4 cups apple cider
1 orange
2 cinnamon sticks
4 whole cloves
2 star anise

Steps:

  • Put the cider in a large saucepan. Strip the peel from the orange in long strips with a vegetable peeler, taking care not to take off the bitter white pith. Add to the pan. Then squeeze the orange juice into the cider (straining out the seeds). Add cinnamon sticks, cloves, and star anise.
  • Heat cider over medium heat, then simmer very gently until fragrant, about 15 minutes. Serve.

This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

Number Of Ingredients 11

3 cinnamon sticks (3 inches)
3 whole cloves
2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

1l pomegranate juice
1 sprig rosemary
1 tsp sumac
1 cinnamon stick
½ tsp coriander seeds
½ orange , sliced
¼ tsp orange blossom water

Steps:

  • Pour the pomegranate juice into a large saucepan. Add the rosemary, sumac, cinnamon stick, coriander seeds, and orange. Bring to a simmer then pour through a sieve into a jug. Stir in the orange blossom water and pour into heatproof glasses or cups.

1 tablespoon whole cloves
1 1/2-2 cups sugar (more or less to taste)
2 quarts water
2 (16 ounce) bottles pomegranate juice
1/4 cup fresh lemon juice
1 cup orange juice

Steps:

  • Place cinnamon sticks and cloves in the center of an 8-inch square of cheesecloth; tie with string.
  • Bring spice bag, sugar, and the next 3 ingredients to a boil in a large pot, stirring occasionally.
  • Decrease heat and simmer, uncovered, for 10 minutes.
  • Remove spice bag (discard); stir in orange juice; serve hot or cold.

  • Fresh pomegranate , unsweetened apple cider , ginger roots cut into quarter - size slices and flatten it slightly using the sides of a knife - it releases more flavor , cinnamon sticks - each about 3 inches long.
  • I used Instant Pot Duo Evo Plus 8 Quart for cooking. Place the inner vessel into the Instant Pot. Dump all the ingredients , stir once. Close the LID of the Instant Pot . Close the LID of the Instant Pot . Press the PRESSURE COOK mode on HIGH power, and SET CUSTOM TIMER to “FOUR” minutes. SEAL the Pressure Valve ( this model IP automatically seals the vent). Switch off the KEEP WARM MODE ( light should not be on in the keep warm mode). Now press START. After the pressure cooking is done. Press CANCEL . Wait for NPR (natural pressure release) leave the quick release switch in the SEAL position for FIVE minutes. Then do QPR (quick pressure release) by moving quick release switch from SEAL TO VENT.
  • After the steam is released, open the lid, stir well . Using a fine mesh strainer , strain the cider ( when serving cider, use the strained cinnamon stick to garnish with the cider )( discard the gingerroots and pomegranate). Serve the cider warm and you can garnish with fresh pomegranate ( optional).
