Spaghetti with Garlic Mussels in Black Olive Sauce image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 23

1/2 cup white wine or chicken broth
1 small shallot, chopped
1/2 cup heavy cream
1/2 cup pitted kalamata olives
1/2 cup pitted oil-cured olives
2 tablespoons capers
1 tablespoon chopped fresh basil
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon anchovy paste
2 cloves garlic
Salt
1 pound spaghetti
2 tablespoons olive oil
1 clove garlic, chopped
Pinch smoked paprika
Pinch crushed red pepper flakes
1 pound mussels, cleaned
1/2 cup white wine or chicken broth
Juice of 1/2 lemon
1 tablespoon butter
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh oregano

Steps:

  • For the sauce: In a saucepan set over medium heat cook the wine and shallots until the liquid reduces by half. Add the cream and simmer until the sauce thickens. Remove from the heat.
  • Place the kalamata olives, oil-cured olives, basil, lemon juice, olive oil, anchovy paste and garlic in the bowl of a food processor. Pulse until just smooth, but still a little chunky.
  • Combine the cream sauce and olive sauce.
  • For the mussels: Bring a pot of salted water to a boil.
  • Meanwhile, in a separate pot, cook the garlic in the olive oil until just brown. Add the paprika and pepper flakes. Add the mussels. Add the wine and cook to reduce by half. Add the lemon juice, then cover and cook until the mussels open. Throw away any mussels that don't open. Reserve the mussels and cooking liquid for later use.
  • While the mussels cook, boil the pasta to al dente. Drain the pasta, reserving 1 cup of the cooking liquid. Stir in the butter, parsley and oregano. Toss the spaghetti with the olive sauce, and then spoon some mussels on top with some of the cooking liquid and serve.

MUSSELS IN GREEN CURRY SAUCE

Mussels in Green Curry Sauce image

Is there anything more comforting than a bowl of mussels with a warm, luscious sauce? The mussels come together in no time, but don't lack any flavor in this delicious recipe. That's because as the mussels cook, they release their own liquid, which is packed with flavor from the ocean. Don't forget the bread! You'll want to soak up all of this curry sauce.

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

2 pounds mussels
8 baguette slices, cut on an angle
2 tablespoons coconut oil
1 tablespoon minced fresh ginger
1 cup fresh cilantro leaves, plus 2 tablespoons finely chopped stems
2 heads baby bok choy, white and green parts separated, roughly chopped
2 tablespoons green curry paste
Grated zest of 1 lime, plus lime wedges for serving
2/3 cup coconut milk
4 teaspoons fish sauce
1 teaspoon sugar

Steps:

  • Remove any hairy beards from the mussels. Discard any mussels that are open and don't close after being tapped. Add the mussels to a medium bowl and cover with cold water; stir with your hand to remove any sand. Drain and set aside.
  • Preheat the broiler. Place the baguette slices on a baking sheet and broil until golden brown, 2 to 3 minutes.
  • Meanwhile, heat the coconut oil in a large pot or Dutch oven over medium-high heat. Stir in the ginger, cilantro stems and the white parts of the bok choy. Cook until slightly softened, 3 to 5 minutes. Add the curry paste and lime zest. Stir to coat the vegetables, about 2 minutes. Add the coconut milk, fish sauce, sugar and 1/2 cup water. Bring to a simmer and add the mussels. Cover and cook until the mussels open, 5 to 7 minutes (discard any unopened mussels). Uncover and reduce the heat to low. Add the green parts of the bok choy and half of the cilantro leaves. Toss to wilt slightly.
  • Divide the mussels and sauce among shallow bowls and top with the remaining cilantro leaves. Serve with lime wedges and the toasted baguette slices.

Provided by David Tanis

Categories     easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil, plus more for toasts
2 garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
Pinch of crushed red pepper
4 pounds mussels, cleaned
1/4 cup white wine or water
1 baguette, split lengthwise, then cut crosswise in half
1 cup roughly chopped parsley

Steps:

  • Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
  • Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
  • Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.

Yield Makes 4 servings

Number Of Ingredients 15

2 cups chicken stock or canned low-salt chicken broth
1/4 teaspoon saffron threads
2 tablespoons extra-virgin olive oil
1/4 cup chopped shallots
1 cup arborio rice or medium-grain white rice
4 garlic cloves, minced
1/2 cup dry white wine
1 cup bottled clam juice
20 mussels, scrubbed, debearded

Lemon wedges
Green Olive Relish
