This is a great breakfast that you can grab fast in the morning. It goes great with a hot cup of coffee. It also keeps very well so you can make some on Sunday night and enjoy it all week!

2 cups rolled oats
1 green apple, chopped
1 cup 2% milk
1 cup nonfat plain yogurt
1 banana, chopped
¼ cup raisins
1 tablespoon chopped walnuts
1 tablespoon slivered almonds
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon orange juice

Steps:

  • Mix oats, apple, milk, yogurt, banana, raisins, walnuts, almonds, brown sugar, honey, and orange juice together in a bowl. Chill in refrigerator for at least 1 hour to set.

If you can use home made muesli/granola, because some of the bought mueslis can be very sweet.I sometimes add some dried cranberries, about a tablespoon.

1/2 cup butter
1/3 cup demerara sugar
1 tablespoon golden syrup or 1 tablespoon light corn syrup
1 cup self-rising flour
2 cups breakfast muesli
1 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees F.
  • Lightly grease one or two baking sheets.
  • Put butter, sugar and syrup in a pan and heat gently until the butter is melted Measure all the other ingredients in a large bowl and add the melted mixture, stir until well blended.
  • Spoon teaspoonfuls on the baking sheet (s), making sure you give them room to spread Bake them for approx 15 minutes.
  • Leave them to cool on the baking sheet for a few moments, lift them of with a metal spatula and let them cool completely on a cake rack.

A girlfriend made this for our Bible study group and I couldn't stop eating it! Sesame seeds, sunflower seeds, pumpkin seeds, honey - mmmmmm! Hope someone out there likes it too! And so easy to make!

1 cup rolled oats
1 cup desiccated coconut
1/2 cup wheat germ or 1/2 cup wheat bran
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds (pepita)
1 cup sultana
125 g butter (1/2 cup)
1/2 cup honey
1/3 cup brown sugar

Steps:

  • Grease and line 3cm deep 16 x 28cm baking pan with baking paper.
  • Cook oats, coconut, wheatgerm, sesame seeds, sunflower kernels and pumpkin seeds in frying pan over med heat stirring 8-10 min until golden. Place in a large bowl to cool and stir in sultanas.
  • Cook butter, honey and sugar over med heat, stirring, for 3-4 min until sugar dissolves. Reduce to low and simmer without stirring for 7 minute.
  • Add to dry ingredients and mix well.
  • Spoon into pan and press down firmly, allow to set for a few hours in the fridge, then cut into slices and enjoy!

The flavors in this sweet breakfast really stand out. I adapted this to 1/4 the original recipe but if you want it to make more than one serving, just multiply ingredient amounts accordingly. You can really enjoy playing with this recipe.

1/2 cup old fashioned oats
3/4 cup soymilk (vanilla is esp. good) or 3/4 cup other non-dairy milk substitute (vanilla is esp. good)
1 -2 tablespoon raisins (more or less, according to your preference)
1/2 teaspoon orange zest, finely grated
1/4 teaspoon ground cinnamon
2 -3 tablespoons raw sunflower seeds (if you like them, adds a delicious crunch) or 2 -3 tablespoons roasted sunflower seeds (if you like them, adds a delicious crunch)
1 small granny smith apples or 1/2 large granny smith apple, chopped
other dried fruit or nuts, of your choice

Steps:

  • Combine all ingredients EXCEPT SUNFLOWER SEEDS AND APPLE in a bowl.
  • Cover bowl and refrigerate overnight.
  • In the morning, chop the apple and stir it in with the seeds (or any others you prefer). Enjoy!
  • Notes: You can play a bit with the amount of soymilk in this recipe, since some like it super-thick. If you want it slightly moister, use the 3/4 cup. Or you might want even more.
  • I know, getting out the grater for 1/2 tsp orange zest -- but it is so worth it!

I had some muesli to use up, and found and adapted this recipe. It's originally from Super Food Ideas. The original had more dried fruit in it, but my muesli was very fruity so I cut it back. You could always add more if you like. I also reduced the sugar from 3/4 cup to 1/3 cup, I thought it was plenty sweet! Tastes like a cake-y oatmeal raisin cookie.

2 cups natural untoasted muesli (or your own mix of rolled oats, dried fruit, bran, and seeds, to make 2 cups total)
1 cup whole wheat flour (AKA wholemeal)
2 teaspoons baking powder
1/2 cup sultana (and or other dried fruit)
1/3 cup brown sugar
180 g butter
1/4 cup honey
2 eggs, lightly beaten
100 g milk chocolate (optional)

Steps:

  • Line a 8 x 8 inch pan/tin/dish (I used a square pyrex dish) with foil and spray with oil.
  • Combine muesli, flour, dried fruit and sugar in a bowl.
  • Melt honey and butter together in microwave, and cool slightly.
  • Add eggs and butter mixture to dry ingredients, mixing to combine.
  • Spread mixture into pan.
  • Bake 30 minutes at 180 or until a skewer inserted into the centre comes out clean. Allow to cool in pan.
  • Place chocolate (if using) into a small heat-proof bowl over a saucepan of simmering water. Stir with a metal spoon until melted. Spoon chocolate into a small snap-lock bag. Snip corner off bag. Drizzle chocolate over slice. Allow to set before cutting into squares.
