QUICK SPICY KIMCHEE

Quick Spicy Kimchee image

Provided by Tyler Florence

Categories     side-dish

Time 6h40m

Yield 1 quart

Number Of Ingredients 8

2 tablespoons hot chili paste (recommended: Srirachi Hot Chili Paste)
1-inch piece fresh ginger, grated
2 cloves garlic, finely chopped
2 scallions, finely sliced
1 head Napa cabbage, about 1 to 1 1/2 pounds
1/4 cup kosher salt
1/2 cup rice vinegar
1 tablespoon sugar

Steps:

  • Remove outer leaves from cabbage. Cut cabbage in quarters and remove the tough inner core. Slice across sections into 1/2-inch slices. Put into a colander, add salt, and mix well. Place over a bowl and let drain, covered, until wilted, about 2 hours.
  • In a large bowl combine the vinegar and sugar and stir to dissolve. Add the chili paste, ginger, garlic, and scallions and stir. Rinse the salt off the cabbage with a couple of changes of water. Dry well and add to the vinegar mixture; stir well to combine. Put into a sterilized glass jar and pack the cabbage down; add enough water to cover. Close the jar and refrigerate for at least 4 hours. This is spicy and gets spicier the longer it sits - add or subtract chili paste to your taste.

MR. N'S KIMCHEE BASE

Mr. N's Kimchee Base image

Visiting my parents, one of their friends gave them a huge jar of kimchee cucumbers that were the best I've ever tasted. Of course, I came here to find a similar recipe and nothing I tried came close. I couldn't ever get the depth of flavor that I remembered in his kimchee...all I tasted was garlic and red pepper. Something was missing. The chef was gracious to pass along his recipe and instructions for putting up Napa and also cucumbers. This isn't a months-long process, so it's not entirely authentic, but the addition of the salted shrimp and the salted anchovies makes all the difference for me. The information in the parentheticals are his specific instructions to me. He had specific brand names that he liked, but I've taken those out. Prep time doesn't include refrigeration time.

Time 30m

Yield 1 batch

Number Of Ingredients 10

4 garlic cloves, minced (large)
2 -3 teaspoons salted shrimp (find in jars at the Korean grocers)
2 tablespoons fish sauce (preferably a Thai brand)
5 tablespoons korean hot red pepper (don't substitute this)
2 tablespoons sugar
2 tablespoons ginger juice (grated ginger squeezed to get the juice)
2 pieces salted anchovies (again, find this in jars at the Korean grocers)
1 napa cabbage (large, washed and cut into bite-sized pieces)
1/4 cup salt (scant)
1 bunch green onion (washed and sliced into 2 inch lengths)

Steps:

  • Combine first 7 ingredients in a bowl and refrigerate.
  • Put the napa cabbage in a large bowl.
  • Stir and rub the scant 1/4 cup of salt onto the napa cabbage.
  • Press overnight until the liquid rises out of the napa cabbage -- don't add water and don't drain.
  • To press, use a lid that is smaller than the bowl you are using and put some sort of weight on the top.
  • Add TO TASTE the kimchee base that you prepared the night before to the napa cabbage and its liquid.
  • Mix in the green onions, if desired.
  • Refrigerate and serve the next day.
  • The base can be used for cucumbers instead of napa cabbage, following the directions above but substituting cucumbers instead.

TRADITIONAL KIMCHI

Traditional Kimchi image

If you love authentic Korean cuisine, you'll want to try your hand at creating your own kimchi; it's not as complicated or time-consuming as you might think. Kimchi is a fermented dish, the more it ages the better it tastes, likewise with the sugar. Use a persimmon in place of the apple, if you prefer. If you want to serve it the very next day, don't refrigerate.

KIMCHI

Kimchi image

A staple on the Korean table, kimchi is a pickled cabbage (and sometimes radish) side dish that is pungent and spicy. Traditionally, it has lots of spices and takes months to make, carefully buried in the ground to ferment. Forget all about that . . . this is a kinder, gentler version. The first thing you need to do is buy a bottle of Momoya Kimchi Base, a sweet and slightly spicy red sauce that has everything in it already. Look for it at your local Asian grocer or online. Once you have it in the fridge, you're set for a while-a little goes a long way. This recipe couldn't be easier to make but the kimchi needs at least a couple of hours to do its work, so plan ahead. I use the kimchi in practically everything from a topping on burgers to a filling for quesadillas (page 23). Spoon the kimchi into butter lettuce leaves and sprinkle with chopped peanuts for an incredibly tasty and healthy snack.

Yield makes 6 cups

Number Of Ingredients 10

1 head Napa cabbage, halved lengthwise and cut into 1/2-inch pieces (3 quarts)
1 small red bell pepper, cored, seeded, and thinly sliced
1 small red onion, thinly sliced
1 small carrot, shredded
1/4 cup fresh mint leaves, coarsely chopped
1/4 cup fresh basil leaves, coarsely chopped
1/4 cup fresh cilantro leaves, coarsely chopped
1 teaspoon grated peeled fresh ginger
Juice of 1 lime
1/3 cup Momoya Kimchi Base

Steps:

  • In a large nonreactive bowl, toss together the cabbage, bell pepper, onion, carrot, mint, basil, and cilantro. Add the ginger, lime juice, and kimchi base; mix really well to distribute the kimchi base so it evenly coats the vegetables. Cover and refrigerate for at least 3 hours. Th e kimchi will keep in the refrigerator for up to 2 weeks. Let the kimchi come to room temperature before serving.
