I love serving this satisfying corn bread pudding recipe with shrimp or other seafood. I actually adapted the dish from my mom's recipe, and it always reminds me of her. -Bob Gebhardt, Wausau, Wisconsin

Number Of Ingredients 7

2 large eggs
1 cup sour cream
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1/2 cup butter, melted
1 package (8-1/2 ounces) cornbread/muffin mix
1/4 teaspoon paprika

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in cornbread mix just until blended. Pour into a greased 3-qt. baking dish. Sprinkle with paprika. , Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve warm.

5 eggs
⅓ cup butter, melted
¼ cup white sugar
½ cup milk
4 tablespoons cornstarch
1 (14 ounce) can corn kernels, drained
2 (14.75 ounce) cans cream-style corn

Steps:

  • Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
  • Bake for 1 hour.

It's amazing to know that this corn pudding originally appeared in a Kansas cookbook dated 1854! This time-tested recipe is wonderful, and I've served it often to my family and guests. It's also a recipe I've shared with many of my friends who've requested it.

3 large eggs
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup whole milk
1 can (16-1/2 ounces) cream-style corn

Steps:

  • In a bowl, beat eggs. Add butter, flour, sugar and salt; mix well. Stir in milk and corn. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 35 minutes or until a knife inserted in the center comes out clean.

Mom's Corn Pudding image

I know, another corn pudding recipe, but this one's a bit different in the ingredients and sugar content. This recipe was handed down to me from my mom who grew up in the midwest. It is still a bit sweet, but not overly so, this recipe lends itself to tweaking. I expect to be tuning it up a bit by using fresh (instead of canned) ingredients and seeing where it goes.

This is a dish my mom made only for Thanksgiving and Christmas. I don't know where she got the recipe because she never own a cookbook and the only written recipe she had was for BBQ chicken. I use yellow cream corn because you can't always find the white.

1 (16 1/2 ounce) can white creamed corn
1 tablespoon sugar
1 cup milk
2 teaspoons salt
3 tablespoons butter, softened
3 eggs, beaten

Steps:

  • Preheat oven to 325°F.
  • Mix flour and corn.
  • Then add sugar, milk, salt and butter.
  • Add eggs and mix well.
  • Pour corn mixture into a greased 1 quart casserole dish.
  • Place casserole into a larger pan and fill the larger pan half way up with hot water.
  • Bake for 1 hour in the 325°F oven.

This is a recipe my grandmother uses to make corn pudding. Prior to tasting this recipe, I'd never eaten corn pudding before. Now it's a must during every family meal gathering.

1 (15 ounce) can cream-style corn
1 (15 ounce) can whole kernel sweet corn (drained)
6 large eggs
1 tablespoon vanilla extract
2 cups sweetened condensed milk
3/4 cup sugar
1/4 teaspoon nutmeg
2 1/2 tablespoons flour
2 tablespoons butter (melted)

Steps:

  • Preheat oven to 350 degrees F.
  • Let cream corn sit open for a minute, then skim clear liquid off top.
  • Spray 9 X 13 inch baking pan with non-stick vegetable spray; set aside.
  • Stir sugar, flour and nutmeg together in a medium bowl with a wire whisk.
  • Add eggs, beat well.
  • Beat in milk and vanilla, blending well.
  • Stir in corn and pour into prepared pan.
  • Drizzle butter evenly over the top.
  • Bake for about 1 hour; the center should"jiggle" when pan is gently shaken.
