This is a nice change from pecan pie. It is my husband's favorite. Very sweet and rich. If you use a deep dish pie crust, use 1 cup pecans. For a smaller pie crust use 1/2 cup.

1 (9 inch) unbaked pie crust
½ cup butter, melted
3 eggs
2 teaspoons lemon juice
1 teaspoon vanilla extract
1 ½ cups white sugar
3 ½ ounces flaked coconut
½ cup chopped pecans, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie dish.
  • Beat butter, eggs, lemon juice, and vanilla extract together in a bowl; beat in sugar until smooth. Fold coconut and pecans into butter mixture; pour into pie crust.
  • Bake in the preheated oven until pie is set in the middle, 45 to 50 minutes.

Someone brought this pie to my nephew's wedding, and I just had to get the recipe. It's the best I've ever tasted.

Yield 6-8 servings.

Number Of Ingredients 9

3 eggs
1 cup sugar
1/2 cup light corn syrup
3 tablespoons butter, melted
3 teaspoons vanilla extract
Pinch salt
1-1/2 cups pecan halves
1-1/2 cups sweetened shredded coconut
1 unbaked pastry shell (9 inches)

Steps:

  • In a large bowl, beat eggs. Beat in the sugar, corn syrup, butter, vanilla and salt. Stir in pecans and coconut. Pour into pastry shell. , Make a domed cover with foil. Bake at 350° for 35 minutes. Uncover; bake 10-15 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack.

My Grandmother (Nana) made this pie and is the best ever. She lived with 8 or 10 pecan trees in her yard. She never cook with a recipe but my mother tooked some of her recipes down. May God Bless. Buzz

1 cup(s) brown karo suryp
1 cup(s) white surgar
2 tablespoon(s) butter or oleo
pinch(es) salt
2 - eggs beaten
1 teaspoon(s) vanilla ( no imatation)
1 cup(s) broken pecans

Steps:

  • Preheat oven 375 Beat eggs with surgar & salt. Add rest of ingredients. Pour into unbaked pieshell.
  • Bake in 375 oven for 30 minutes. Turn over temp down to 300 and bake for 30 more minutes. Note: Nana would put pecan halves on top before she baked the pie.

2 eggs
1 tablespoon cornstarch
1 1/2 cups sweetened condensed milk
1/2 cup unsalted butter, at room temperature
1/2 teaspoon vanilla
4 ounces shredded unsweetened coconut
1 unbaked pie shell (9 inch)

Steps:

  • Preheat oven to 350 degrees. In a large bowl, beat the eggs and sugar together. Add the cornstarch, milk, butter, and vanilla and blend well. Add the coconut and stir until incorporated. Pour filling into pie shell.
  • Bake until firm, about 40-45 minutes.
  • Cool before cutting.

This recipe is one from my mother's cookbook. Everybody loves it. The lemon flavoring gives it a different twist.

2 cups sugar
3 cups evaporated milk
1 pinch salt
4 eggs
2 teaspoons cornstarch
2 -3 cups coconut
1 teaspoon lemon flavoring
1/4-1/2 cup margarine

Steps:

  • Preheat oven to 350 degrees. Mix the dry ingredients together first - sugar, salt, constarch - stir well. Pour the evaporated milk into the dry ingredients and then add eggs and lemon flavoring. Mix well. Melt the margarine and then pour into the mixture and stir. Then add coconut and stir. Pour into unbaked pie shells and bake for 30 minutes or until set.
