These brownies have been in my recipe collection since I was 9 years old. I've added to and altered the recipe over the years, and now I think it has the perfect amount of everything, including semisweet and milk chocolate chips and pecans. 2/3 cup butter, cubed
3/4 cup baking cocoa
1/4 cup vegetable oil
2 cups sugar
4 eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2/3 cup semisweet chocolate chips
1/2 cup milk chocolate chips
1 cup coarsely chopped pecans
Confectioners' sugar
Pecan halves, toasted, optional

Steps:

  • Melt butter in a large saucepan. Whisk in cocoa and oil until smooth. Cook and stir over low heat until cocoa is blended. Transfer to a large bowl; stir in sugar. Add eggs, one at a time, stirring well after each addition. Stir in vanilla. Combine flour, baking powder and salt; gradually add to cocoa mixture. Stir in chocolate chips and nuts. , Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack. Dust with confectioners' sugar. Garnish with pecan halves if desired.

1 cup sugar
4 large eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
7 tablespoons baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • In a large bowl, combine the butter and sugar. Add eggs, one at a time, stirring well after each addition. Beat in vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to butter mixture just until moistened., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack.

Steps:

  • Preheat oven to 350 degrees.
  • Grease a square 8x8 pan.
  • Sift flour with sugar, salt, and cocoa.
  • Add Butter, eggs, and vanilla.
  • Use spoon and beat 100 strokes per minute for 3 minutes by hand or 2 minutes on medium speed with mixer.
  • Stir in nuts until evenly mixed through.
  • Pour into pan and spread out evenly.
  • Bake 20 to 22 minutes.
  • Cool and then cut.

125 g butter
1 cup sugar
2 eggs
3 tablespoons condensed milk
3/4 cup self raising flour
1/2 teaspoon baking powder
1/3 teaspoon salt
1/2 cup cocoa
1 cup nuts
125 g baking chocolate
3 tablespoons rum

Steps:

  • 125gm butter - softened.
  • 1 TEAcup sugar - (half brown/white).
  • 2 eggs - room temperature.
  • 3 tbs condensed milk - if you dont have this perhaps you can use syrup.
  • mix well.
  • add (all below should be sifted).
  • 3/4 teacup self raising flour.
  • half tsp baking powder.
  • 1/3 tsp salt.
  • 1/2 teacup cocoa.
  • mix.
  • add.
  • 1 teacup chopped nuts - i used walnuts + cashews.
  • 125gm baking chocolate chopped well.
  • 3 tbs baileys or rum or other preferred liquer - if you dont want to use alcohol, you could add some coffee, cinnamon, vanilla, -- etc.
  • mix by hand.
  • spread evenly in lined tin 4 x 9".
  • bake in preheated oven, 175C for about 45 minutes If using a wider pan - thinner spread, reduce baking time -- should not overbake. :).
  • Remove and cool on rack.
