Steps:
- Preheat oven to 220°C | 430°F.
- Place chicken breasts in a baking dish and drizzle with olive oil. Season with oregano, basil, salt, pepper and 1 tablespoon of minced garlic. Rub seasoning all over each breast. Arrange the tomatoes and red onion around the chicken in the dish.
- Whisk together the balsamic vinegar, sugar and remaining garlic in a jug to combine. Pour over the chicken breasts, flip each breast in the sauce to evenly coat.
- Bake in preheated oven for 20-25 minutes (depending on the thickness of your chicken breasts), or until no longer pink in the middle. Sprinkle with cheese and broil (or grill) for 4-5 minutes, or until cheese is melted and golden.
- Garnish with parsley, and serve with rice or pasta drizzled with the pan juices.

Steps:
- Pat the chicken breasts dry. On each side of the chicken breasts make three slits through.
- Spread the garlic on both sides; insert some garlic into the slits you made. Season the chicken breasts on both sides with salt, pepper and 1/2 of the dried oregano.
- In a large cast iron skillet, heat 2 tbsp of olive oil on medium-high. Brown the chicken on both sides. Add the white wine and let reduce by 1/2 then add the lemon juice and chicken broth. Sprinkle the remaining oregano on top. Reduce the heat to medium. Cover with a lid or tightly with foil. Cook for 10-15 mins turning the chicken over once (chicken's internal temperature should reach 165 degrees F.)
- Uncover and top with the chopped onions, tomatoes and olives. Cover again and cook for only 3 minutes. Finally add the parsley and feta cheese. Serve with a light pasta, rice or couscous. Enjoy

Steps:
- First prepare your chicken cutlets. Trim the fat, cut each piece lengthwise and in half. (to make the chicken cook faster) A serrated knife makes cutting them lengthwise easier.
- Prepare your coating. Crack two eggs into a bowl, whisk lightly with a spoon. Next pour flour and breadcrumbs onto two separate sheets of tinfoil.
- Take each piece of chicken and dip in flour, egg, and breadcrumbs respectively. Set aside.
- Pour some olive oil into a medium frying pan. (enough to coat the bottom) Turn the burners up to medium heat.
- All you want to do is brown the cutlets on both side not cook them all the way through.
- Next get a baking dish and cover chicken with spaghetti sauce, mozzarella and feta cheese.
- Stick it in oven for approx 20 min on 350.
- Take out and enjoy! I usually serve this with pasta, salad, and garlic bread.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
