MEATBALL & CREAMED SPINACH SKILLET

Meatball & Creamed Spinach Skillet image

Spaghetti and meatballs is a no-brainer, but pairing meatballs with a pile of creamed spinach topped with marinara and cheese is a flavorful twist. Pick your favorite frozen meatballs--beef, chicken or veggie--for this healthy dinner recipe.

Time 35m

Number Of Ingredients 11

12 ounces frozen meatballs
1 tablespoon extra-virgin olive oil
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 6-ounce package frozen chopped spinach
2 tablespoons white whole-wheat flour
1 cup reduced-fat milk
¼ teaspoon ground pepper
⅛ teaspoon ground nutmeg
1 ½ cups low-sodium marinara (see Tip), heated
4 ounces sliced fresh mozzarella cheese, shredded or torn into pieces

Steps:

  • Prepare meatballs according to package directions.
  • Meanwhile, heat oil in a large, broiler-safe skillet over medium heat. Add onion and cook, stirring occasionally, until tender, about 2 minutes. Add garlic and cook, stirring, for 30 seconds. Add spinach and cook, stirring occasionally, until thawed, 6 to 8 minutes. Sprinkle with flour and stir to combine. Add milk and cook, stirring occasionally, until thickened, about 2 minutes. Stir in pepper and nutmeg.
  • Nestle the cooked meatballs into the creamed spinach. Drizzle with marinara and scatter mozzarella on top.
  • Position rack in upper third of oven and turn broiler to high. Broil the casserole until the cheese is browning in spots, 3 to 4 minutes.

SPINACH MEATBALLS

This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

MOM'S MEATBALLS

Mom's Meatballs image

Scrumptious meatballs from Mom. Mom never browned them first if she was using in her spaghetti sauce. See her recipe for sauce posted in my recipes, recipe #210729. She would drop them in raw and let them simmer for 40 mins. You will have to skim off any excess fat that rises to the top of the sauce if done this way. Or you can saute them first or bake in the oven before adding them to the sauce. No need to skim off any grease if pre-cooked.

BAKED SPINACH, FETA, AND TURKEY MEATBALLS

Baked Spinach, Feta, and Turkey Meatballs image

These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.
