Mom's creamed tuna on toast was her go-to meal on a busy day. Boil a couple of eggs, open a few cans, toast some bread and, "Viola!" dinner is served. To me, it's comfort food that I enjoy to this day. I think of Mom every time I make it.

Ingredients

2 can(s) tuna, drained (3 oz. cans)
1 can(s) condensed cream of celery soup
1/3 to 1/2 can(s) whole milk (1/3-1/2 soup can)
2 large hard boiled eggs, peeled
1/2 tablespoon(s) minced parsley or chives for garnish (optional)
SERVE OVER:
- toasted white or whole wheat bread
- toasted english muffins
- cooked & buttered noodles
- cooked rice

Steps:

In a medium saucepan or skillet, over medium heat, stir together soup and milk; heat until it simmers. (Density of condensed soups vary; add the amount of milk that seems appropriate.)
Add tuna, stirring gently to combine; continue heating until mixture is simmering hot.
Fold chopped eggs into tuna mixture; continue heating for about 20 to 30 seconds, enough to heat the egg.
Remove from heat; serve hot over toast, English muffins, noodle or rice. Garnish as desired. Store leftover creamed tuna in airtight container in refrigerator. Reheat on stovetop or in microwave.

This is a simple yet delicious casserole my Mom always made for us. It was my favorite and now it is one of my daughters.

8 ounces egg noodles, cooked
2 (6 ounce) cans tuna, drained
1 (14 ounce) can peas, drained
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup butter, melted

Steps:

Preheat oven to 350 degrees Fahrenheit.
Combine noodles, tuna, peas, soups, milk and butter in a 1 quart casserole dish.
Bake for 30 to 35 minutes.

This tuna salad is made special with the addition of cream cheese and chopped raw carrots. Red peppers make it pretty and one or two other vegetables, fruits or nuts keep it changing and interesting. I developed this recipe after I tasted cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.

2 tablespoons mayonnaise
2 ounces cream cheese, softened, or as needed
2 (5 ounce) cans solid white tuna packed in water, drained and flaked
½ carrot, finely chopped
¼ cup diced red bell pepper

Stir mayonnaise and cream cheese together in a bowl until smooth. Add tuna, carrot, and red pepper; season with pepper.

My mom gave me this recipe. It is different from most of the cream tuna on toast recipes I have seen because it has lots of cheese.

Ingredients

2 (6 ounce) cans tuna
2 tablespoons real butter
1/4 cup flour
2 1/2 cups milk
1 cup shredded cheese
1/4 teaspoon celery salt
1/4 teaspoon onion powder
8 slices bread
1/2 cup peas

Steps:

In a medium saucepan melt butter, stir in flour and spices until mixture is thick creamy paste. Slowly stir in milk being careful to constantly stir to prevent lumping. Add cheese. Add tuna after cheese has melted into mixture. Simmer over low heat for ten minutes.
Toast bread, then pour over layer of creamed tuna -- Enjoy.

1/4 cup margarine
1/4 cup flour
2 cups milk
1 can drained tuna fish
1 cup frozen peas (or to taste)
salt and pepper
bread (for toasting)

Steps:

Thaw frozen peas in a collendar.
Melt the margarine in a saucepan.
Add the flour and blend.
Add the milk, stirring constantly to prevent clumping and stir until creamy.
Add the tuna, peas, salt and pepper and warm through.
As the tuna is warming, toast bread.
After toasted, cut in triangles and spoon tuna mixture over the toast.
