These gingerbread-flavored biscuits complement the smokiness of a glazed ham.

Number Of Ingredients 11

2 cups all-purpose flour, plus more for dusting
1 tablespoon packed dark-brown sugar
1/2 teaspoon coarse salt
1 tablespoon baking powder
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon freshly ground pepper
6 tablespoons unsalted butter, chilled and cut into 1/4-inch pieces
1/4 cup plus 2 tablespoons milk
1/4 cup unsulfured molasses
1 tablespoon heavy cream, for brushing

Steps:

  • Preheat the oven to 375 degrees with rack in center. Sift together flour, sugar, salt, baking powder, ginger, cloves, and pepper. Using a pastry blender or two knives, cut in butter until the mixture resembles coarse meal.
  • In a small bowl, whisk together milk and molasses until completely combined. Make a well in the center of the flour mixture, and add the milk-molasses mixture.
  • Using a fork, stir the mixture until it almost comes together. Gently bring the remaining smaller dough particles together with your fingertips. Transfer dough to a very lightly floured surface, and pat into a flattened circle about 6 inches in diameter and 3/4 inch thick. Cut dough into rounds with a 2-inch cookie cutter. Gently press the excess dough together, and cut several more biscuits. Gently press the remaining excess dough together one more time, and cut one more biscuit.
  • Transfer biscuits to a parchment-lined baking sheet; generously brush tops with cream. Bake until golden brown, 24 to 26 minutes. Place biscuits on a wire rack to cool slightly.

Number Of Ingredients 10

Cooking spray
2 1/2 cups all-purpose flour, plus more for dusting
1 1/2 sticks unsalted butter (1 stick cubed and chilled, 1/2 stick melted)
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon sugar
1/4 teaspoon baking soda
1 cup buttermilk
1 stick unsalted butter, at room temperature
2 to 3 tablespoons molasses

Steps:

  • Make the biscuits: Preheat the oven to 400 degrees F. Coat a baking sheet with cooking spray.
  • In a large mixing bowl, combine the flour and the cubed butter. Using a pastry blender, cut the butter into the flour until it resembles a coarse meal. Stir in the baking powder, salt, sugar and baking soda. Form a well in the center of the flour mixture and pour in the buttermilk. Mix with a fork until all of the ingredients are incorporated and the dough begins to come together into a ball. (The dough will be slightly dry.)
  • Dust a clean work surface with flour, coat your palms and rub some on a rolling pin. Turn out the dough onto the work surface. Knead the dough for 1 to 2 minutes, folding it over onto itself each time. Roll out the dough until about 1/2 inch thick. Dip a 3-inch biscuit cutter or the rim of a 3-inch-wide glass in flour and then cut out the biscuits. Reshape the leftover dough into a ball, roll it out again and cut out more biscuits. Repeat until the dough is gone.
  • Place the biscuits on the baking sheet and bake until the tops are golden brown, 10 to 15 minutes. While the biscuits are still hot, brush with the melted butter.
  • Make the molasses butter: Stir the butter and molasses together to combine. Serve the warm biscuits with the molasses butter.

CAPE BRETON MOLASSES BISCUITS

Cape Breton Molasses Biscuits are old fashioned thick-cut molasses cookies. Not-too-sweet.

1 cup butter, softened
1 cup brown sugar
1 egg, room temperature
1 cup Crosby's Fancy Molasses
1/2 cup milk soured with 1 Tbsp. vinegar*
4 1/2 cups flour, spooned in
2 tsp. baking soda
1 tsp. salt
1 tsp. cloves
1 tsp. cinnamon
1 ½ tsp. ginger

Steps:

  • Preheat oven to 350º F and line a baking sheet with parchment paper.
  • In a large bowl cream the butter and sugar.
  • Beat in the egg, then the molasses and milk.
  • In a separate bowl whisk the flour, baking soda, salt and spices.
  • Stir dry into the wet mixture in two additions (don't over mix).
  • Scrape dough onto a lightly floured surface and roll or pat ½" thick.
  • Cut into rounds and prick with a fork.
  • Bake 16-18 minutes, until the tops just bounce back.
  • Let cool on the pan.

  • Mix 1 1/2 cups all-purpose flour, 1/2 cup whole-wheat flour, 1/4 cup oats, 1 tablespoon wheat germ, 2 teaspoons baking powder, 1 teaspoon each salt and chopped thyme, and a pinch of pepper in a bowl. Whisk 3 tablespoons molasses, 1/3 cup vegetable oil and 3/4 cup milk; stir into the flour mixture. Drop 10 mounds of dough (1/4 cup each) on a parchment paper-lined baking sheet. Brush with milk and sprinkle with more oats, thyme and salt. Bake at 450 degrees F until golden, about 12 minutes.

Nonstick cooking spray, for the baking sheet
2 1/2 cups all-purpose flour, plus more for dusting
10 tablespoons unsalted butter, 8 tablespoons cubed and chilled and 2 tablespoons at room temperature
1 tablespoon baking powder
1 teaspoon fine sea salt
1 teaspoon sugar
1/4 teaspoon baking soda
1 cup buttermilk
6 tablespoons unsalted butter, at room temperature
2 to 3 tablespoons molasses or honey

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F. Grease a baking sheet.
  • In a large mixing bowl, combine the flour and the chilled, cubed butter. Using a pastry blender, cut the butter into the flour until it resembles a coarse meal. Alternatively, combine the flour and chilled butter in a food processor and pulse to combine until it resembles coarse meal, then transfer to a large mixing bowl.
  • Stir in the baking powder, salt, sugar and baking soda. Form a well in the center of the flour and pour in the buttermilk. Mix with a fork until all of the ingredients are incorporated and the dough begins to shape into a ball. (The dough will be slightly dry.)
  • Dust a clean work surface with flour, coat your palms, and rub some on a rolling pin. Turn out the dough onto the work surface. Knead the dough for 1 to 2 minutes, folding it over onto itself each time. Pat the dough into a rectangle and then roll the dough to about 1/2-inch thick. Dip a 3-inch biscuit cutter or the rim of a 3-inch-wide glass in flour, and then cut out the biscuits. Alternatively, use a knife to cut the biscuits into 3-inch squares. Reshape the leftover dough into a ball, roll it out again, and cut out more biscuits. Repeat this process until the dough is gone.
  • Place the biscuits on the baking sheet and bake until the tops are golden brown, 12 to 14 minutes. While the biscuits are still hot, brush the biscuits with the 2 tablespoons softened butter.
  • For the butter: Stir or mash the butter and molasses or honey together to combine, leaving a few streaks of molasses visible.
  • Serve the flavored butter with the warm biscuits.
