FISH EN PAPILLOTE

Fish En Papillote image

A recipe for simple, perfect fish en papillote with vegetables. This healthy method for baking fish in parchment results in tender, flaky fish every time!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 35m

Number Of Ingredients 10

4 6-ounce cod fillets (or another firm-bodied fish, such as salmon, flounder, trout, or halibut)
1/4 cup Land O Lakes® Butter with Canola Oil
2 garlic cloves (minced)
2 tablespoons chopped fresh parsley (plus additional for serving)
1 small or 1/2 large shallot
½ teaspoon kosher salt (plus additional for seasoning)
¼ teaspoon ground black pepper
1 small lemon
4 cups lightly packed tender salad greens (like spinach, arugula, radicchio, or even mixed greens)
12 cherry tomatoes (halved)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F.
  • In a small bowl, add the Land O Lakes® Butter with Canola Oil, garlic, parsley, shallot, 1/2 teaspoon salt, and pepper. Zest the lemon right into the bowl (reserve the whole lemon). With a fork, mash the butter with canola oil to smoothly combine all of the ingredients. Cut the whole lemon into thin slices (you will need 8 slices total for the recipe).
  • Assemble the Packets: Tear off 4 squares of parchment that are at least 12 inches on each side. Lay the sheet flat on a work surface. Place 1 cup of salad greens in the center of a sheet, leaving space at the top and bottom. On top of the greens, place 1 fish fillet so that it runs vertically top to bottom. Lightly sprinkle the fish with salt. With the back of a small spoon, spread one-quarter of the butter mixture on top of the fish. Lay 2 slices of lemon on top of the butter mixture and scatter 6 tomato halves around the fish.
  • Fold the Parchment Packets: Lift the right and left sides of the paper up and towards the center, directly above the fish. Touch the two sides together and tightly roll them, folding as you go, until you reach the fish. Now, roll and crimp the top and bottom ends, rolling them towards the counter, away from the center of the fish. When you reach the end, tuck the end underneath the fish. Place the packet on a rimmed baking sheet, using the weight of the fish to hold the ends in place (you don't want the packet to come unsealed as it bakes). Repeat with remaining three packets. Reserve any remaining lemon slices for serving.
  • Place in the oven and bake for 12 to 15 minutes, until the fish is fully cooked through and flakes easily with a fork. Serve warm with reserved lemon slices and additional fresh parsley as desired.

Categories     main-dish

Time 25m

Yield 1 serving

Number Of Ingredients 8

8 ounces boneless fish fillet, such as snapper or cod
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1 tablespoon good olive oil

2 Cerignola or other large green olives with pits
Extra-large egg

  • Preheat the oven to 400 degrees.
  • Place the fish fillet on a piece of parchment paper and sprinkle it with the salt and pepper. Drizzle the lemon juice and olive oil over the top of the fillet. Lay the thyme on top and place the olives next to the fillet.
  • Beat the egg together with 1 tablespoon of water for an egg wash. Brush the egg wash around the edge of the parchment paper and fold it in half. Carefully fold the edge of the parchment paper under and around the fish to make a package. Place the package on a sheet pan and cook for 12 to 15 minutes, until the fish is cooked through. Serve hot in the parchment paper.

MONKFISH COOKED IN A PAPER BAG

Monkfish Cooked In a Paper Bag image

Provided by Craig Claiborne

Categories     dinner, main course

Time 50m

Yield 10 servings

Number Of Ingredients 10

1 1/2 pounds skinless, boneless monkfish fillets, or another firm-fleshed, nonoily white fish like black bass or cod
2 tablespoons finely chopped Italian parsley
1 tablespoon finely minced garlic
1 tablespoon rosemary leaves, finely chopped
2 tablespoons olive oil
1/3 cup dry white wine
Salt to taste, if desired
Freshly ground pepper to taste
2 to 3 small to medium-size leeks
Steamed mussels for garnish, optional (see mussel recipe)

Steps:

  • Prehea oven to 350. Put the fillets in a mixing bowl, and add the parsley, garlic, rosemary, oil, wine, salt and pepper. Stir well.
  • Trim off the root end of each leek. Split the leeks partly in half lengthwise, cutting to within an inch of the base. Rinse between each layer to wash away any sand. Cut the leeks crosswise into 2 1/2-inch lengths. Cut these pieces lengthwise into very thin julienne strips. There should be about 2 cups.
  • Lay out a length of parchment paper or aluminum foil, measuring about 30 inches by 15 inches, on a baking sheet. Place the fish pieces and their sauce in the center of the paper or foil. Top the fish with the leeks. Fold over the edges of the paper or foil compactly, and seal the sides as tightly as possible. Place the baking sheet in the oven, and bake at 350 for 20 minutes or until the bag is well-puffed.
  • Carefully open the bag - beware of the steam - and garnish the top of the dish with mussels, if desired.

MONKFISH WITH CAPER BUTTER

Monkfish With Caper Butter image

Provided by Florence Fabricant

Categories     dinner, lunch, main course

Time 15m

Yield 6 servings

Number Of Ingredients 11

12 monkfish medallions, 1/2-inch thick (about 2 pounds)
1/2 cup all-purpose flour
1 teaspoon dry mustard
Salt and ground black pepper
6 tablespoons unsalted butter
1 tablespoon finely minced shallots
2 tablespoons drained capers
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon minced tarragon leaves
Lemon wedges, for serving

Steps:

  • Remove any gray membrane from the fish. Mix flour and mustard together and season with salt and pepper. Dip the fish slices in seasoned flour on one side only and arrange on a plate, floured side up.
  • Melt the butter in a small skillet. Add the shallots and cook on medium until both the butter and shallots have browned and acquired a nutty aroma. Do not allow them to blacken. Remove from heat, stir in capers, season with salt and pepper and set aside.
  • Warm 6 dinner plates or a platter. Heat olive oil in a large skillet, preferably cast iron. When very hot, add the fish medallions, floured side down, and sauté until they turn golden, no more than a minute or so. Transfer them, cooked side up, to the plates or platter.
  • Briefly warm the caper sauce. Add the lemon juice and tarragon and spoon a little of the sauce over each medallion. Garnish with lemon wedges and serve.

  • Poor Man’s Lobster. Because of its texture, monkfish is often called “poor man’s lobster.” It’s less expensive than lobster and is very similar in taste and appearance.
  • Monkfish in Tomato Garlic Sauce. This recipe really showcases the monkfish while still enhancing it with a delicious sauce. Cook the monkfish with salt and pepper and let the tomato garlic sauce do the rest of the work.
  • Monkfish with Lemon Butter Sauce. I love lemon on fish and I love butter on, well, pretty much everything. This pan-seared monkfish is flavored with simple ingredients but it’s still so tasty!
  • Catalan Monkfish. This dish originates from a part of Spain called Catalonia. This is where Spain and France meet on the Mediterranean side. The sauce is a really important part of this dish.
  • Baked Monkfish with Lemon, Rosemary, and Breadcrumbs. Since monkfish is a really firm fish, it can stand up to a crispy topping like this recipe. The breadcrumbs are flavored with lemon juice, rosemary, and garlic.
  • Spiced Monkfish. This recipe is full of strong flavors that pack a punch. Ginger, saffron, and curry seasoning are an exquisite blend of spices. Monkfish is a really good fish for them because of its meaty texture and naturally sweet flavor.
  • Roast Monkfish with Lemon and Parsley Butter. Monkfish really lends itself to different cooking methods due to its firm and meaty texture. I love when meat is pan-seared and then finished in the oven.
  • Grilled Monkfish with Roasted Pepper. Not all fish can be grilled because they fall apart easily, but monkfish can easily stand up to a grill. Grilled peppers and onions also play a big role in this recipe.
  • Pan-Seared Monkfish with White Wine Garlic Sauce. I love this white wine garlic sauce and monkfish recipe. The sauce is absolutely heavenly. Monkfish is pan-seared with salt, pepper, and olive oil.
  • Monkfish and Chips with Remoulade. Any time I have a hearty, firm fish like monkfish, I debate making fish and chips. It does really well in the fryer because of its meaty texture.
