AUTHENTIC MEXICAN RICE RECIPE

Steps:
- Add the rice to a pot with the olive oil and cook over medium-high heat for about 5 minutes, moving constantly until the rice is slightly browned.
- Add salt to taste and cook for about 1 more minute.
- Add the tomato, garlic, onion and oregano to a blender and blend together.
- Add the above mixture to the rice and stir well. Let cook over medium-high heat for 2-3 minutes, moving the rice constantly.
- Add the Chicken Stock and reduce the temperature to medium-low. Cover and let cook until the water evaporates (about 15-20 minutes). If the rice is not soft, add an additional cup of chicken stock or water and continue cooking until the rice is soft.

MEXICAN RICE
Blending all the ingredients allows room for great variation in vegetables. Jalapeños or other chilies can be added for heat and character. Water can take the place of chicken stock for vegetarians. Canned tomatoes offer a deep flavor, but it is a good way to use up fresh tomatoes that are on the brink, as well.

Steps:
- Blend vegetables, salt and stock or water together into a mostly smooth purée (a few small pieces of onion and pepper are fine).
- In a large skillet with a tightfitting lid, heat oil. Add rice and toast until it absorbs most of the oil and begins to smell nutty.
- Add blended ingredients, stir gently with a wooden spoon to prevent breaking up the rice too much and bring to a light boil. Cover, reduce heat to the lowest setting possible and cook undisturbed for 17 minutes. Let sit for another 10 minutes.

MY OWN MEXICAN RICE
I kind of made this up from all different recipes, and it met our needs...it's light and and the aroma from the basil and rosemary is "outta-sight! A great side dish for Mexican/Southwestern meals (or Vegans!)

Steps:
- Sauté green peppers, onion, and garlic in oil in a frying pan or electric skillet with rosemary and basil until vegetables are tender.
- Stir in rice, tomato, salt, pepper and picante to taste- cook and stir for about 5 minutes.
- Add water; cover and cook on low till rice is done, stirring occasionally.
MEXICAN RICE
this is a variation of my grandmother's mexican rice. Just as a side note, after you remove the rice from the heat, keep it covered for the whole 15 minutes. The residual heat finishes cooking the rice.

Steps:
- heat the oil in a sauce pan over medium heat. Add onions and garlic. Saute until soft.
- Add rice to the pan and coat thouroughly with oil.
- Add cilantro, tomato sauce, rotel, and chicken broth. Season with salt and pepper to personal taste.
- Raise heat to high and bring to a boil.
- Reduce heat, cover and simmer for 10 minutes.
- Remove from heat and, keeping covered, set aside for 15 minutes.
- Uncover, fluff rice, serve, and enjoy.

MY NEW MEXICAN RICE RECIPE
I have been working on this rice recipe for months. I love my Spicy Mexican Rice recipe, but I have been longing for one that is not so "Hot". This is happily the result of my tweeking the recipe until I got just what I wanted.

Steps:
- Mix first 6 ingredients in a rice cooker. Stir occassionally to keep from sticking.
- While rice is cooking, fry 4 slices of bacon, add chopped onion to bacon grease and cook until tender.
- Add corn and chopped cilantro and remove from heat.
- Add this mixture to the cooking rice.

- In a large, deep skillet, heat the olive oil until shimmering. Add the onion, tomatillo, garlic and a generous pinch of salt. Cook over moderate heat, stirring occasionally, until softened and just starting to brown, about 7 minutes. Stir in the cumin and cook until fragrant, about 1 minute. Add the tomatoes, chiles and stock and bring to a boil. Simmer over moderate heat, stirring occasionally, until the liquid is reduced by half, about 20 minutes. Transfer the sofrito to a blender or food processor and let cool slightly, then puree until smooth.
- Wipe out the skillet and cook the sofrito in it over moderate heat, stirring, until hot, about 5 minutes. Gradually fold in the rice and cook just until it is hot and coated in the sofrito, about 5 minutes. Season with salt, garnish with cilantro and serve.
