1 pound ground lamb
1/4 cup harissa
1 teaspoon grated fresh ginger
3/4 teaspoon ground coriander
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1/2 teaspoon sumac
1/2 teaspoon ground turmeric
3 large cloves garlic, grated
Olive oil, for greasing pan
1 large boule (rustic white bread), cut into 1-inch cubes and dried out overnight (about 10 cups)
1 medium sweet potato, peeled and cut into 3/4-inch dice (about 2 1/2 cups)
1 large onion, chopped
2 large red bell peppers, cut into 3/4-inch dice (about 2 cups)
6 large cloves garlic, minced
1 cup chopped walnuts, optional
3 large eggs
1 quart turkey stock
2 teaspoons ground turmeric
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon cayenne, optional
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground black pepper
2 to 4 tablespoons harissa
1/2 cup chopped fresh parsley

Steps:

  • For the sausage: Place the lamb, harissa, ginger, coriander, salt, cinnamon, pepper, sumac, turmeric and garlic in the bowl of a stand mixer. Mix on medium speed for 2 minutes, then turn out onto a sheet of plastic wrap and form into a small, dense log. Wrap well and refrigerate for at least 24 or up to 72 hours.
  • For the stuffing: Preheat the oven to 400 degrees F. Grease a large casserole dish (such as a 9-by-13-inch or equivalent oval) with olive oil; set aside. Put the bread cubes in a very large bowl.
  • Place a large saute pan over high heat. Break the sausage meat into marble-sized pieces and brown on all sides in batches; remove and add to the bowl, letting the bread soak up any grease.
  • Once all the sausage is browned, reduce heat to medium-high (do not drain the grease from the pan). Add the sweet potatoes and cook, stirring occasionally, until they begin to brown, 4 minutes. Add the onions and peppers and continue to cook, stirring occasionally, another 4 minutes, then add garlic and walnuts, if using, and cook until fragrant, about 3 minutes. Pour the vegetables on top of the bread and sausage.
  • Whisk the eggs and turkey stock together in a large bowl, then add the turmeric, coriander, paprika, salt, cayenne, if using, cinnamon, cumin, ginger, black pepper and 2 tablespoons of harissa. Pour half evenly over the stuffing mixture and toss well; when all the liquid has been absorbed, add the chopped parsley and remaining stock and continue tossing until well combined. Taste for seasoning, adding more harissa and spices as you'd like.
  • Pour the stuffing into the prepared casserole dish, spreading out evenly, then cover with aluminum foil and bake for 40 minutes. Remove the foil and bake until brown on top, an additional 10 minutes. Allow to rest for 10 minutes, then serve warm.

Merguez, a North African lamb sausage, is a powerhouse of spicy and earthy flavor, making it one of the tastiest sausages around.

Number Of Ingredients 12

2 teaspoons whole cumin seed
2 teaspoons whole coriander seed
2 teaspoons whole fennel seed
2 tablespoons paprika
2 tablespoons Kosher salt
1 teaspoon cayenne pepper
3 pounds lamb shoulder, cut into 3/4-inch cubes and removed of gristle
1 pound lamb, beef, or pork fat, cut into 3/4-inch cubes
2 tablespoons freshly minced garlic (about 6 medium cloves)
1/3 cup harissa
1/3 cup ice water
Lamb casings, soaked in warm water for 30 minutes prior to use

Steps:

  • Place cumin, coriander, and fennel seeds in a cast iron skillet over medium heat and toast until fragrant, about 2 minutes. Transfer to a spice grinder and grind into a fine powder. Transfer spice mixture to a small bowl and mix in paprika, salt, and cayenne.
  • Place lamb and fat in a large bowl. Add in spice mixture, garlic, and harissa. Toss to thoroughly coat meat and fat in spices. Refrigerate until chilled, about 20 minutes.
  • Grind mixture through a meat grinder, fitted with small die, into a medium bowl set into a large bowl filled with ice.
  • In the bowl of a stand mixer fitted with a paddle attachment, mix ground meat on low speed for 1 minute. Add in water and mix until liquid is incorporated and sausage is uniform and sticky, about 1 minute more.
  • Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings if necessary.
  • Stuff sausage into lamb casings and twist into 6-inch links. Refrigerate until ready to cook.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate . Grill over medium-high direct heat until sausage registers 155°F when an instant read thermometer is inserted in middle of link. Remove from grill, let rest for 5 minutes, and serve.

2 tbsp olive oil
500g merguez sausages , cut into bite-sized pieces
2 onions , chopped
1 red pepper , chopped
2 x cans chopped tomatoes
2 tbsp each Worcestershire sauce , Dijon mustard and brown sugar
2 x cans cannellini beans or red kidney beans, drained
coriander or parsley and tortillas, to serve

Steps:

  • Heat the oil in a large pan, add the sausages and fry until browned. Add the onions and pepper, and fry for 5 mins until softened. Add the tomatoes and 1 can of water, the Worcestershire sauce, mustard and sugar. Season and bring to the boil. Give it a stir, then reduce the heat, cover and simmer for 15 mins.
  • Stir in the beans, return to a simmer and cook for a further 5 mins. Scatter with parsley or coriander and serve in bowls with tortillas.

1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1 pound ground lamb
2 tablespoons fresh cilantro, finely chopped; more for serving
2 garlic cloves, minced
1 1/2 teaspoons kosher salt
1 teaspoon paprika
1/2 teaspoon cayenne pepper, or to taste
Olive oil, for cooking
Harissa, for serving (optional)

Steps:

  • In a small skillet over medium-low heat, toast cumin, coriander and fennel seeds until fragrant, 1 to 2 minutes. Transfer warm spices to a spice grinder and grind well, or use a mortar and pestle and pound seeds.
  • In a large bowl, combine all ingredients and mix well. Form lamb mixture into desired shape (1-inch-thick by 5-inch-long cigars make nice merguez, but fatter cylinders or patties will also work). Chill for up to 5 days, freeze for up to 3 months, or use immediately.
  • Brush sausages with oil and grill or broil them until browned and cooked through. Or fry them in a little oil until well browned all over. Serve with more cilantro and harissa on the side, if desired.

A famous Moroccan casserole named after the clay dish it's cooked in and containing strong, fragrant flavours

1 tbsp each ground cumin, paprika and turmeric
1 tsp hot chilli powder
2 large red onions , roughly chopped
3 garlic cloves
thumb-sized piece ginger , roughly chopped
200ml/ 7fl oz olive oil
200ml/ 7fl oz lemon juice (about 4 lemons)
1 tbsp honey
large handful flat-leaf parsley , roughly chopped
large handful coriander , roughly chopped
6 lamb shanks or a 1kg/2lb 4oz piece lamb or mutton shoulder (if using shoulder ask the butcher to cut it into 10cm chunks on the bone)
4 tbsp olive oil
2 carrots , sliced
2 red onions , sliced
12 dried prunes
1 tbsp honey
juice ½ lemon
8 merguez sausages (optional)
2 preserved lemons , homemade (see recipe below) or bought, pulp scooped out, rinsed and finely sliced
2 mint sprigs, to serve
harissa , to serve (see recipe below)

Steps:

  • For the marinade, roast the spices in a dry pan for a couple mins until fragrant. Put remaining marinade ingredients in a blender and process to a smooth paste, then add the roast spices and blend again to combine. Place the lamb in a large bowl and pour over the marinade. Leave in the paste overnight, or for at least 2 hrs to absorb all the flavours.
  • Heat oven to 160C/140C fan/gas 3. In a large roasting tin, big enough to fit the meat in one single layer, heat the oil and place over a high heat on the hob. Remove the meat from the marinade, wiping off and reserving any excess, then brown shanks on all sides in the hot oil.
  • Add remaining marinade to the dish along with the carrots, onions and prunes, then pour in 1 litre water. Cover the dish tightly with foil and cook in a low oven for 3½-4 hrs until the meat is tender and falling away from the bone. Add the honey, lemon juice and seasoning and keep warm.
  • If using, fry the sausages until cooked through, then add to the tagine. Serve the meat in a large bowl with the sauce spooned over, then scatter with the preserved lemons and mint, and serve the harissa on the side.

  • Mince the garlic and. chop the parsley. Slice the meat and fat into cubes removing gristle and sinew. Place it on a plate or pan in the freezer, along with the grinder parts that will contact the meat. Leave it there for about 20 minutes until it is firm but do not let it freeze. This makes grinding easier.
  • Grind it with a 1/4" die. Toast the cumin, fennel, and coriander seeds in a frying pan over a low heat for one or two minutes until fragrant. Allow seeds to cool and then grind them to a powder in a spice grinder or pestle and mortar. Toss in with the meat. Mix in the water and everything else.
  • Pinch off a small piece of the sausage and cook it in a frying pan let it cool and taste to see if the seasoning is to your taste. Form it into patties, meatballs, skinless tubes, or encase it in lamb casings.
