2 leeks (cleaned and very finely sliced)
3 garlic cloves (finely chopped)
60 ml olive oil
2 tablespoons butter
125 ml marsala
125 ml white wine
180 ml single cream
1 kg mussels, in shell
4 tablespoons parsley (chopped)
salt and pepper
crusty bread

Steps:

  • Melt butter in a pan, add olive oil. Saute the leeks and garlic for about 15 minutes on a very low heat until sweet and tender. Do not brown.
  • Add the marsala and wine and increase the heat, boil for a few minutes until the smell of alcohol disappears.
  • Add the cream and bring back to the boil.now add the mussels and boil until opened, remove the ones that don't open.
  • Remove from heat, add the parsley and seasoning. Serve with crusty bread.

Fennel and tomatoes are common pairings with mussels, but garam masala is the wild card here, contributing an unexpected depth of curry flavor to the coconut-milk broth and tender mussels.

1/4 cup extra-virgin olive oil
1 medium onion, chopped
1 fennel bulb, trimmed and finely chopped, reserving fronds
4 garlic cloves, chopped
1 teaspoon garam masala (Indian spice mixture)
1/4 teaspoon hot red-pepper flakes
1 (15-ounce) can diced tomatoes in juice
2/3 cup well-stirred canned unsweetened coconut milk
4 pounds cultivated mussels, scrubbed
1 cup basil leaves, finely chopped
Accompaniment: naan or crusty bread

Steps:

  • Heat oil in an 8-quart heavy pot over medium-high heat until it shimmers. Cook onion, fennel, garlic, garam masala, red-pepper flakes, and 1/4 teaspoon each of salt and pepper, stirring occasionally, until onion and fennel are tender, 12 to 15 minutes.
  • Add tomatoes with juice and coconut milk and bring just to a boil. Add mussels and cook over medium-high heat, covered, stirring occasionally, just until mussels open wide, 8 to 10 minutes. (Discard any that remain unopened after 10 minutes.)
  • Chop about 2 tablespoons reserved fennel fronds and stir into mussels along with basil.

2 pounds fresh mussels, scrubbed and beards removed
1 jalapeno pepper, seeded and chopped
2 tablespoons olive oil
3 garlic cloves, minced
1 bottle (8 ounces) clam juice
1/2 cup white wine or additional clam juice
1/3 cup chopped sweet red pepper
3 green onions, sliced
1/2 teaspoon dried oregano
1 bay leaf
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
French bread baguette, sliced, optional

Steps:

  • Tap mussels; discard any that do not close. Set aside. In a large skillet, saute jalapeno in oil until tender. Add garlic; cook 1 minute longer. Stir in the clam juice, wine, red pepper, green onions, oregano and bay leaf., Bring to a boil. Reduce heat; add mussels. Cover and simmer for 5-6 minutes or until mussels open. Discard bay leaf and any unopened mussels. Sprinkle with parsley, salt and pepper. Serve with baguette slices if desired.
