Use this great mince recipe as a base for bolognese or cottage pie - freeze a batch ready to whip out for last-minute dinners

2 tbsp olive oil
1kg lean minced beef
2 back bacon rashers, chopped
2 onions , finely chopped
2 garlic cloves , finely chopped
150ml red wine
500ml beef stock (from a cube is fine)
leaves from 3 sprigs thyme

Steps:

  • Heat the olive oil in a non-stick frying pan. When hot, tip in the mince and cook for 10 mins until browned all over, breaking up any lumps with the back of a spoon. Tip onto a plate. You may need to do this in batches.
  • Add the bacon to the pan with the onions and garlic, then cook for 7 mins until the bacon is cooked and onion softened. Return the mince to the pan, then pour in the red wine, stock and thyme leaves. Bring to a boil, then simmer for 30 mins until the mince is tender and the sauce has reduced down. Once cool, can be frozen for up to 3 months.

EASY CHRISTMAS MINCE TARTS



Easy Christmas Mince Tarts image

Easy recipe using store bought ingredients pepped up with a little brandy and apple. Using ready-rolled frozen pastry makes these tarts very quick to make. If you don't have a tart tray with shallow cups, use a muffin tray but cut the circles of pastry just slightly larger than the base of the cups so that it makes a shallow tart. I have assumed that the tarts will be cooked in three batches but if you have more than one tray, this could be reduced.

1 apple
400 g fruit mincemeat
3 tablespoons brandy
4 sheets shortcrust pastry (sweet)
2 sheets puff pastry
1/2 teaspoon golden syrup
1 tablespoon water

Steps:

  • Quarter and core the apple.
  • Grate the apple without peeling.
  • Add the grated apple and brandy to the fruit mincemeat.
  • Cut out 36 circles from the shortcrust pastry to line the tray.
  • Add a teaspoon of the fruit mixture to each tart.
  • Cut out 36 Christmas shapes from the puff pastry. I have star, heart, tree and bell shapes that I use for this recipe.
  • Put a puff pastry shape on top of each tart.
  • Mix together the golden syrup and water and use it to brush each puff pastry. This browns the puff pastry.
  • Bake for 15 minutes in an oven set to 200°C.
  • Serve warm with whipped cream or icecream or cool on a rack and dust with icing sugar.

100 g apples, cored,finely chopped
25 g butter
75 g raisins
75 g sultanas
75 g currants
50 g raw sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mixed spice
1 orange, juice of
1 orange, zest of
1 lemon, juice of
1 lemon, zest of
125 g sliced almonds
30 ml brandy
100 g butter
50 g raw sugar
175 wholemeal self-rising flour
2 eggs
100 g raw sugar
5 ml vanilla essence
175 g desiccated coconut
1 tablespoon whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • FRUIT MINCE: Place all ingredients except almonds and brandy into a deep ovenproof dish and mix thoroughly.
  • Cover with foil and bake in an oven at 120 C for an hour.
  • Stir mincemeat halfway through cooking.
  • Leave to cool before adding almonds and brandy.
  • Keep refrigerated until ready to use- it will keep for up to a month in the fridge.
  • BASE: Cream the butter and sugar until light and fluffy.
  • Stir in the flour.
  • Mix well and press evenly into an 18 x 23 cm tin that has been lined with greased greaseproof paper.
  • Bake at 180 C for 10 minutes until pale golden.
  • TOPPING: Beat eggs, sugar and vanilla until thick and creamy.
  • Stir in the mincemeat and coconut.
  • Mix well.
  • Fold in the combined flour, baking powder and salt.
  • Spread topping evenly over the base.
  • Return to the oven and bake for a further 20-30 minutes until the fruit mince setting is set.
  • When cool, cut into fingers and store in an airtight container.

Homemade is so much better than store-bought and this recipe is a breeze - you don't even have to cook it. Makes a good-sized batch - enough to for 3-4 pies or a plethora of tasty tarts (then you can stir it into pancake batter, muffins, cakes....)

1 lb currants
1/2 lb raisins
1 lb granny smith apple, peeled and diced (about 2 large)
1 lb dark brown sugar
8 ounces candied peel, finely chopped
3 ounces chopped almonds
3 ounces chopped walnuts
2 lemons, juice and zest of, grated
1 orange, juice and zest of, grated
1 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon cinnamon
1/8 teaspoon mace
1/8 teaspoon ginger
4 tablespoons dark rum
3/4 cup cognac or 3/4 cup brandy

Steps:

  • Mix all the ingredients together, stirring well.
  • Spoon into clean, screwtop jars and cover.
  • Allow to sit atleast 2 weeks before using, turning the jars every so often to redistribute juices.
  • The mincemeat keeps months like this.

This recipe is from "Making great candy" cookbook. This is not a confectionary item, more like a fruit mince truffle. They are delicious and remind you of Christmas, a simple homemade gift idea. If no food processor is available to you, use a large bowl and metal spoon, be sure to chop all you ingredients very small. I like to use kitchen sheers rather than a knife for dried fruit, which can be sticky and stick to the knife.

1/4 cup honey
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon nutmeg
2 teaspoons orange zest
2 cups finely chopped toasted almonds
1 cup finely chopped dried apricot
1 cup finely chopped dried dates
1/4 cup caster sugar, for rolling (superfine sugar)

Steps:

  • .Place all ingredients into a food processor and blend until a ball forms (it should take about 2 minutes).
  • With wet hands, roll into balls (about the size of a large cherry) then roll into the extra sugar.
  • Store in an airtight container for upto 2 weeks.
  • Makes 25 - 35 truffles.
