1 bottle (750 ml) fruity red wine
1 cup brandy
1 cup sugar
1 medium orange, sliced
1 medium lemon, sliced
1/8 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole allspice
1/2 teaspoon aniseed
1/2 teaspoon whole peppercorns
3 whole cloves
Optional garnishes: Orange slices, star anise and additional cinnamon sticks

Steps:

  • In a large saucepan, combine the first 6 ingredients. Place remaining spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Place in pan., Bring to a boil, stirring occasionally. Reduce heat; simmer gently, covered, 20 minutes. Transfer to a covered container; cool slightly. Refrigerate, covered, overnight., Strain wine mixture into a large saucepan, discarding fruit and spice bag; reheat. Serve warm. Garnish as desired.

This recipe of my grandmother's is always a hit at a get-together, especially on those cold, blustery days. I usually keep it warm in a slow cooker. You can use claret or Burgundy.

1 ½ cups boiling water
½ cup white sugar
¼ lemon
8 whole cloves
1 (3 inch) cinnamon stick
1 (750 milliliter) bottle claret wine
1 pinch ground nutmeg

Steps:

  • Stir water and sugar together in a saucepan until sugar dissolves. Add lemon, cloves, and cinnamon stick; bring mixture to a boil and cook until flavors combine, about 10 minutes. Strain and return water mixture to the saucepan; discard lemon, cloves, and cinnamon stick.
  • Stir claret wine into water mixture; heat until hot but not boiling, 5 to 10 minutes. Serve flecked with nutmeg.

1/4 cup honey
2 cinnamon sticks
1 orange, zested and juiced

3 star anise
4 oranges, peeled, for garnish

Steps:

  • Combine the cider, wine, honey, cinnamon sticks, zest, juice, cloves and star anise in a large saucepan, bring to a boil and simmer over low heat for 10 minutes. Pour into mugs, add an orange peel to each and serve.

2 star anise
4 cloves
2 strips lemon zest, pared using a vegetable peeler
4 tbsp caster sugar

Steps:

  • Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.
  • Remove from the heat and cool, leaving to infuse for about 30 mins.
  • To serve, heat without boiling, stir in the sloe gin (if using, see tip below) and pour into mugs or heatproof glasses.

This mulled wine recipe couldn't be easier to do. Don't bother with expensive wine - a cheap red will work beautifully and no one will ever know the difference! Start with a little sugar, then add more to taste. This recipe can be easily doubled or trebled.

4 cups dry red wine
2 (2 inch) pieces cinnamon sticks
1 teaspoon whole cloves
1 teaspoon whole allspice berries
1 large strip of lemon peel
1 large strip of orange peel
2 tablespoons sugar, or more to taste

Steps:

  • Combine red wine, cinnamon sticks, cloves, allspice, lemon peel, and orange peel in a heavy saucepan over medium heat. Heat gently, but don't boil. Stir in 2 tablespoons of sugar, and once dissolved, taste to see if you'd like to add more.
  • Keep hot on medium to low heat for 20 minutes to let the flavors infuse the wine. Serve your mulled wine hot in glasses or mugs.

Choose a red wine that isn't bone-dry-a little fruitiness is just fine here. I like the inexpensive Zweigelt from Erdenlied for this, which conveniently comes in 1-liter bottles.

2 large oranges
4 1/4 cups/1 liter red wine
1 1/4 cups/10 ounces brandy
1/2 cup dark brown sugar
2 cinnamon sticks
6 whole cloves
3 cardamom pods, slightly crushed

Steps:

  • Using a peeler, remove the peel in strips from 1 orange then juice the orange. Slice the other orange into rounds and reserve for garnish.
  • In a nonreactive saucepan, combine orange peel, juice and the rest of the ingredients. Stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat to high, bring mixture to a boil, then immediately reduce the heat to low. Simmer gently until flavors meld, about 30 minutes. Strain the mixture, discarding the solids.
  • Ladle into cups or mugs. Garnish each with a reserved orange round.

  • Pour one bottle of semi-sweet, cheap red wine into a large pot, and set it on low-medium heat. Cut an orange into two halves, leaving the skin on. Insert 6 whole cloves into the flesh of each orange half (using 12 cloves in total), and add the orange to the pot of wine. Add lemon to pot.
  • While the wine comes to a heat that is near the boiling point (70-80 degrees celsius), add 3 cinnamon sticks, a pinch of nutmeg, and sugar to taste, stirring occasionally. The mulled wine should be pleasantly sweet and warm. Continue cooking on low heat for about 20 minutes, but note that the wine should not be allowed to come to a boil. As soon as the first bubbles appear, immediately turn off the heat and add 50 mls of cognac or brandy (for strength) and immediately cover the pot with a lid.
  • Let stand for a few minutes, and then pour the mulled wine into special cups (no thin goblets here, please!)
  • My mother would also insist I include her two basic rules for glintvein: "1 - the wine must be the cheapest kind, and semi-sweet or even sweet - the whole aroma and taste of the mulled wine depends on this. 2- avoid boiling the wine - it will kill the mulled wine completely. Nor should the glintvein be cold - it should only be as hot as you can handle! And also - the glasses should be beautiful, transparent, that you can see the beauty of the drink!! Or so I was taught."
