DAD'S FAVORITE PEANUT BUTTER COOKIES
My Dad's sister gave me this recipe for killer peanut butter cookies.

Steps:
- Cream together the shortening, peanut butter and sugars. Beat in egg. Combine the flour, baking soda, baking powder and salt; gradually stir into the peanut butter mixture. Cover and refrigerate dough for at least one hour.
- Preheat oven to 375 degrees F (190 degrees C). Make small balls of dough. Flatten with fork dipped in flour to form cross-wise pattern.
- Bake for 10-12 minutes in the preheated oven, or until just set. Remove from baking sheets to cool on wire racks.

- Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
- In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
- Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

- Preheat oven to 350°F.
- Whisk together the dry ingredients in a medium bowl. In a large bowl, cream together the butter, peanut butter, and brown sugars. Stir in the egg and vanilla. Add the flour in thirds and stir until smooth. Fold in the peanut butter chips. Roll the mixture into golf ball-sized balls (about 1 1/2 tablespoons). At this point you can roll them in granulated sugar or you can press each cookie down with the tines of a fork. Either way, bake for 10 minutes, in a nonstick baking pan, rotating the pan halfway through baking time. Cool the cookies on a rack before serving.
MY DAD'S PEANUT BUTTER COOKIES
When I was growing up, my dad would bake cookies and allow my sister and I to "help". I don't know where my dad got the recipe to begin with, but he tweaked it to perfection. These are the best peanut butter cookies we have ever eaten. Our entire family loves them. Hope you do too.

- Preheat oven to 350. Melt Butter, beat together with the sugars, vanilla, peanut butter and eggs. In a separate bowl, combine the flour, oats and baking soda. Slowly stir dry mixture into butter mixture. Mix well. Drop by teaspoons onto greased cookie sheet. Bake at 350 for 15 minuets. Cool.
- ** Be very careful while cooking. Watch them constantly after the first 12 minuets.
