PERFECT HOMEMADE BISCUITS



Perfect Homemade Biscuits image

These easy, homemade biscuits are soft, fluffy, made completely from scratch and can be on your table in about 15 minutes! A weekend staple in our house!

3 cups all-purpose flour
3 tbsp sugar
1/2 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
3/4 cup COLD butter
1 egg
1 cup whole milk

Steps:

  • Preheat oven to 450 degrees.
  • The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. Try cutting the butter into small pieces and stick back in the fridge pulling out only when ready to incorporate into the dough.
  • Combine the dry ingredients in a large bowl.
  • Use a pastry cutter to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
  • Add in the milk and egg and mix just until the ingredients are combined. The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
  • Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead 10-15 times. If the dough is super sticky just sprinkle on some additional flour.
  • Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
  • Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
  • For extra yumminess, brush the tops of the biscuits with melted butter...

Easy to make and delicious, these sweet biscuits remind us of a beignet. It's a creative way to use canned biscuits. Not having to prepare a dough, means you can make these whenever you crave a sweet treat. Sweet and filled with cinnamon and nutmeg flavor, they'd be a delicious addition to any brunch menu too.

2 1/2 cup(s) fresh cooking oil
4 package(s) refrigerated biscuits or refrigerated buttermilk biscuits
1 1/2 cup(s) brown sugar
2 stick(s) butter, melted
4 teaspoon(s) powdered sugar
1 tablespoon(s) cinnamon, ground
1 teaspoon(s) nutmeg
1/2 cup(s) granulated sugar

Steps:

  • Heat cooking oil, medium heat. Open biscuits and place on a flat surface while oil reaches the perfect temperature.
  • Test your oil temp by applying a few drops of water and if it's hot enough to fry your biscuits the water will pop.
  • Prepare your brown sugar glaze in a wide deep bowl. Brown sugar, cinnamon, nutmeg, a squeeze of fresh lemon, and regular sugar. Mix all ingredients together.
  • Then add your warm margarine to the mixture.
  • Place the bowl in the microwave and allow the mixture to become a glaze.
  • Place your biscuits in the hot cooking oil, cook biscuits on both sides. First side about 30 seconds.
  • Then flip to the other side. Once golden brown, full and fluffy they are ready.
  • Place hot biscuits straight from the hot oil into the glaze. Mix well allow every biscuit to become glazed.
  • Arrange momma sweet biscuits on a platter and set up for your presentation.
  • Sprinkle powder sugar on your biscuits and serve your guests. NOW GO COOK!!

MOMMA'S MCBISCUITS

Great for kids, but everyone seems to love them. Easy to take with and can be frozen and re-heated during the week for an on-the-go breakfast. Optional toppings include mushrooms and onions.

1 (12 ounce) package bacon
1 (10 ounce) can refrigerated large flaky layer biscuits
6 eggs, beaten
2 tablespoons milk
6 tablespoons shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels. When cooled, chop the bacon.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Separate biscuits and pull each biscuit into halves. Press 2 biscuit halves into a muffin cup, molding the dough to the inside to make a dough cup. Repeat with remaining dough to make 12 biscuit cups.
  • Whisk eggs and milk together in a bowl until thoroughly combined. Spoon each biscuit cup about half full of egg mixture and top with about 1 tablespoon bacon and about 1 1/2 teaspoon Cheddar cheese per biscuit.
  • Bake in the preheated oven until the biscuit crust is browned, the cheese is melted and bubbling, and the egg center is set, about 20 minutes.

2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup shortening
3/4 cup buttermilk

Steps:

  • Preheat oven to 450°. In a bowl, combine flour, baking powder, baking soda and salt; cut in shortening until the mixture resembles coarse crumbs. Stir in buttermilk; knead dough gently. Roll out to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter and place on a lightly greased baking sheet. Bake until golden brown, 10-15 minutes. Freeze option: Freeze cooled biscuits in a resealable freezer container. To use, heat in a preheated 350° oven 15-20 minutes.

SWEET BISCUITS FOR BREAKFAST OR SHORTCAKE



Sweet Biscuits for Breakfast or Shortcake image

I wanted a sweet biscuit, but found that the more sugar I used, the heavier they would be. I started experimenting with a basic rolled biscuit recipe from The Joy of Cooking, and came up with this. The way you handle the dough is important, and be sure to use a sharp cutter to cut the rounds, so all of the edges puff up. A preheated oven and an insulated cookie sheet are necessary. If you don't have an insulated sheet, put two regular sheets together. Recipe is easily doubled. I've served this as shortcake with strawberries and whipped cream, and we also like it at breakfast with apple jelly.

2 cups all-purpose flour (I measure by fluffing up the flour, then dipping the metal cup into the canister and shaking the flo)
1/4 cup all-purpose flour, for patting out the dough
1 teaspoon regular table salt
1 tablespoon baking powder
3/4 cup powdered sugar
1/4 lb ice cold unsalted butter, if you have european style butter,use that
3/4 cup half-and-half

Steps:

  • Preheat oven to 400, I place a rack in lowest position in the oven.
  • Combine dry ingredients.
  • Cut in butter.
  • Stir in liquid until it just begins to pull from the sides- it will be pretty moist.
  • Spread 1/4 C flour on a pastry board and dump the dough onto the flour.
  • Gently turn the dough until all sides are covered with flour.
  • Knead by gently rubbing the dough into the flour, a scant 8 to 10 turns.
  • Pat the dough into a 1 inch thich slab.
  • Cut into rounds with a sharp round biscuit cutter- I use a 2 1/2 inch cutter-- you can push the scraps together to make room to cut a few more, try not to knead it too much.
  • Place on insulated cookie sheet about 1/2 inch apart.
  • Put in HOT oven and bake for 12- 15 minutes.
  • You can test by lifting the top layer of the center biscuit; if it's done it will look dry inside and the edges will be golden.
  • (I get 9 biscuits when I use a 2 1/2" cutter).

Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough into a 10x4-in. rectangle. Cut rectangle lengthwise in half; cut crosswise to make 10 squares., Place 1 in. apart on an ungreased baking sheet; brush tops with egg. Bake until golden brown, 8-10 minutes. Serve warm.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

½ cup vegetable shortening
1 egg
⅔ cup milk

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
  • Bake in the preheated oven until biscuits have risen and are golden brown, 10 to 12 minutes.
