tender, stirring often, about 8 minutes. Drain and set aside.
- Remove the pressure cooker from the heat and allow the pressure to drop naturally. Dissolve cornstarch into 1/2 cup of cold water. When the pressure has dropped, remove the lid and whisk in the cornstarch mixture. Bring the beef and mushrooms back to a boil and cook, stirring constantly, for 2 minutes or until the sauce has thickened. Pour the beef over the noodles and serve.

BEEF TIPS AND NOODLES
This is a great dish that's very easy to make with just a few ingredients. Great with rolls of any type. I got this recipe from my mom years ago and it is a family favorite.

- Preheat oven to 400 degrees F (200 degrees C).
- In a 13x9 inch casserole dish, combine the mushroom and beef onion soups, canned mushrooms and water. Mix thoroughly and add beef tips. Turn to coat well.
- Bake in a preheated oven for 1 hour.
- While beef tips are baking, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Serve beef tips and sauce over noodles.

- Sprinkle beef tips with salt and pepper. Coat with flour. Brown in heavy skillet over high heat in small amount of oil.
- Reduce heat and add bouillon. Add Worcestershire sauce. Cover and simmer until beef tips are tender, about 1 hour. If necessary, add add water or broth to maintain 2 C of broth at the end of cooking period.
- Stir 2 Tbsp flour into small amount of water and add to broth. Cook until thickened.
- Cook noodles according to package directions; drain. Serve hot noodles covered with beef and gravy.

- 1. In a large stock pot, put on enough water to cook the pasta. Add a tablespoon of salt to the water.
- 2. Place a heavy frying pan, preferably cast iron, over medium-high heat. Add the neutral oil and beef. Add salt and pepper to the beef (be gentle with the salt). Brown the meat on all four sides, this will take roughly 6-8 minutes. We're looking for a nice medium temp on the steak, so be careful not to overcook it. Remove and set aside on a cooling rack.
- 3. In the same pan, add 2 tablespoons of the butter along with the shallots, carrots and garlic. Cook until soft, about 5-8 minutes. Then add in the flour, mixing to fully incorporate, then cook for 2-3 minutes. Then add the beef stock, soy sauce and mustard. Bring to a simmer then reduce the heat to medium.
- 4. While the sauce is reducing and the pasta water is boiling, cook the pasta according to the directions on the package for "al dente." Strain, add remaining butter and stir.

- Place onion and 1 1/2 tablespoons of the butter in a large skillet over medium heat. Add the salt and sugar and stir constantly for about 25 minutes until browned. Add a splash of the red wine to the pan to deglaze, scrapping off any browned bits from the bottom. Spoon onto a plate and set aside. Wipe out the pan.
- While the onions are cooking, season the beef with the salt and the pepper. Toss in the flour. Add the vegetable oil to the pan after the onions are done cooking over medium-high heat. Add the meat and press down. Allow to brown and flip, about 4 minutes. Continue to cook until about 3/4 of the way done. Transfer to a plate and set aside.

- While the onions and the flour cooks, mix together the steak sauce and beef stock in a small bowl.
