OVERNIGHT SALAD (SEVEN LAYER SALAD)



Overnight Salad (Seven Layer Salad) image

A perfect combination of layers dressed with a delicious homemade dressing makes for a gorgeous salad!

1 head iceberg lettuce (chopped)
2 cups tomatoes (diced, or sliced cherry tomatoes)
2 cups frozen peas (defrosted (uncooked))
½ cup green onions (or red onions, sliced)
8 hard boiled eggs (cooled, peeled and chopped)
2 cups cheddar cheese (shredded)
8 slices bacon (cooked crisp and crumbled)
¾ cup sour cream
1 cup mayonnaise
2 tablespoons sugar
1 teaspoon seasoned salt

Steps:

  • Combine all dressing ingredients in a small bowl and mix well.
  • Place lettuce in the bottom of a large bowl (or 9x13 pan).
  • Top with tomatoes, peas, onions and boiled eggs. Spread dressing overtop to seal the edges. Top with cheese.
  • Cover salad and refrigerate at least 4 hours or overnight.
  • Top with bacon before serving.

This traditional layered pea salad recipe has been in our family for decades, and there's a reason it is still one of our all time favorite salads! It's perfect for potlucks or as an easy make-ahead meal. Crisp lettuce and veggies, creamy dressing, zesty cheese and savory bacon combine to make magic in a bowl!

8 oz romaine or iceberg lettuce (chopped)
1/2 green pepper (chopped)
1/2 onion (chopped)
1 bag frozen peas (Do not thaw or cook)
1 1/2 Cup Mayonaise (Use real mayonnaise)
6 hard boiled eggs (peeled and chopped)
8 oz cheddar cheese (shredded)
1 pound bacon (cooked and crumbled)

Steps:

  • Layer your ingredients in a bowl in this order: Chopped lettuce, chopped green peppers, chopped sweet onion, contents of one bag of frozen peas, mayonnaise, hard boiled eggs, cheese, and bacon.
  • Cover bowl with plastic wrap or foil.
  • Refrigerate for at least 18 hours before serving.

My Mom's Seven Layer Salad image

My mom used to make me this delicious salad growing up and I was addicted to it, I would beg her to make it.

Number Of Ingredients 9

1 large iceberg lettuce, rinsed, dried and chopped
1 lb bacon
1/2 cup sliced green onion
1 (10 ounce) package frozen peas, thawed
12 ounces of shredded cheddar cheese
1 cup chopped cauliflower
1 cup mayonnaise (I always use Hellmans)
1 cup sour cream
2 tablespoons sugar

Steps:

  • Place bacon in a large skillet, cook over medium high heat until brown and fully cooked. Crumble and set aside.
  • In a large flat bowl, put the chopped lettuce in and layer with onion, peas, cauliflower and bacon. prepare the dressing by combining mayo, sour cream and sugar, mix well. Spread the dressing on top of salad and then top with cheese. Refrigerate until chilled.

  • Wash the chopped lettuce and thoroughly dry. Running through a salad spinner and then laying on a dish towel to soak up excess water is recommended. Meanwhile, soak red onion in a small bowl of cold water for 5 minutes to mellow flavor. Drain and pat dry.
  • Layer half the lettuce on the bottom of a trifle bowl or glass bowl. Sprinkle with 1/2 teaspoon of salt. Layer red onion on top.
  • Slice 3 eggs and place, standing up, around the edge of the bowl, sitting on top of the onion. Chop the remaining eggs and sprinkle on top of onion. Alternatively, chop all the eggs and layer on top.
  • Layer frozen peas, bell pepper, and cucumber on top. Add remaining lettuce to bowl and sprinkle with remaining 1/2 teaspoon of salt.
