MOM'S CHOCOLATE MERINGUE PIE
This pie features a homemade chocolate custard, and is topped with meringue.

Steps:
- Mix together sugar, cocoa, corn starch and salt in a medium saucepan. Gradually mix in milk. Cook and stir over medium high heat until thickened and bubbly. Reduce heat to medium low; cook and stir 2 minutes more. Remove pan from heat. Stir about one cup of the hot filling into the egg yolks; mix back into the custard. Return saucepan to heat, and bring to a gentle boil. Cook and stir for 2 minutes. Remove from the heat, and stir in vanilla. Pour hot filing into crust.
- In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually beat in sugar, and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to crust.
- Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes, or until golden.

- Preheat oven to 350 degrees F (175 degrees C).
- In a cast iron skillet over medium low heat, melt the butter.
- Combine one cup of the sugar with cocoa and flour. Beat the egg yolks with the milk and add them to the sugar mixture.
- Add the sugar and egg mixture to the skillet with the melted butter or margarine and cook gently, stirring constantly until thick. (Watch this mixture closely as it has a tendency to burn)! Add the vanilla. Pour the mixture into the baked crust.
- Beat the egg whites until soft peaks form; add the remaining 1/4 cup sugar and beat until meringue is glossy and stiff peaks form. Spread beaten egg whites over the hot filling be sure the whites touch the edges of the crust. Bake in the preheated oven for 10 to 15 minutes (or until the meringue is golden brown).

MOM'S MOST REQUESTED CHOCOLATE PIE
This chocolate pie is not only a Southern traditional dish, but my mom has to make 2 to take to church lunches. Most people go back for dessert only to find all the pie gone - the smart ones get their piece on the first trip through. This is pie is also served as "birthday cake" on most everyone's special day. And the only way to top it off is with a piled-high meringue!

Steps:
- Combine all ingredients except butter in a saucepan.
- Cook over medium heat until thick like pudding, stirring constantly to prevent scorching and lumping.
- When mixture becomes thick, remove from heat and add butter; stir to combine.
- If lumping does occur, beat filling with a whip.
- Pour into pie shell.
- Make meringue according to your favorite recipe and top pie, sealing the edges with the meringue.
- Bake to brown meringue.
- Best if allowed to cool to lukewarm or room temperature.
MOM'S CHOCOLATE PIE
My Mom asked a co-worker for a chocolate pie recipe & this was what the lady told her right off the top of her head. We made the pie that evening & it was wonderful! Mom taught me to mix eggs with dry ingredients to prevent lumps. God bless my Mom in Heaven!

Steps:
- Combine flour, cocoa powder & sugar in a medium saucepan. Add eggs & mix well. Mixture will be very thick. Gradually add can of milk, then add can of water. Add cup of milk & mix thoroughly.
- Cook stirring constantly over medium heat until mixture gets thick. Remove from heat & stir in vanilla extract.
- You can now beat or whisk out any lumps that may have formed. I use a stick type blender.
- Pour into baked pie shell & allow to cool, then refrigerate until set.

- Preheat oven to 425° F. Place pie shells in the oven until medium brown, approximately 5 minutes. Remove from oven.
- Mix cocoa, sugar and flour well in large bowl. Mix eggs and add milk, Mix until there are NO LUMPS. Use hand mixer if necessary. Cook until thickened. Pour pie filling into pie shells.
- Sprinkle cream of tartar over egg whites in a separate bowl. Beat slowly, adding sugar 1 Tbsp at a time.
- Gradually increase mixer speed and beat until meringue is stiff with peaks. Using a spoon, place 5 dollops of meringue on pie.
