Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2 ½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

This is a depression-era bar cookie. My mother learned it from the wife of my father's first boss. It is a favorite of mine. The sweetness of the bar and the tartness of the icing balance one another just right. Don't substitute butter or margerine for the Crisco. It won't work. And I just put down a random amount of powered sugar in the recipe for the icing. Use more or less, as you want and depending on the size of your lemon, so it is easy to spread. My handwritten recipe specifies seedless raisins. Imagine: you used to be able to buy raisins with seeds.

1 cup raisins
1 cup water, plus a tad more
1/2 cup Crisco
1 cup sugar
1 teaspoon salt
1/2 teaspoon clove
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1 egg
1 3/4 cups flour
1 lemon
1 cup powdered sugar

Steps:

  • Stew the raisins in the water while getting out the other ingredients.
  • When the raisins are soft, turn off the heat and add the vegetable shortening.
  • Let it cool just a bit and add rest of the ingredients.
  • Beat until smooth.
  • Pour into a 9"x13" pan and bake 20 minutes at 375 degrees.
  • Frost when cool or warm, either way works. To make the icing:.
  • Grate the rind of the lemon.
  • Juice the lemon.
  • To these two ingredients, add enough confectioners (powdered) sugar to spread easily.

1 cup white sugar

1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder

1 cup white chocolate chips
1 cup chocolate chips
1 1/2 cups raisins
1 1/2 cups nuts, your choice
1 cup old fashioned oats
1 1/2 cups granola cereal (orange or almond)

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl, beat butter, brown sugar and white sugar until well mixed.
  • Add the eggs and vanilla and beat until well mixed.
  • In a medium bowl sift together flour, baking powder, salt and baking soda.
  • Add dry ingredients to wet mixture in large bowl and beat well.
  • Stir in white chocolate chips, chocolate chips, raisins, nuts, old fashioned rolled oats and granola mix.
  • When well mixed, shape into golf ball size and bake on ungreased cookie sheets, 8-10 minutes or until barely golden.

2 cups butter
2 cups sugar
2 cups packed brown sugar
4 large eggs
2 tablespoons vanilla
4 cups flour
5 cups oatmeal (put in blender and make into flour)
1 teaspoon salt
4 teaspoons baking powder
4 teaspoons baking soda
2 (12 ounce) bags chocolate chips
8 ounces Hershey Bars, grated
3 cups nuts, any kind of nuts (optional)

Steps:

  • Cream together butter, sugar and brown sugar.
  • Add eggs and vanilla and mix well.
  • Mix together flour, oat flour, salt, baking powder and baking soda.
  • Stir in chocolate chips, grated Hershey bar and nuts (if using).
  • Drop by 1 1/2" balls onto ungreased cookie sheet.
  • Bake at 375° for 6-10 minutes.
  • NOTE: If you want your cookies to spread out a bit more, flatten them a bit before baking.
  • Cookies will be soft but will firm up a bit after cooling.

1 cup peanut butter
1/2 cup butter, softened
1-1/4 cups packed brown sugar
1 cup sugar
3 large eggs, room temperature
2 teaspoons baking soda
1 teaspoon vanilla extract
4 cups quick-cooking oats
1 cup M&M's
1 cup butterscotch chips
1 cup salted peanuts
2 cups all-purpose flour

Steps:

  • In a large bowl, cream peanut butter, butter and sugars. Add eggs, 1 at a time, beating well after each addition. Add baking soda and vanilla. Add oats, M&M's, butterscotch chips and peanuts; let stand for 10 minutes. Stir in flour (the dough will be crumbly)., Shape by 1/4 cupfuls into balls. Place on greased baking sheets, about 9 cookies on each sheet. Gently flatten cookies. Bake at 325° for 15-18 minutes or until edges are lightly browned. Remove to wire racks.
