SIMPLE SALMON SANDWICHES
Great way to use left-over salmon or canned salmon! Believe this was one of the winners of a Pillsbury Bakeoff---many, many years ago! Now that there are only two of us, I cut the recipe in half. Over the years I've found that I don't like canned soups so started making my own . . .Recipe #360192. It's easy and a lot healthier!

Steps:
- Preheat oven to 375 degrees.
- In large bow combine, egg, salmon, bread or cracker crunbs, cheese, mayo, onion, lemon juice, salt, pepper and curry.
- Separate 1 can crescent dough into 4 rectangles, firmly pressing perforation to seal.
- Place rectangles 1 inch apart on ungreased cookie shee.
- Spread 1/4 of filling on each rectangle to within 1/2 inch of all edges.
- Separate remaining can of crescent dough into 4 rectangles, firmly pressing perforations to seal.
- Place over filling, sealing edges with fork.
- Bake a 37t degrees for 15-20 minutes until golden brown. Cut each sandwich into 2 triangles.
- Serve warm with sauce.
- To make sauce: Combine all ingredients in saucepan and heat over medium heat until smooth.

BLT FISH SANDWICHES
Adapted from a recipe in Redbook. The original recipe used Artic Char -- which I am not able to buy where I live -- subbed catfish and thick bread (challah, toasted) -- buns worked fine for us.

Steps:
- Heat a grill pan over medium heat and cook bacon (I use thick peppered bacon which takes longer to cook -- about 10-20 minutes). Drain on paper towels.
- Drain excess grease from pan and after salt and peppering fish cook fish in same pan (5-10 minutes per side depending on thickness of fish).
- In a small bowl mix together dressing (mayo - salt and pepper).
- Toast buns and spread mayo mixure on bottom of bun, add lettuce tomato slice, bacon and 1 piece fish top with lettuce and tomato and top bun (spead with mayo mixture) mayo side down.
- Repeat for rest of the sandwiches.
BLT SANDWICH

- Fry the bacon crisp and drain.
- Toast the bread.
- Spread the mayo on both slices of toast.
- You can put a little avocado on one side if you wish. My boys always liked this.
- Put the tomatoes, lettuce and bacon on top, with mayo side down; cut diagonally.
