HARD SAUCE
I remember making this sauce for my mom when I was about 8 years old. I loved the aroma and spicy flavor. Today, many cooks spread cream-cheese frosting on spice cake instead, but I think you're really missing something if you bypass this warm, old-time sauce. -Shirley Joan Helfenbein, Lapeer, Michigan

Steps:
- In a small saucepan, combine the sugar, flour, nutmeg, allspice and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and extracts. Serve with spice cake. Refrigerate leftovers.

HARD SAUCE

- Mix together the sugar, butter, vanilla and egg in a saucepan set over medium heat. Cook, stirring, until the sugar melts. Add the brandy and stir for 1 minute. Add the nutmeg and orange zest, and serve warm.
MOM'S RAISIN SAUCE FOR HAM
The brown sugar, cinnamon and mustard are a great combination of flavors in this great raisin sauce. Your family and guests will love it on your holiday ham!

Steps:
- 1. Boil raisins five 5 minutes in water.
- 2. Add sugar mixed with corn starch, spices, mustard and salt.
- 3. Cook until thick, a few minutes.
- 4. Blend in the vinegar, spread on ham. (I drizzle some pineapple juice on top as I bake pineapple slices with the ham.)
- 5. Bake per ham directions.
HARD SAUCE FOR CAKE
My grandmother often dressed up leftover plain cake with this sauce. It also goes well with gingerbread. For fun, I love to page through my great-grandmother's old cookbooks.

- In a small saucepan, combine the sugar, cornstarch and salt. Gradually stir in water until smooth. Bring to a boil; cook and stir for 15 minutes until smooth, thickened and clear. Remove from the heat; stir in vanilla and butter. Serve warm over cake.

Steps:
- In a 6-quart, or larger, saucepan or casserole, cook the onion in the oil, stirring occasionally, for 5 minutes.
- In a blender or food processor, puree tomatoes and sauce. Add tomato mixture to pan along with water, tomato paste, garlic, carrots, potato, 3 tablespoons of basil, 3 tablespoons of parsley, salt and cayenne to taste. Bring to a boil, reduce to a simmer and, stirring occasionally, cook, partly covered, for 30 minutes.
- In a small bowl, soak the bread crumbs in the milk until softened.
- In a large bowl, combine bread-crumb mixture with meat, egg, Parmesan, remaining 2 tablespoons basil and parsley, salt, cayenne and 1/2 cup of sauce. Gradually shred and add meat mix to sauce, a little at a time. Partly cover, and bring sauce to a simmer, stirring occasionally, for 1 hour. Before serving, remove garlic cloves, carrots and potato.
- Use about 2 cups of sauce for each pound of pasta.

MOM'S 50 YEAR HARD SAUCE
Mom has served this hard sauce over Christmas pudding for the past 50 years. What she may not know, is that every time we went by the stove and stirred it, we added another dash of brandy. It was the only alcohol allowed in the house.
