Number Of Ingredients 22

3 pounds ground beef (I used ground round)
2 pounds sausage
3 tablespoons olive oil
2 large yellow onions, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine or stock (your choice)
Two 28-ounce cans crushed tomatoes
One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

9 roma tomatoes
1 lb lean ground beef
1 lb ground pork sausage
1 teaspoon salt and pepper, combined
1/2 lb smoked sausage, diced
1 (4 ounce) package sliced mushrooms, sliced
1 1/2 large green bell peppers, diced
1 large Spanish onion, diced
2 tablespoons Italian spices
1/4 teaspoon cayenne pepper
1 tablespoon black pepper
1 tablespoon salt, divided
1/4 teaspoon ground mustard
2 tablespoons extra virgin olive oil, divided
2 ounces condensed milk
1 teaspoon lime juice or 1 teaspoon lemon juice

Steps:

  • In a 10 quart stock pot, combine 5 cups water with a 1/2 tablespoon salt. Place tomatoes in pot and bring to a boil for 10 minutes.
  • While tomatoes are cooking, in a cast iron skillet (or vessel of choice) combine ground beef and pork. Season with salt and pepper. Cook until browned through. Keep grease in pan while draining meat. Set meat off to the side until later.
  • Cook smoked sausage in pan from ground meat to enhance flavor of meat. Place to the side.
  • Drain water off tomatoes and run under cold water for 2 minutes. Gently peel the skin off tomatoes and place in stock pot with 1 tablespoon EVOO and condensed milk. Place on simmer.
  • Season tomatoes with remaining salt, italian spices, mustard and combine with cooked meat and stir until tomatoes and meat become uniform. Tomatoes will have a rough appearance at first.
  • Dice peppers and onion into 1/4 inch cubes and combine with cayenne pepper. Saute in meat pan with remaining EVOO untill sweating has occurred. Add the mushrooms and cook until sweating is complete on peppers.
  • Combine with sauce and add lime/lemon juice.
  • Cook for 2 hours while stirring and seasoning to taste.

This is a recipe that you can throw together in 10 minutes and then go and do whatever you want for 1 hour. It is not the thickest sauce, but it is delicious.

1 tablespoon olive oil
1 onion, chopped
1 ¼ pounds ground beef
2 tablespoons Italian seasoning
2 (15 ounce) cans tomato sauce
2 (15 ounce) cans fire-roasted diced tomatoes
1 teaspoon salt
1 splash red wine

Steps:

  • Heat olive oil in a large skillet over medium-high heat; saute onion in hot oil until softened, about 5 minutes. Season onion with Italian seasoning; continue to saute until the herbs are fragrant, about 3 minutes more.
  • Break beef into small pieces and add to the skillet; cook and stir until browned and crumbly, 5 to 7 minutes.
  • Stir tomato sauce and diced tomatoes into the beef mixture; season with salt, place a lid on the skillet, reduce heat to low, and cook at a simmer for 1 hour.
  • Splash wine over the mixture, stir, and simmer until thickened, about 20 minutes.

  • Heat the olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook for 3 minutes, breaking it as you go, until no longer pink.
  • Add the onion and bell pepper and cook for another 3 minutes until the onion softens. Stir in the garlic, tomato paste, Italian seasoning, sugar, salt, pepper, and red wine. Cook for an additional 3 to 5 minutes or until the wine cooked off.
  • Add the crushed tomatoes, tomato sauce and bay leaves to the pot, stir and bring to a boil. Reduce the heat to a medium-low. Cover the pot and simmer for 2 to 3 hours, stirring occasionally. If your sauce is too thick add some of the beef or chicken broth to thin it out, or even pasta water.
