Big and chewy molasses spice cookies! Like gingersnap cookies, but thicker and chewier.

2 1/4 cups all-purpose flour
2 teaspoons of baking soda
1/2 teaspoon of salt
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
3/4 teaspoon ground cloves
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup dark brown sugar, packed
1/2 cup granulated sugar, plus 1/3 cup for rolling cookies
1 large egg
1 teaspoon vanilla extract
1/3 cup molasses

Steps:

  • Whisk together flour, baking soda, spices: Preheat oven to 375°F. Vigorously whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, allspice in a bowl and set aside.
  • Prepare butter, sugar, and wet ingredients: Use an electric mixer and beat the butter for 2 minutes. Add the brown sugar, and 1/2 cup granulated sugar and beat until light and fluffy, about 3 minutes with mixer set at medium speed. Add egg, vanilla extract, and molasses. Beat until combined, about 30 seconds. Scrape down sides of bowl with a rubber spatula.
  • Add dry ingredients to wet ingredients: Add dry ingredients and beat at low speed until just combined, about 30 seconds.
  • Make dough balls, roll them in sugar: Place remaining 1/3 cup of granulated sugar in a shallow bowl. Working with 2 Tbsp of dough each time, roll dough into 1 3/4 inch balls. Roll balls in sugar and place on un-greased cookie sheets, spacing them 1 1/2 to 2 inches apart.

Here is another pressed cookie recipe that my Grandma Rose clipped from the news papers and magazines from 1934 - 1950's and this is one of them recipes dated Dec. 1950 Posted by a lady named : Marie Coe, Greensboro, N.C. 1950

1/2 c vegetable shortening
1/2 c brown sugar, firmly packed
1 egg, well beaten
4 Tbsp molasses
2 1/2 c sifted enriched flour
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp cloves
1/2 tsp cinnamon, ground
1/2 tsp ginger

Steps:

  • 1. Cream shortening and the sugar. Add eggs and molasses. Beat until light and fluffy.
  • 2. Sift together the dry ingredients and gradually add to the shortening mixture , blend thoroughly.
  • 3. Fill cookie press. Form dough on unoiled cookie sheet.
  • 4. BAKE in a moderate oven 350° for 8-10 minutes. yields: 7 dozen assorted cookies.
  • 5. For thumb prints cookies: Use 1 teaspoon of the molasses spice pressed cookie dough to form each ball. Roll in granulated sugar , Space balls 3" apart on lightly oiled cookie sheet , Sprinkle each ball with 1-2 drops of water. BAKE in a moderate oven 350° for 10-12 minutes.

3/4 cup shortening
1 cup packed brown sugar
1 egg
1/4 cup molasses
2-1/4 cup all-purpose flour
2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Sugar

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg and molasses. Combine the flour, baking soda, salt, ginger, cinnamon and cloves. Gradually add to the creamed mixture and mix well., Shape into 1-in. balls; roll in sugar. Place 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until the tops crack. Remove cookies to wire racks to cool.

This isn't something I would do just for the heck of it anymore but for the holidays....maybe. I'm posting this as a cathartic thing. I'm passing on my non-diabetic goodies to folks who can offer them a good home. I just can't abandon them without a chance to become good little recipes for someone else. This could go on for some time, I have a lot of recipes! It's been a long time since I made these and I don't honestly recall how long it took to make and press them out so I'm taking my best guess. *Please note*: As written the recipe will yield a milder spice flavor. If you prefer a stronger spicy flavor double the spice amounts (or to taste).

2 3/4 cups flour
3/4 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup margarine
1/4 cup molasses
1/4 cup packed brown sugar
1 egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 400º F.
  • Stir together flour, baking powder, nutmeg, cinnamon, cloves, and ginger; set aside. In a large mixing bowl beat together margarine until smooth.
  • Add molasses and brown sugar and beat until fluffy.
  • Add egg and vanilla; beat well. Gradually add flour mixture until all combined.
  • Prepare cookie press with desired design. Fill press and place cookies two inches apart on ungreased cookie sheet.
  • Bake in oven for about 6 minutes or until the edges are firm but not browned.
  • Remove and cool completely on wire racks.
