GRAMMA MOMO'S WW PANCAKES

Gramma Momo's WW Pancakes image

This is my version of a great recipe that I found in my Mom's recipe book. It actually came from my grandmother Momo around WW2. My only real change was substituting applesauce for the oil. Feel free to try either way.

Time 40m

Yield 24

Number Of Ingredients 10

2 cups whole wheat flour

½ cup brown sugar
2 eggs
1 cup milk, or as needed
½ cup applesauce
1 tablespoon vanilla extract
1 teaspoon vegetable oil

  • In a large bowl, whisk together the flour, baking soda, salt, and sugar. Add the buttermilk and whisk, just until all dry ingredients are moistened. Add egg and melted butter and whisk till incorporated. Batter will be bit lumpy.
  • Coat a stove-top griddle or large pan with non-stick cooking spray. Using a 1/3 cup measure, pour out a scant 1/3 cup of pancake batter on to griddle or pan. Repeat, leaving some space between pancakes. Cook for about 2 minutes or until lightly browned on the bottom. Use a spatula to carefully flip the pancakes. Make a small indentation with the spatula on top of each pancake and dot with a bit of butter. Allow to cook for another minute or two and remove to a platter. Keep warm while cooking remaining pancakes.

  • In a medium bowl, whisk together buttermilk, eggs and oil. Add wet ingredients to dry ingredients and stir just until combined. Be careful not to over-mix the batter or the pancakes will be tough. At this point, you can fold in any additional ingredients (such as blueberries or chocolate chips), or you can wait to sprinkle the mix-in’s onto individual pancakes once they’re on the griddle.
  • Place a skillet or griddle over medium-low heat. When the skillet is hot, coat or brush with oil. Measure ¼ cup of batter for each pancake. Cook until bubbles form on top, about 2 minutes. Flip and cook until golden brown, about 1-2 more minutes.
