It's a simple but delightful cream of mushroom sauce served over pasta. This can be used as a side dish or main dish. I came up with it while pregnant and it satisfied my cravings.

2 cups uncooked macaroni pasta
1 (10.75 ounce) can condensed cream of mushroom soup
½ (10.75 ounce) can milk
½ (10.75 ounce) can water
¼ cup sliced fresh mushrooms
salt and pepper to taste

Steps:

  • Bring a saucepan of lightly salted water to a boil. Add pasta, and cook until al dente, about 8 minutes. Drain.
  • In a separate saucepan, stir together the cream of mushroom soup, milk, water and mushrooms. Bring to a simmer, and cook until mushrooms are tender. Mix with cooked macaroni, and serve.

Mushrooms a la Grecque is a French dish in which mushrooms are prepared in a Greek style with lemon juice, olive oil, and Greek herbs and spices. This recipe is adapted from The Food of France

Number Of Ingredients 15

2 tomatoes, peeled and coarsely chopped
1 1/3 cups extra virgin olive oil
1 1/4 cups dry vermouth or 1 1/4 cups dry white wine
2 shallots, diced
1 clove garlic, minced
6 coriander seeds, crushed
1 bay leaf
1 sprig thyme
1 cup mineral water
1 lb button mushrooms or 1 lb white mushroom
2 teaspoons fresh lemon juice
1 pinch sugar
sea salt
black pepper
1 tablespoon chopped parsley

Steps:

  • Wash the mushrooms and set aside.
  • Put the tomatoes, olive oil, vermouth or white wine, shallots, garlic, coriander seeds, bay leaf, thyme, and water in a saucepan and simmer for 10 minutes.
  • Then put in the mushrooms, and simmer for 10 more minutes, uncovered.
  • Remove the mushrooms and place in a serving dish.
  • Boil the liquid until there is only 1 cup.
  • Take out the bay leaf and thyme.
  • Add the lemon juice, pinch of sugar, and a few grinds of sea salt and pepper to taste.
  • Pour liquid over mushrooms; garnish with chopped parsley.
  • Serve warm, or refrigerate and then serve chilled.
  • *Youcan use a variety of mushrooms in place of the white mushrooms: Baby Portobellos, Crimini, Shitake.

1 lb cultivated white mushroom
3 slices thick bacon, diced
1 medium white onion, finely chopped
2 -4 jalapeno chiles, stemmed,seeded,and finely chopped
10 fresh cilantro stems, finely chopped
4 ounces manchego cheese, shredded (about 1 cup)

Steps:

  • Wipe the mushrooms clean with a slightly damp cloth or paper towels; trim the bottoms of the stems and cut the mushrooms lengthwise into slices.
  • Set aside.
  • In a medium heavy skillet, fry the bacon over medium-high heat until crisp but not overbrowned.
  • Lift out the bacon onto paper towels, letting as much fat as possible drain back into the pan.
  • Pour the bacon fat into a large wide skillet and heat over medium-high heat until rippling.
  • Add the onion and cook, stirring occasionally, until translucent, about 3 minutes.
  • Add the mushrooms, chiles, and cilantro and cook, stirring, for 10 minutes, or until the juices released by the mushrooms have nearly evaporated.
  • Remove from the heat.
  • Preheat the broiler.
  • Transfer the mushrooms to a wide broilerproof baking dish and scatter the bacon and the shredded cheese over the top.
  • Run under the broiler for a few minutes, until the cheese is melted and bubbling.
  • Serve at once.
