Number Of Ingredients 13

1 cup dark brown sugar
1 stick (1/2 cup) unsalted butter, melted and cooled
3 tablespoons molasses
1 teaspoons pure vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon table salt
1/4 cup granulated sugar
Chocolate hazelnut spread, such as Nutella

Steps:

  • Preheat the oven to 350 degrees F. Adjust the oven rack to middle. Line 2 sheet trays with parchment.
  • Whisk the brown sugar in a large bowl to get rid of the lumps. Add the butter and stir until smooth. Stir in the molasses, vanilla and egg, mixing until well combined.
  • Whisk together the flour, baking soda, ginger , cinnamon, cloves and salt in a separate medium bowl. Add the dry mixture to the butter mixture and stir until well incorporated and smooth, about 2 minutes.
  • Pour the granulated sugar onto a plate. Divide the dough into 12 equal-size balls and roll them in the sugar. Arrange the dough on the prepared sheet trays at least 2 inches apart. Press gently to flatten. Bake about 17 minutes. Let cool completely on the sheet trays.
  • Spread the chocolate hazelnut spread between 2 cookies and sandwich them together. Repeat with the remaining cookies.

This is a marinade with amazing flavor. I used it with bison steak, but any sort of beef roast or steak would work.

½ cup molasses
½ cup brown sugar
1 cup ketchup
1 tablespoon lemon juice
1 tablespoon dried oregano
1 tablespoon garlic powder
½ teaspoon onion powder
3 rings onion

Steps:

  • Combine the molasses, brown sugar, ketchup, lemon juice, oregano, garlic powder, onion powder, and onion in a bowl; stir to combine. Pour marinade over meat and allow to sit in the refrigerator overnight before cooking.

  • In a bowl, whisk the Guinness with the chopped onion, soy sauce, molasses, thyme, garlic, Worcestershire sauce and 2 teaspoons of pepper. Pour the marinade into a large, resealable plastic bag. Add the steaks and turn to coat. Seal and refrigerate overnight.
  • Light a gas grill, then set it up for both direct and indirect grilling by turning off half of the burners. Remove the steaks from the marinade and pat dry. Brush with oil and season with salt and pepper. Grill over moderately high heat, turning once, until lightly charred, 6 minutes. Move the steaks to indirect heat, close the grill and cook until medium-rare, 8 to 10 minutes. Let rest on a carving board for 10 minutes. Slice 1/2 inch thick.
  • Brush the onion rings and mushrooms with olive oil and season with salt and pepper. Grill over moderately high heat, turning occasionally, until softened, 6 minutes.
  • Arrange the toasts on plates or a platter and top with the grilled onions, sliced steak and mushrooms. Drizzle with any juices from the bison steaks and serve.
