MISO CARAMEL CRACKER COOKIES

Miso Caramel Cracker Cookies image

Provided by Molly Yeh

Categories     dessert

Time 1h30m

Yield about 36

Number Of Ingredients 7

11 ounces store-bought caramels
2 tablespoons heavy cream
1 1/2 tablespoons white miso paste
About 2 1/2 sleeves butter crackers, such as Ritz (about 72 crackers)
8 ounces chopped dark chocolate or dark chocolate chips
Flaky salt, such as Maldon, for topping
Sprinkles, for topping

Steps:

  • In a medium pot, combine the caramels and heavy cream. Heat over medium low, stirring, until the caramels are melted and the mixture is smooth, about 7 minutes. Stir in the miso and remove from the heat. Let cool for a few minutes, so the caramel can thicken slightly.
  • Arrange half of the crackers salty-side down on a baking sheet lined with parchment and dollop on about 1 teaspoon caramel per cracker (or as much as will fit without spilling over the edges...but it's ok if it spills off a little). Top each with another cracker salty-side up. Refrigerate for 30 minutes.
  • In a double boiler or a microwave in 30-second increments, melt the chocolate, stirring until smooth. Let cool slightly.
  • Dip the crackers halfway into the chocolate and place back on the baking sheet. Sprinkle with flaky salt and sprinkles. Let set in the refrigerator or at room temperature until the chocolate is firm, about 30 minutes.

CHOCOLATE COVERED NOUGATS

Chocolate Covered Nougats image

Provided by Molly Yeh

Categories     dessert

Time 4h10m

Yield 64 squares

Number Of Ingredients 13

1/4 cup cornstarch
1/4 cup powdered sugar
Nonstick cooking spray, for the pan
3/4 cup honey
1 2/3 cups plus 1 tablespoon granulated sugar
2 large egg whites
Pinch kosher salt
3 cups toasted unsalted hazelnuts
3/4 cup toasted unsalted pistachios
8 ounces semisweet chocolate, chopped
1 tablespoon vegetable oil
8 ounces ruby cacao chocolate chips, or other flavored chocolate as desired
Sprinkles, optional

Steps:

  • Combine the cornstarch and powdered sugar in a small bowl. Line an 8-inch square baking pan with parchment paper with wings coming up a few inches off the sides. Spray it with cooking spray, then dust it with half of the cornstarch mixture. Set the pan and the rest of the mixture aside.
  • Combine the honey, 1 2/3 cups granulated sugar and 1 3/4 cups water in a large saucepan fitted with a candy thermometer and stir to combine. Place over medium-high heat and cook until the mixture reaches 305 degrees F.
  • Meanwhile, position a stand mixer fitted with the whisk attachment near the stove. Place the egg whites and salt in the bowl of the mixer.
  • Beat the egg whites until stiff peaks form. Reduce the speed to medium and beat in the remaining tablespoon granulated sugar. (Do this while keeping an eye on the honey so you don't burn it.)
  • As soon as the honey reaches 305 degrees F, turn the mixer speed to medium-low and add it to the egg whites in a steady drizzle. Then turn the mixer to high and beat until pale and fluffy, 3 to 5 minutes.
  • Remove the bowl from the stand mixer and spray a rubber spatula with cooking spray. Add the nuts to the mixture and fold with the sprayed spatula to combine. Scrape the mixture into the prepared pan. Press it into an even layer, then sprinkle on the remaining cornstarch mixture and let cool, a few hours. Use the parchment wings to remove the nougat to a board. Cut the nougat into 1-inch squares.
  • Set up a sheet pan with a rack and set aside.
  • Heat the semisweet chocolate with 1/2 tablespoon oil in a double boiler or in a heatproof bowl in the microwave in 30-second increments, stirring after each, until melted, 1 1/2 minutes total. Repeat with the ruby chips and remaining 1/2 tablespoon oil. Brushing off the excess powdered sugar from the top of each, dip half of the squares in the regular chocolate and half in the ruby chocolate, spooning some over the tops so that they are completely covered. Use a fork to remove the squares from the chocolate and place on the prepared rack. Sprinkle with sprinkles, if using. Refrigerate until the chocolate is set, about 10 minutes, or let set at room temperature for about 20 minutes. Serve at room temperature.

LIFESAVERS CANDY PACIFIERS (BABY SHOWER) RECIPE - (4/5)

Lifesavers Candy Pacifiers (Baby Shower) Recipe - (4/5) image

Provided by msippigrl

Number Of Ingredients 4

1 large bag individually wrapped white Lifesavers candy (in a bag), 2 for each "pacifier" (I used Wintogreen flavor)
Pink Grapefruit or Peach flavored Jelly Belly jellybeans (or similar color)
White melting chocolate (I used Wilton Bright White candy melting wafers)
Cords or narrow ribbons, optional

Steps:

  • Picture Tutorial Directions: Step 1: 2 dots of melted white chocolate on the smooth side of a Lifesaver, directly across from each other. (I use a toothpick.) Step 2: With the Lifesaver laying on counter (smooth side up), place another Lifesaver vertically (smooth side facing you) over the 2 dots of melted chocolate and hold in place for a few seconds, then set aside to harden completely in that position. Continue repeating this step until desired number of pacifiers is reached. (The "nipples" will be added in next step). Step 3: Starting with the first ones you made in Step 2, pick up and turn a half-made pacifier over (to the side with the hole showing) and line the edge of center hole with melted chocolate. (I used a toothpick.) Immediately go to Step 4 after each one. Step 4: Place a jellybean vertically in the center hole of Lifesaver. (I turn both smooth sides of the Lifesavers toward me, then align the side of jellybean that has the little dip in the center toward the front). After each one is completed, immediately jump to step 5. Step 5: After each "pacifier" is finished in Step 4, place it upright between the wires of a 1 to 2" high wire cooling rack. Continue Steps 3 through 5 until all pacifiers are finished. Let set for at least an hour (or longer) before transferring to a serving display. This is really important! If moved before completely hardened, they will come apart.

SPICED CHICKEN POT PIES

Time 1h20m

Yield 4 servings

Number Of Ingredients 24

2 teaspoons turmeric
2 teaspoons ground cumin
1/2 teaspoon black pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground coriander
1/4 teaspoon ground cardamom
2 tablespoons canola oil
6 bone in, skin on chicken thighs
Kosher salt and black pepper
1 yellow onion, diced
3 large carrots, sliced into thin coins
3 stalks celery, sliced
1 teaspoon grated fresh ginger
1 tablespoon hawaij spice blend
6 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken or vegetable stock
1/2 bunch fresh dill, finely chopped
1/2 bunch fresh parsley, finely chopped
3/4 cup peas, fresh or frozen
1/2 cup heavy cream
1 sheet puff pastry, thawed overnight in the refrigerator or at room temperature for 20 to 30 minutes
1 large egg beaten with a splash of water, for egg wash
Flaky sea salt
White sesame seeds

Steps:

  • For the spice blend: Mix all the ingredients together. Store at room temperature in an airtight jar for up to 3 months.
  • For the chicken pot pie: Preheat the oven to 425 degrees F. Heat the oil in a large ovenproof skillet, braiser or pot over medium-high heat. Sprinkle the chicken thighs generously on both sides with salt and pepper and place skin side down in the skillet. Cook until the skin is golden and crisp, about 10 minutes. Then turn the thighs over and transfer the pan to the oven and bake until an internal temperature of 165 degrees F, 10 to 15 more. (Alternatively, you can turn the chicken thighs and on the stove and not for 15 to 18 minutes more, but it might get spitty!.) Transfer the chicken to a plate leaving the fat in the pan. Heat the pan over medium and add the onion, carrot, celery and a pinch of salt and cook, stirring, until softened, 7 to 10 minutes. Add the ginger and hawaij to the vegetable mixture and cook for another minute, add the flour and cook, stirring, for another minute.
  • Meanwhile, bring the stock to a simmer in a small saucepan. Gradually add a ladle of the stock into the vegetable mixture and cook, stirring, allowing it to thicken before adding another ladle full. Stir in the dill, parsley and peas and then reduce to low. Pull the chicken off the bones, discard or snack on the skin, chop the chicken into bite-size pieces and add it to the pan. Stir in the heavy cream. Taste and adjust seasoning as desired.
  • Ladle into 4 1/2-quart oven proof bowls or cocottes and place them on a rimmed baking sheet, which will make them easier to transfer and will also catch any of the mixture that overflows in the oven.
  • On a work surface, roll out the puff pastry sheet so that it's big enough to cut into 4 squares that are about an inch larger than the bowls. Cut into four equal squares and cut two slits in the center (it's easiest to do this while the puff pastry is on the counter versus on top of the pies). Lay the puff pastry on top of the bowls so that it sits comfortably. Brush the tops with egg wash and sprinkle with a pinch of flaky salt and cover liberally with sesame seeds. Bake until the pastry is golden, about 20 minutes. Let cool slightly and serve.

BABY PACIFIERS (SHOWER FAVORS)

Baby Pacifiers (shower Favors) image

I saw this on an episode of "The Baby Story" a long time ago and dug it out when it was time for my sister's baby shower. Very cute placed on the guest tables at baby showers or on the food buffet table. Also good for playing the "Can't Say the Word" shower game (where every guest is given an item, sometimes it's a clothespin, and they are instructed at the beginning of the shower that they can't say a certain word. each time a guest says that word in conversation to another guest, the offending person must surrender their item/clothespin to the person that caught them. The person with the most items at the end of the shower wins.).

MONSTER COOKIE BARS

Monster Cookie Bars image

This is the bar form of one of my favorite cookies, the monster cookie! The monster cookie originated in Michigan and contains oats, peanut butter and candy-coated chocolates, and traditionally does not have flour. I love the chewy consistency and nutty flavor from the oats and peanut butter. It's kind of like a more indulgent granola bar!

Provided by Molly Yeh

Categories     dessert

Time 1h20m

Yield 16 bars

Number Of Ingredients 13

3 1/2 cups quick-cooking oats
1/2 cup shredded sweetened coconut
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon kosher salt
3/4 cup unsweetened peanut butter
2/3 cup packed brown sugar
1/2 cup (1 stick) unsalted butter, melted but not hot
1/2 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 cup roasted peanuts
1 cup chocolate coated candies, plus more for topping

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-inch square metal pan with parchment paper that comes up on two sides to give you little wings.
  • In a medium bowl, combine the oats, coconut, baking soda, cinnamon and salt. In a large bowl, whisk together the peanut butter, brown sugar, butter and granulated sugar until combined and creamy. Add the eggs one at a time, whisking well after each. Add the vanilla. Using a rubber spatula, fold in the oat mixture until combined, then fold in the peanuts and chocolate-coated candies. Press into the baking pan. Press a few additional chocolate-coated candies into the top.
  • Bake until browned around the edges; begin checking for doneness at 28 minutes. Let cool in the pan completely, then carefully lift out of the pan and use a sharp serrated knife to slice into bars. Store in an airtight container at room temperature for a few days.

CHOCOLATE PECAN SANDWICH COOKIES

Chocolate Pecan Sandwich Cookies image

Provided by Molly Yeh

Categories     dessert

Time 2h30m

Yield Makes 18 to 20 cookies (9 to 10 sandwiches)

Number Of Ingredients 13

3/4 cup (70 grams) pecan halves (about 1/4 of a 10-ounce bag)
3/4 cup (98 grams) all-purpose flour
1/2 cup (20 grams) good quality unsweetened cocoa powder
3/4 teaspoon kosher salt
1/2 cup (113 grams) unsalted butter, softened
6 tablespoons (75 grams) granulated sugar, divided
1/2 teaspoon vanilla
1/2 cup (45 grams) rainbow sprinkles
Caramel filling, recipe follows
1/2 cup (113 grams) unsalted butter, softened
1/4 cup (75 grams) store bought caramel sauce
1 1/2 cups (180 grams) powdered sugar
A good pinch of kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Spread pecan halves on a parchment lined baking sheet in a single layer and bake for 10 to 12 minutes, or until roasty and fragrant. Remove from the oven and cool. Transfer the pecans to a cutting board and give them a rough chop. Allow chopped pecans to cool completely.
  • In a medium bowl, whisk together the flour, cocoa powder, and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, half of the sugar (1/4 cup), and vanilla until pale and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl with a spatula and add the flour, cocoa powder and salt mixture. Mix on low until all of the dry ingredients are incorporated. Add the pecans and the sprinkles and mix until just combined.
  • Line a work surface with a large piece of parchment paper. Scrape the dough out onto the parchment paper and gather it together with your hands. Roll into a 6 1/2-inch-long log that is about 2 inches wide. Tightly wrap the dough in parchment paper, twisting the ends so it's airtight. Refrigerate until the dough is firm, for 2 hours or overnight.
  • Set an oven rack in the middle position. Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
  • Spread the remaining granulated sugar on a plate and roll the log in the sugar to coat completely.
  • Slice the log into eighteen 1/4-inch discs and place them on the baking sheet evenly spaced apart. Bake in the center of the oven until the cookies are no longer shiny and slightly puffed; begin checking for doneness at 16 minutes. Let cool on the pans.
  • Using a 1/2-ounce scoop or a spoon, dollop about 1 tablespoon of the filling on the bottom of 12 of the cooled cookies. Sandwich with another half and smush lightly. Enjoy immediately or store in an airtight container on the counter until you eat them all.
  • Cream together butter and caramel until smooth. Add powdered sugar and salt and whip until combined and light and fluffy, 2 to 3 minutes.

White (peppermint) lifesavers. (Be careful, I bought breathsavers at
first by accident and they don't have a hole!) I usually buy one five pack.
Drost white chocolate wafers...come 16 in pack which is a long
cylander, found in candy aisle at grocery store, it's gourmet chocolate. I
usually buy 2 packs.
Sugar
Jelly beans: Go to a card store and buy blue and pink jelly beans ( I say this b/c it is
waay easier than separating them out).

Steps:

  • melt sugar in a saucepan...add a lil bit of water as needed....you want it to become a clear glue like substance. Need to stir constantly. Go to a card store and buy blue and pink jelly beans ( I say this b/c it is waay easier than separating them out). Get white (peppermint) lifesavers. Get Drost white chocolate wafers...come 16 in pack which is a long cylander, found in candy aisle at grocery store, it's gourmet chocolate. I usually buy 2 packs. Dip the life saver in the carmelized sugar and press firmly into white choc wafer. Hold it like that (upside down) for 30 seconds until it drys a bit, then rest upside down while you do the rest. Dip jelly beans into sugar and press firmly into top side of wafer, holding for 30 secs. When done, place on lifesaver side down so it tilts to the side (note: this is why it's key to wait till the jelly bean dries so it doesn't slide off!)

CARAMEL AND CHEDDAR POPCORN MIX

Caramel and Cheddar Popcorn Mix image

Provided by Molly Yeh

Time 50m

Yield 2 to 4 servings

Number Of Ingredients 12

3 tablespoons unsalted butter
9 cups popcorn (from about 1/3 cup kernels)
3 tablespoons Cheddar cheese powder
1 teaspoon mustard powder
Nonstick cooking spray, for greasing the pan
1/2 cup dark brown sugar
1/3 cup light corn syrup
4 tablespoons unsalted butter
1 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 teaspoon baking soda
9 cups popcorn (from about 1/3 cup kernels)

Steps:

  • For the Cheddar popcorn: Melt the butter in a large heavy-bottomed pot over medium-high heat. Remove from the heat and fold in the popcorn to coat. Sprinkle in the cheese powder and mustard powder. Fold together to evenly coat. Transfer to a large serving bowl.
  • For the caramel popcorn: Preheat the oven to 300 degrees F. Line a baking sheet with foil and generously spray with nonstick spray.
  • Wipe the large pot clean of any excess popcorn residue. Add the brown sugar, corn syrup and butter to the same pot and bring to a boil over medium-high heat, stirring constantly, about 3 minutes. Reduce the heat to medium and continue to let it boil, without stirring, until it turns a deep golden brown, 4 to 5 minutes.
  • Remove from the heat and stir in the salt, vanilla and baking soda. Gently fold in the popcorn until well coated (spraying a rubber spatula works well, here!). Transfer the popcorn to the prepared baking sheet and bake until the caramel has melted around the popcorn and nicely coats the kernels all over, about 10 minutes. Let cool completely on the baking sheet, about 10 minutes. Break into pieces and add to the serving bowl.

BIG FLUFFY PANCAKES AND SAUSAGE

Big Fluffy Pancakes and Sausage image

These are inspired by Japanese souffle pancakes! They are so tall and fluffy and cloudlike, and I'm obsessed with them. Just imagine your favorite pancakes dressed up like a cloud for Halloween.

Provided by Molly Yeh

Categories     main-dish

Time 55m

Yield 8 pancakes and 4 sausage patties

Number Of Ingredients 15

1 pound ground pork
2 teaspoons brown sugar
3/4 teaspoon kosher salt
1/2 teaspoon minced fresh rosemary
1/2 teaspoon minced fresh sage
1/2 teaspoon minced fresh thyme
4 large eggs, separated
1/4 cup granulated sugar
1/2 cup milk
2 tablespoons unsalted butter, melted and cooled
1/2 teaspoon vanilla extract
3/4 cup store-bought pancake mix
Pat of unsalted butter, plus more for serving
Nonstick cooking spray, for the ring molds
Maple syrup, for serving

Steps:

  • For the sausages: Mix the pork, brown sugar, salt, rosemary, sage and thyme in a bowl until well combined. Shape into four 4-inch-wide and 1/4-inch-thick circular patties.
  • For the big fluffy pancake mix: In a stand mixer with the whisk attachment, whisk the egg whites to soft peaks. Continue whisking and gradually add the granulated sugar. Continue whisking until all the sugar is dissolved and the mixture forms stiff peaks.
  • In a separate bowl, whisk together the egg yolks, milk, melted butter and vanilla extract until smooth. Add the pancake mix and stir to combine. Carefully fold in the egg white mixture, taking care not to overmix.
  • For the big fluffy pancakes and sausage: Preheat a large nonstick pan over low heat and add the butter.
  • Spray 3-inch round (2-inch tall) ring molds with cooking spray. Place the ring molds in your preheated pan and use a ladle to fill the molds two-thirds of the way with the pancake mix. Place a cover over the pan and let the pancakes cook for 10 minutes. Remove the cover and use tongs and a rubber spatula to help flip the ring molds with the pancakes. Cover and continue cooking for about 7 minutes more.
  • Meanwhile, cook your sausage in a skillet over medium-low heat until the pork is fully cooked, about 4 minutes on each side.
  • Remove the ring molds with the pancakes using tongs and a rubber spatula. The pancakes should slide right out. Add the sausage underneath your pancakes for even more height. Serve with butter and maple syrup.

PISTACHIO LINZER COOKIES

Pistachio Linzer Cookies image

Provided by Molly Yeh

Categories     dessert

Time 1h15m

Yield 12 sandwich cookies

Number Of Ingredients 11

2 sticks (1 cup) unsalted butter, at room temperature
1 cup sugar
3/4 teaspoon kosher salt
1 large egg
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
3 cups all-purpose flour, plus more for dusting
2 cups white chocolate chips
1/2 cup finely ground roasted pistachios, plus more for topping
A drop of green food coloring, optional
Sprinkles, for topping, optional

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
  • In the bowl of a stand mixer, cream together the butter, sugar and salt until pale and fluffy, about 3 minutes. Beat in the egg and vanilla and almond extracts. Gradually mix in the flour until combined.
  • Turn the dough out onto a lightly floured surface. (Alternatively, you can divide it in half, wrap it in plastic wrap and refrigerate it for up to 2 days before proceeding to the next step.) Roll out the dough until it's 3/16 inch thick. Cut out twelve 3-inch circles using a cookie or biscuit cutter. Use a 3/4- to 1-inch-wide star cookie cutter or smaller circle to cut out a hole in the center. Place the cookies on one of the prepared baking sheets. Reroll the dough and cutouts and punch out 12 more 3-inch circles. Place the circles on the second baking sheet.
  • Bake the cookies until set but still pale, about 10 minutes. Cool completely on a wire rack.
  • In a double boiler, melt the white chocolate chips. Stir in the pistachios and a drop of green food coloring, if desired.
  • Once the cookies are cool, spread a thick layer of the white chocolate in the center of a cookie and then squish into a sandwich with one of the cutout cookies. Sprinkle the center with additional pistachios and/or sprinkles, if using. Repeat with the remaining cookies. Let stand at room temperature or in the fridge until set, about 5 minutes.
