CIDER VINEGAR COLESLAW



Cider Vinegar Coleslaw image

Creamy coleslaw isn't for everyone. For this version, we toss shredded cabbage and carrots with a cider vinegar-based dressing that's flavored with a little sugar and celery salt for a tangy, sweet and sour kick. Parsley leaves and scallions are tossed in before serving for a refreshing finish.

Number Of Ingredients 9

1/2 cup apple cider vinegar
2 tablespoons superfine sugar
1 teaspoon celery salt
3 tablespoons vegetable oil
8 cups shredded green cabbage (about 1/2 head)
1 cup shredded carrots
Kosher salt and freshly ground pepper
1 cup chopped fresh parsley
2 scallions, thinly sliced

Steps:

  • Whisk the vinegar, sugar and celery salt in a large bowl to dissolve the sugar. Whisk in the vegetable oil. Add the cabbage and carrots and toss to combine. Season with kosher salt and pepper.
  • Cover the slaw and refrigerate at least 1 hour. Toss again and season with salt and pepper. Stir in the parsley and scallions.

1 head green cabbage, thinly sliced
1/2 head red cabbage, thinly sliced
Kosher salt, to taste
1 cup thinly sliced green onions, white and green portions
1 cup grated carrots
2 Tbs. molasses
3 Tbs. whole-grain mustard
1/4 cup mayonnaise
1 Tbs. honey
3 Tbs. apple cider vinegar
Freshly ground pepper, to taste

Steps:

  • In a large colander, combine the green and red cabbages. Sprinkle with salt and toss to combine. Let stand in the colander for 30 minutes to 1 hour. Spin the cabbages in a salad spinner to remove excess moisture. Transfer the cabbage to a large bowl. Add the green onions and carrots and toss to combine. In a small bowl, whisk together the molasses, mustard, mayonnaise and honey. Slowly add the vinegar and whisk vigorously to emulsify. Season the dressing with salt and pepper. Pour the dressing over the coleslaw and toss well to combine. Cover and refrigerate for at least 30 minutes or up to 2 hours. Toss the coleslaw again just before serving. Serves 8 to 10. A great alternative to too-much-mayo coleslaw. From the Fannie Flagg cookbook. Great with BBQ beef sandwiches.

1/2 cup vegetable oil
3 tablespoons sugar
3 tablespoons cider vinegar
2 tablespoons ketchup

1/2 medium minced white onion
1/2 teaspoon paprika

Steps:

  • Core cabbage and shred in Cuisinart or hand chop.
  • In blender, or by hand, process the remaining ingredients.
  • Toss liquid mixture with cabbage.
  • Cover and refrigerate for one hour.

My husband is not a fan of coleslaw but this completely won him over, so he insisted I write down what I did!

1 lb coleslaw mix
1/4 cup sliced almonds, toasted
1/4 cup green onion, chopped
1 cup olive oil
1/2 cup cider vinegar
1/2 cup mayonnaise
1/4 cup sugar
1 tablespoon celery salt (adjust to taste)
1 tablespoon dry mustard
1/2 teaspoon black pepper

Steps:

  • Combine olive oil, vinegar, mayonnaise, sugar, celery salt, dry mustard, pepper to make dressing (I shake it all together in a jar).
  • Put coleslaw, green onions, and almonds in a large bowl and stir in dressing (you may not need to use all of it) until well mixed. Top with freshly ground pepper to taste.

The dressing for this delicious coleslaw dates back to the first Dutch settlers in America.The dish can be prepared three days ahead. Surround the coleslaw with large cabbage leaves for attractive serving. Recipe is from a July 1981 Bon Appetet featuring picnics. This one is from an "All-American Picnic".

3 eggs
3/4 cup cider vinegar
1 1/2 tablespoons dry mustard
2 teaspoons sugar (optional)
1 teaspoon salt
1/2 teaspoon celery seed
1/8 teaspoon fresh ground pepper
3 tablespoons butter (I think bacon fat is better!) or 3 tablespoons bacon fat (I think bacon fat is better!)
2 tablespoons all-purpose flour
1 cup milk
7 cups shredded green cabbage
3/4 cup minced onion
1/2 cup chopped pimiento
1/2 cup sour cream
1/4 cup minced celery
1/4 cup minced green pepper
3 tablespoons minced fresh parsley
salt & freshly ground black pepper

Steps:

  • For Dressing.
  • Combine eggs,vinegar,mustard,sugar,salt,celery seed and pepper in medium mixing bowl and beat until smooth; set aside.
  • Melt butter in heavy nonaluminum 1 1/2 quart saucepan over medium heat.
  • Stir in flour and cook, whisking constantly, about 3 minutes, reducing heat if necessary so flour does not brown.
  • Pour in milk and continue whisking until sauce begins to simmer.
  • Cook,whisking constantly, about 5 minutes.
  • Reduce heat to just below simmer, stir in egg mixture and cook until sauce thickens; do not boil or eggs will curdle.
  • Remove from heat and let cool;season to taste.
  • Transfer to container, cover and refrigerate up to 5 days.
  • For Coleslaw.
  • Combine cabbage,onion,pimiento,sour cream, celery,pepper and parsley in large mixing bowl and toss lightly.
  • Add dressing and toss again.
  • Season with salt and pepper to taste.
  • Cover and refrigerate 1 to 3 days.
