A good, moist, oatmeal cake with a broiled coconut topping.

Number Of Ingredients 17

1 ½ cups boiling water
1 cup rolled oats
½ cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon salt
¼ cup packed brown sugar
½ cup white sugar
1 cup flaked coconut
6 tablespoons butter, melted
¼ teaspoon vanilla extract
¼ cup cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
  • In a small bowl, pour boiling water over oats. Mix well, and cool.
  • In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
  • Bake for 35 minutes.
  • While cake is baking, combine 1/2 cup white sugar, 1/4 cup brown sugar, coconut, melted butter or margarine, vanilla, and cream in a mixing bowl. Remove cake from oven, and turn on broiler. Drop mixture by small spoonfuls on top of cake. Spread evenly and carefully. Broil for 2 to 5 minutes, until topping is bubbling and lightly browned.

1 1/2 cups water
1 cup quick oats
1/2-1 cup butter or 1/2-1 cup margarine
1 cup brown sugar
1 cup white sugar
2 well beaten eggs
1 1/3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon melted butter or 1 teaspoon melted margarine
1/2 cup canned cream or 1/2 cup canned milk
1 teaspoon vanilla
1 cup brown sugar

Steps:

  • Bring to a boil water and quick oats.
  • Let stand 15 mins.
  • Cream together 1/2 cup butter or margarine, brown sugar, white sugar And 2 well beaten eggs. Mix with oatmeal.
  • Sift together flour, baking soda, cinnamon, and salt
  • Add to mix and beat well.
  • Pour into a 13 X 9 in. baking pan.
  • Bake 350 degrees F 30 to 35 mins.
  • FROSTING mix together melted butter or margarine, canned cream or milk, vanilla, and brown sugar.
  • Spread on cake brown in oven for a few mins.
  • Can add rasins or cocconut.

1 1/4 cups boiling water
1 cup old-fashioned oatmeal, uncooked
1 cup applesauce
1 cup granulated sugar or 1 cup Sugar Twin
1 cup brown sugar, firmly packed
1 teaspoon vanilla
1 1/2 cups flour
2 eggs or 2 egg substitute
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
1/4 cup margarine
1/2 cup brown sugar, firmly packed
1/2 cup nuts, chopped
3/4 cup coconut

Steps:

  • Pour boiling water over oats; cover and let stand 20 minutes.
  • Cream butter and sugar until fluffy. Blend in vanilla and eggs.
  • Add to oat mixture; mix well.
  • Stir together dry ingredients; add to creamed mixture, mixing well.
  • Pour into 13x9 pan coated with cooking spray. Bake at 350 degrees for 45 minutes. Do NO T remove from pan.
  • FROSTING Combine all ingredients and spread on cake. Broil until golden brown.

FROASTING
1 tsp. melted butter or margarine
1/2 cup canned cream or 1/2 cup canned milk
1 tsp. vanilla
1 cup brown sugar

Steps:

  • 1. Bring water to a boil add quick oats. Let stand 15 minutes.
  • 2. Cream together 1/2 cup butter or margarine, brown sugar, white sugar, and 2 well beaten eggs. Mix with oatmeal.
  • 3. Sift together flour, baking soda, cinnamon, salt. Add to mix and beat well.
  • 4. Pour into a 13 x 9 inch baking pan. Bake 350 for 30 to 35 minutes.
  • 5. FOR FROSTING: Mix together melted butter or margarine, canned cream /milk, vanilla and brown sugar.
  • 6. Spread on cake and brown in the oven for a few minutes. You can add coconut or raisins on top.

1/2 cup evaporated milk
2 egg yolks
2 cups brown sugar
2 cups grated coconut

Steps:

  • Pour boiling water over oats and let stand for 20 minutes.
  • Preheat oven to 350 degrees.
  • Cream, until light & fluffy, the white sugar, brown sugar and shortening.
  • Add eggs, mixing well.
  • Add oatmeal mixture, beat.
  • Add flour, cinnamon, baking soda and vanilla, again mixing well.
  • Pour into a well greased 9x13 inch casserole dish.
  • Bake for 30-35 minutes.
  • * Mix together ALL of the icing ingredients and spread over hot cake. Place back in the oven, for an additional 7-10 minutes.

1 1/4 c boiling water
1 c oatmeal, uncooked
1 stick butter
1 1/3 c all-purpose flour
1/4 tsp salt
1 tsp baking soda
1/4 tsp nutmeg
1 tsp cinnamon
2 large eggs
1 c brown sugar
1 c powdered confectioner sugar
PECAN TOPPING
1 1/2 stick butter
3/8 c evaporated milk
1 1/2 c brown sugar
1 1/2 c flaked coconut
1 1/2 c pecan pieces

Steps:

  • 1. CAKE DIRECTIONS: PREHEAT OVEN TO 350 DEGREES. WELL GREASE AND WELL FLOURE A 9x13 BAKING PAN (I PERFER A GLASS BAKING PAN). POUR BOILING WATER OVER BUTTER AND UNCOOKED OATMEAL, COVER AND SET ASIDE FOR 20 MINUTES. SIFT TOGETHER FLOUR, SALT, BAKING SODA, NUTMEG AND CINNAMON SET ASIDE. BEAT EGGS, BROWN SUGAR AND POWDERED CONFECTIONER SUGAR IN A LARGE MIXING BOWL, ADD TO OATMEAL MIXTURE AND MIX WELL. ADD DRY INGREDIENTS TO THE OATMEAL MIXTURE A LITTLE AT A TIME AND MIX WELL. POUR INTO GREASED AND FLOURED BAKING PAN. PLACE IN OVEN ON BAKING SHEET AND BAKE FOR 35 MINUTES OR UNTIL DONE. POUR TOPPING ON CAKE WHILE CAKE IS STILL WARM.
  • 2. PECAN TOPPING DIRECTIONS: IN A SAUCEPAN COMBINE ALL 5 OF THE ABOVE INGREDIENTS AND HEAT TO A BOIL. TAKE A WOODEN SKEWER AND PRICK HOLES ALL IN THE TOP OF THE CAKE. REMOVE BOILING TOPPING IMMEDIATELY FROM HEAT AND SPREAD ON TOP OF STILL WARM CAKE. TURN OVEN ON A LOW BROIL, PLACE TOPPED CAKE ON TOP OVEN RACK. SLIGHTLY TOAST COCONUT TO A LIGHT GOLDEN BROWN.

1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift the flour together with the soda, salt, and cinnamon. Stir in the oats. Combine the other ingredients and add them to the flour mixture, stirring thoroughly.
  • Drop by tablespoonful onto ungreased cookie sheet. Bake 15 to 18 minutes. Remove to wire rack to cool.

The original recipe called for the topping to be broiled, but I wanted to do some thing a little different, and I really like the way it turned out so wanted to share with you. I don't double the topping recipe.

1 c quick oatmeal
1 c brown sugar, firmly packed
1 clove white sugar
1 1/3 c flour
1/2 tsp salt
1 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
TOPPING
1 c nuts
1/2 c brown sugar
1/2 c white sugar
6 Tbsp butter--melted
1 c coconut
1/4 c cream ( i use canned milk)
1 tsp vanilla extract

Steps:

  • 1. Turn oven on 350* Grease and flour a 9 x 13 pan Put all ingredients in mixer bowl and mix together.
  • 2. These were not put in the recipe but must be added. Add 1/2 cup butter or margarine, 2 eggs and 1 1/2 cup boiling water---this will be very thin batter.
  • 3. Mix up the topping and drop into the batter with a tablespoon. leaving a space in between. when you have the topping all in the batter, put in oven and bake for 60 min. This is a great cake and each serving will have a bit of the topping in each one. It doesn't need to be frosted but you could serve with cool whip or Ice Cream.
