APPLESAUCE CINNAMON BREAD

- Preheat oven to 350°. In a large bowl, combine the flours, sugar, 1 teaspoon cinnamon, baking soda, salt, baking powder and nutmeg. In a small bowl, whisk the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. , Transfer to a greased 9x5-in. loaf pan. Combine brown sugar and remaining 1/2 teaspoon cinnamon; sprinkle over the top. , Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack.Freeze option: Securely wrap cooled loaf in foil, then freeze. To use, thaw at room temperature.

I had a whole bunch of apples recently and needed to use them up so I took a zucchini bread recipe that I had and switched it up a but. What I got is a yummy, moist and healthy quick bread made from apples.

Steps:
- Preheat oven 350 degrees.
- Spray loaf pan with nonstick spray.
- In large bowl combine flour, sugars, baking soda, baking powder, salt, nutmeg and cinnamon.
- In small bowl combine wet ingredients, egg whites, vanilla, applesauce and apples.
- Add wet ingredients to dry ingredients and mix until just blended.
- Pour mixture into loaf pan and spread evenly-sprinkle with cinnamon and sugar or streusel topping if desired.
- Bake 35-45 minutes.

- In a large mixing bowl, beat together granulated sugar, sour cream, eggs and vanilla on low speed with an electric mixer until combined.
- Beat on medium speed for two minutes.
- Sift together dry ingredients, in separate bowl.
- Add to sour cream mixture, beat on low speed until combined.
- Stir in apples.
- Turn into a greased 9x5x3 inch loaf pan.
- Bake at 350 for 55 to 60 minutes.
- Cool on rack for 10 minutes.
- Remove bread from pan; cool completely.

- Preheat oven to 350°F (175°C). Line a 9x5 or 8x4 inch loaf pan with parchment paper with an overhang on all sides to easily lift the bread out of the pan after baking. Set aside.
- Combine 2 tbsp white sugar and 1 tsp cinnamon in a small bowl. Set aside. Combine flour, baking powder, salt, and cinnamon in a small bowl. Set aside.
