4 cups broccoli florets (1-inch pieces)
2 teaspoons cornstarch
2 teaspoons cold water
2 tablespoons low sodium chicken broth
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon ketchup
1 teaspoon finely chopped garlic
1 teaspoon grated lemon peel
1/4 teaspoon salt (or to taste)
crushed red pepper flakes (to taste)
1 cup canned baby corn, rinsed and drained

Steps:

  • Cut any broccoli flowerets more than 1-inch wide lengthwise in half.
  • Place broccoli in boiling water; return to boiling.
  • Boil 1 minute; drain.
  • Immediately rinse with cold water; drain.
  • Mix cornstarch and cold water together in a small container.
  • In a large nonstick skillet or wok, heat the broth, honey, lemon juice, ketchup, garlic, lemon peel, and salt to boiling, stirring frequently.
  • Stir in cornstarch mixture.
  • Cook and stir 1 minute or until thickened.
  • Stir in red pepper flakes.
  • Add in broccoli and corn; cook and stir about 30 seconds or until heated through.

I came up with this idea one night when my family last minute decided they wanted something Asian for dinner. I had thawed out some chicken breast earlier that day and so my mind just went from there!

3 slices bacon
1 lb chicken breast, sliced into 1/4 inch stripes
2 heads broccoli, cut into florets
1/2 medium onion, chopped
2 garlic cloves, crushed
1/4 cup hoisin sauce
3 tablespoons cider vinegar
2 tablespoons soy sauce
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1 tablespoon cornstarch
1 teaspoon garlic powder
1/2 teaspoon ginger powder
1 teaspoon red pepper flakes, to taste
salt and pepper

Steps:

  • Stir together all of the sauce ingredients and set aside.
  • In a large wok or skillet, over medium-high heat, brown the bacon and then remove from the pan.
  • Add the rest of the stir fry ingredients to the pan and stir fry for 3 minutes.
  • Add then sauce and stir fry for about 2-3 minutes; crumble in the bacon.
  • Serve with white or fried rice, or just as it is.
  • ENJOY!

1 red onion, diced
¾ cup raisins
¾ cup chopped salted cashews
1 cup mayonnaise
½ cup brown sugar
2 tablespoons red wine vinegar

Steps:

  • Cook bacon in a large skillet and over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
  • Mix bacon, broccoli, red onion, raisins, and cashews together in a large bowl.
  • Whisk mayonnaise, brown sugar, and red wine vinegar together in a separate bowl; drizzle over the broccoli mixture in small amounts, tossing the salad between additions to coat somewhat evenly.

  • Cook and crumbled the bacon.
  • Set aside.
  • Cook the broccoli until tender crisp.
  • Drain.
