MOROCCAN CHAROSET BALLS



Moroccan Charoset Balls image

Make a different kind of charoset this year or add it to the table, quick and easy in a blender.

Number Of Ingredients 8

1 cup walnutes (almonds can be substituted)
1 green apple, peeled and cubed
½ cup pitted dates
½ cup raisins
½ cup pitted prunes
2 teaspoon grape juice
½ teaspoon cinnamon
½ teaspoon sugar

Steps:

  • 1. In the jar of a blender, add the walnuts, apple, dates, raisins, prune, juice, cinnamon, and sugar. 2. Blend to desired consistency. 3. Some prefer their Moroccan charoset more textured and nutty; others prefer to puree more and achieve a smoother consistency. 4. Shape into balls and refrigerate until ready to serve.

Yield Makes enough for 4 lamb shanks

Number Of Ingredients 13

1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 teaspoon crushed red-pepper flakes
1 teaspoon coriander seeds
1 cup extra-virgin olive oil
1 cup white wine
Peel from 1 orange
1 teaspoon coarse salt
8 sprigs fresh thyme
8 sprigs fresh flat-leaf parsley
8 sprigs fresh cilantro
6 cloves garlic, crushed
1 (2-inch) piece fresh ginger, sliced crosswise and crushed

Steps:

  • In a small skillet, lightly toast cumin seeds, fennel seeds, chile flakes, and coriander seeds over low heat until fragrant. Transfer to large shallow baking dish and add olive oil, wine, orange peel, salt, thyme, parsley, cilantro, garlic, and ginger; stir to combine.

1 pound pitted dates, chopped
1 1/2 cups sweet red Passover wine
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup walnuts, coarsely chopped

Steps:

  • Put the dates in a pan with the wine and seasonings and simmer until the mixture resembles a soft paste, about 30 to 40 minutes, stirring occasionally. Cool. Add the walnuts and serve.

6 apples - peeled, cored and chopped
1 cup finely chopped walnuts
½ teaspoon ground cinnamon
1 teaspoon white sugar
3 ½ teaspoons honey
⅓ cup sweet red wine

Steps:

  • Place the apples and walnuts into a large bowl. Mix together the cinnamon and sugar; sprinkle over the apples. Stir in the honey and sweet wine. Serve immediately, or refrigerate until serving.

Got this years ago from my son's preschool. Haroset is a spread that you smear on matzoh that is usually sweet. In this recipe the haroset is rolled into small balls. I guessed the amount of servings since I haven't made this yet.

2 cups walnuts
1 cup almonds
25 dates, pitted, cut into small pieces
20 dried apricots, cut into small pieces
1/4 cup grape juice
cinnamon

Steps:

  • Mix the fruit with the nuts and add the grape juice to make a smooth paste.
  • Roll into 1 inch balls and sprinkle with cinnamon.
