Provided by Rissa Lou

Categories     Beverages

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 13

6 cups water
1 tablespoon loose black tea leaves, not flavored (optional)
2 inches piece fresh ginger
1 sprig of fresh mint
2 cinnamon sticks
1 star anise, pod
4 green cardamom pods
1 teaspoon fennel seed
1/2 a vanilla beans or 1/2 vanilla extract
1 teaspoon dried lavender
1 teaspoon whole cloves
honey
milk or cream

Steps:

  • In a kettle bring your water to a boil.
  • Cut off your chunk of ginger, peel it and smash it with a mallet.
  • Place a tea basket in your tea pot and fill it with all the ingredients except the honey and milk.
  • Pour the boiling water over the herbal mixture and allow to steep for 3-5 minutes. If you don't want the caffeine omit the black tea leaves but then you will need to let it steep for 5-7 minutes.
  • In the bottom of each mug put about 1 good table spoon of honey and about a half inch of milk or cream. Stir vigorously to dissolve the honey in the milk.
  • Pour the tea into the mixture and enjoy!
  • Additional Notes:.
  • If you do not have a tea pot you can boil your water in a saucepan and drop the herbs into the pan to steep. Pour and strain to serve.
  • Also, the honey and milk amounts can be adjusted according to your individual taste.
  • Smashing the ginger helps it to better release its flavor in the tea. This is a great alternative to coffee after a meal and goes great with cakes and cookies.

  • Masala Chai : This is my favourite. Though I am not much of a chai person but my husband loves chai. And made masala Chai after my wedding for the first time.
  • Tulsi Chai : I started making this chai for my father-in-law. He doesn't milk and sugar tea.
  • Tandoori Chai : I had my first tandoori Chai at Pune. And I liked it. So I started making it. For this, you need to have a clay pot or cup (which you usually get at roadaide tea stalls).
  • Leaf Chai : I have seen my father having this since my childhood. The flavor & aroma is really strong. Boil water and add little milk (quarter cup milk for two cups of water), sugar and when it comes to a boil, add tea leaves and cover it with a lid.
  • Almond & Milk Tea : I craved for chai during my second pregnancy. So I tried this chai recipe and it came out really well and satiate my chai cravings.
  • Lemon Tea : My husband loves lemon tea and I never made a very good cup of lemon tea. My husband makes amazing lemon tea. And he taught me how to make it.
  • Brown Sugar Tea : I got this recipe from one aunty in the train. Boil water, enough to pre-heat your mug or kettle. Add hot water to your empty cup and add tea bag.
  • Cinnamon Tea Recipe : Warm 1 cup of milk and pour it in a cup. Add tea bag. Add the cinnamon powder and then honey. Mix everything well, strain the tea and sip.
  • Decadent Milk Tea : Boil water, add tea leaves and let it simmer for 2-3 minutes. Strain the tea in a cup, add brown sugar until dissolved and then add little milk & stir.
  • Chocolate Tea : This I tried because of my love for chocolates. Heat milk in a pan, add tea powder, sugar, sweetened cocoa powder. Let it boil. And then strain it and sprinkle some more cocoa powder on the top and sip your chocolate Tea.
