SALMON CAKES RECIPE (SALMON PATTIES)
These salmon cakes are crisp on the outside with flavorful bites of flaked salmon and they always disappear fast! Make sure to serve with our homemade tartar sauce.

- Preheat Oven to 425˚F. Line a rimmed baking sheet with parchment or a silpat. Place salmon skin-side down, brush with olive oil and season with garlic salt and black pepper. Bake uncovered for 10-15 min or just until cooked through (my thinner cut salmon was closer to 10 min). Remove from oven, cover with foil and rest ten minutes. Discard skin, flake salmon with forks, remove any bones, and cool to room temp.
- Heat a medium skillet over medium heat. Add 1 Tbsp olive oil, 1 Tbsp butter and finely diced onion and bell pepper. Saute until softened and golden (7-9 minutes) then remove from heat.
- In a large mixing bowl, combine cooled flaked salmon, sautéed onion and pepper, 1 cup bread crumbs, 2 beaten eggs, 3 Tbsp mayo, 1 tsp Worcestershire sauce, 1 tsp garlic salt, 1/4 tsp black pepper, and 1/4 cup fresh parsley. Stir to combine then form into 13-14 patties. It's easy to portion patties using a flat ice cream scoop then pressing them into 1/3 to 1/2" thick patties.
- Heat 1 Tbsp oil and 1 Tbsp butter in a large pan over medium heat and once butter is done sizzling, add half of the salmon cakes and sauté 3 1/2 to 4 min per side or until golden brown and cooked through. If salmon cakes brown too quickly, reduce heat. Remove to a paper-towel lined plate. Add remaining 1 Tbsp oil and 1 Tbsp butter and repeat cooking remaining salmon cakes.

SALMON PATTIES {SALMON CROQUETTES}
These easy salmon patties (or "salmon croquettes") are a great way to use up leftover salmon -- or even canned salmon!

- Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.
- Transfer the onion to a large mixing bowl. Add the salmon, saltine cracker crumbs, egg, mayonnaise, lemon zest and juice, parsley, and salt and pepper to taste. Stir gently to mix. Try not to break up the chunks of salmon too much; do not over-mix.
- Form the salmon mixture into 8 patties, about ½ inch thick.
- Place the breadcrumbs in a shallow bowl; season with salt and pepper to taste.
- Dredge the salmon patties in the breadcrumbs, coating both sides and pressing gently to adhere.
- Refrigerate the patties for at least 1 hour, or until firm.
- In the same skillet used to cook the onions, heat butter and oil in a large skillet over medium-high heat until sizzling hot (use enough butter and oil to generously cover the bottom of the skillet).
- Place the croquettes in the hot oil, cooking in batches if necessary to avoid overcrowding the pan. Cook until golden brown, about 4-5 minutes per side. Flip the patties only once; reduce the heat to medium if they start browning too quickly.
- Drain on paper towels. Serve with seafood sauce, tartar sauce, or ketchup. Garnish with fresh parsley and lemon wedges, if desired.

SALMON PATTIES RECIPE
Salmon Patties, made from wild caught canned salmon, are an easy to make dinner recipe favorite in our house and are the best I've ever tasted.

- Drain salmon and pick out all of the good meat you want to use. I'm sure all of it can be used, but I like to discard any bone and skin because I think its gross. Personal preference.
- In a medium sized bowl, combine salmon meat, eggs, green onions, panko bread crumbs, parmesan, and lime juice. Use hands to combine and then form into 8 patties that are no more than one inch thick.
- Heat large skillet over medium high heat. Add oil. When oil is hot enough to bubble when a bread crumb gets tossed in, add your salmon patties. Be sure to leave enough room to have a good inch in between each patty, so you may need to cook them in two batches. Cook until golden brown, about 5-10 minutes, then flip and cook until golden brown on other side.
- Serve warm. They also taste excellent cold on top of salad.

MY BEST EVER PINK SALMON PATTIES
This is a favorite of my kids.... Its easy, tasty, and quite a penny stretcher. And goes great with the 99c bags of broccoli, cauliflower and carrot frozen vegetable melody, and a quick cheese sauce (3 tbsp. butter, 3 tbsp. flour, let cook 1 min. 1 1/2 cups milk, and and a cup of processed cheese like Velveeta (but the save-a-lot brand taste just as good and a lot cheaper) cut cheese up into cubes let melt. add about a dash of nutmeg, and a dash of pepper) and your done. - Just add all ingredients into a medium size bowl; mix well.
- Cover and let sit for at least 10 minutes to let the flavors and seasonings to merge together.

- 2. add egg,onion,pepper,chili sauce, and 1/4 cup of cracker crumbs, mix thouroughly
- 3. place reserved cracker crumbs in plate, form salmon mixture into patties 1/2 to 1' thick,dredge in reserved crumbs
